THAI TURKEY BURGERS WITH CRUNCHY ASIAN SLAW
Thai Turkey Burgers infused with lemongrass, ginger and basil, served with a Crunchy Asian Slaw and Spicy Aioli. Serve this on a tasty bun, in a lettuce wrap or over grains and greens for healthy bowl.

Steps:
- Preheat grill to medium-high. ( see notes to pan-sear)
- Combine all the burger ingredients in a medium bowl and mix well using hands. With wet hands, shape into 3 burgers, 1-inch thick. Place on a plate in the fridge.
- Toss the slaw ingredients together in a medium bowl.
- Mix the spicy aioli ingredients together in a small bowl.
- Grill patties on a well-greased, pre-heated grill 4-5 minutes each side until golden and cooked through.
- Toast or grill the buns.
- Spread aioli on the bottom bun, top with the patty, then the slaw, cucumber ribbons (optional) , more aioli, then the top bun. Enjoy!!

ASIAN TURKEY BURGERS
Steps:
- Combine the turkey, cilantro, ginger, garlic, carrots, scallions, soy sauce, and jalapeno if using in a bowl. Be careful not to overwork the meat or it will become tough.
- In a small bowl combine the yogurt, sweet chili sauce, lime juice, olive oil, garlic powder, and salt. If possible, make the yogurt sauce earlier in the day and store in the fridge to let the flavors combines.
- Form the meat into four patties and brush with vegetable oil. Grill or cook in a skillet for about 5 minutes per side until cooked through. Serve with yogurt sauce.

- Grate 1 teaspoon peel from orange. Peel orange; discard peel. Cut orange into thin wedges or slices.
- Mix stir-fry sauce, brown sugar and orange peel.
- Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook turkey in skillet about 3 minutes on each side or until light brown.
- Move turkey to one side of skillet. Add stir-fry sauce mixture and vegetables to other side of skillet; stir well to coat vegetables with sauce.

- Heat the grill to Medium. Put the turkey in a food processor and pulse until minced. Add the lemongrass, garlic and lime zest, and half the soy sauce, coriander and chilli, then pulse again until combined. Tip the mix into a bowl and add some black pepper. Shape into 8 patties, then transfer to a non-stick baking tray and grill for 3-4 mins each side, until cooked through.
- Meanwhile, soak the noodles following pack instructions, then drain and add the vegetables, the remaining soy sauce and the lime juice. - Heat the olive oil over medium heat in a medium skillet and add the onion. Cook, stirring, until it begins to soften, about 3 minutes, and add the diced red pepper and a generous pinch of salt. Cook, stirring often, until the vegetables are tender, about 5 minutes. Stir in the garlic and the grated carrot and cook, stirring, for another minute or two, until the carrots have softened slightly and the mixture is fragrant. Remove from the heat.
- In a large bowl, mash the ground turkey with a fork. Add about ¾ teaspoon kosher salt if desired, and mix in the barbecue sauce, ketchup, and freshly ground pepper to taste. Add the sautéed vegetables and mix together well. Shape into 6 patties, about ¾-inch thick. Chill for 1 hour if possible to facilitate handling.
- Heat a nonstick griddle or a large nonstick frying pan over medium-high heat and brush with a small amount of canola oil, or prepare a medium-hot grill. When you can feel the heat when you hold your hand above it, cook the patties for 4 minutes on each side. Serve on whole grain buns, with the condiments of your choice.
