ASIAN BRAISED BEEF

2 tablespoons all-purpose flour
1 tablespoon Chinese five-spice powder
Kosher salt and freshly ground black pepper
3 pounds chuck roast, cut into 1 1/2-inch pieces
2 tablespoons salted butter
2 tablespoons olive oil
2 tablespoons minced ginger
1 generous tablespoon chili paste
5 cloves garlic, minced
1 bunch scallions, sliced, whites and greens separated
1/4 cup sherry
3 cups beef broth
1/4 cup low-sodium soy sauce
2 tablespoons honey
3 star anise pods
2 bay leaves
Cooked jasmine rice, for serving

Steps:

  • Preheat the oven to 275 degrees F.
  • Mix together the flour, five-spice powder and some salt and pepper in a bowl. Toss the beef in the flour mixture and set aside.
  • Heat the butter and olive oil in a heavy-bottomed pot over medium-high heat. Working in 2 batches, sear the meat on all sides until golden brown, 3 to 4 minutes per batch. Remove the meat to a plate and set aside.
  • To the pot, add the ginger, chili paste, garlic and scallion whites. Cook, stirring constantly, for 2 minutes. Deglaze with the sherry, scraping up any bits from the bottom of the pot. Add the broth, soy sauce, honey, star anise and bay leaves and bring the mixture to a boil. Add the seared beef, cover the pot, transfer to the oven and cook until the meat is falling apart, about 2 hours.
  • Serve over rice, garnished with the reserved scallion greens.

2 teaspoons corn starch
2 teaspoons egg whites
2 teaspoons Chinese cooking wine
1 teaspoon minced garlic
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
Pinch sea salt
8 ounces beef tenderloin, cut into 3/4-inch cubes
3 teaspoons soy sauce
3 teaspoons granulated sugar
3 teaspoons Chinese black vinegar
1 teaspoon corn starch
5 ounces plus 2 teaspoons vegetable oil
1 teaspoon Sichuan pepper oil
6 pieces dried chile de arbol, 1/4-inch dice
2 teaspoons chopped green onions
1 teaspoon minced garlic
1 teaspoon 1/4-inch-cubed ginger
Serving suggestions: rice or noodles and seasonal vegetables

Steps:

  • For the marinade: Combine the corn starch, egg whites, wine, garlic, garlic powder, pepper and salt in a stainless steel mixing bowl and gently whisk together. Add in the cubed beef and set aside to marinate for 15 minutes.
  • For the sauce: In a small saucepan bring the soy sauce, sugar and vinegar to a boil. Combine 3 teaspoons cold water and the corn starch in a small bowl to make a slurry. When the ingredients have come to a boil, whisk in the slurry. Cook the mixture for 1 minute, then remove from the heat and set aside.
  • For the vegetables: Heat 5 ounces vegetable oil in a saute pan until just hot, then remove the oil and keep the pan hot.
  • Turn the heat down to medium and place the marinated beef into the pan. Cook until just seared, then remove from the pan.
  • Add the remaining 2 teaspoons vegetable oil and the Sichuan pepper oil to the pan, then add the dried chiles.
  • Add in the onions, garlic and ginger, and saute until the onions are lightly wilted and the garlic and ginger are slightly caramelized.
  • Return the beef to the pan, and then add the sauce.
  • Serve with rice or noodles and seasonal vegetable of choice.

2 tablespoons olive oil
2 tablespoons oyster sauce (such as Maekrua®)
4 large cloves garlic, minced, or more to taste
1 tablespoon Cabernet Sauvignon wine
1 teaspoon fish sauce
1 teaspoon ground black pepper, or more to taste
1 teaspoon soy sauce
1 teaspoon dark soy sauce
2 drops sesame oil, or more to taste
1 tablespoon fish sauce
1 tablespoon lemon juice
1 tablespoon ground black pepper
2 tablespoons olive oil
2 tablespoons oyster sauce (such as Maekrua®)

Steps:

  • Put beef cubes in a container with a lid. Whisk 2 tablespoons olive oil, 2 tablespoons oyster sauce, 4 minced garlic cloves, wine, 1 teaspoon fish sauce, 1 teaspoon black pepper, soy sauce, dark soy sauce, and sesame oil together in a bowl until marinade is well mixed; pour over beef. Allow beef to marinate, 10 to 30 minutes.
  • Whisk 1 tablespoon fish sauce, lemon juice, and 1 tablespoon black pepper together in a bowl until dipping sauce is well mixed.
  • Heat 2 tablespoons olive oil in a wok or large skillet over high heat; add beef and marinade. Cook and stir beef mixture, 2 tablespoons oyster sauce, and 4 cloves minced garlic together in hot oil until beef is cooked through and sauce begins to thicken, 5 to 10 minutes. Adding garlic over several times during cooking will produce a better mix of flavors.

I found this method of searing filets in a magazine and thought the result was amazing. I've been cooking them this way ever since. I'm submitting the recipe here as I'm afraid of misplacing such a treasure.

4 beef tenderloin, filets 2 inches thick
2 tablespoons olive oil

Steps:

  • Preheat oven to 425 degrees.
  • Season filets with kosher salt and pepper.
  • Heat an oven-proof pan over medium-high heat for 5 minutes.
  • Add oil and heat briefly.
  • Sear filets in oil on one side for 4-5 minutes. Turn them over, place the pan in the oven, and roast to desired doneness. (For medium rare that would be approximately 7 minutes.).
  • Allow filets to rest 5 minutes before serving.

¼ cup white sesame seeds
¼ cup black sesame seeds
2 tablespoons shichimi togarashi (Japanese 7 spice)
4 pounds pork tenderloins
Kosher salt
2 tablespoons canola oil
3 shallots, minced
2 tablespoons minced fresh ginger
¾ cup dry white wine
2 tablespoons fresh lime juice
1 cup whipping cream
2 tablespoons soy sauce
3 tablespoons white miso paste
1 cup cold, unsalted butter, cut into 1-inch cubes
Kosher salt to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat the oil in a large skillet over medium-high heat until it begins to smoke. Meanwhile, mix the white and black sesame seeds together with the togarashi powder; set aside. Season the tenderloins with salt, then press into sesame mixture until completely coated. Sear the tenderloins on all sides until golden brown, about 1 minute per side.
  • Transfer the tenderloins to a baking sheet, and bake in preheated oven until the internal temperature reaches 145 degrees F (63 degrees C), 20 to 25 minutes. When done, remove pork, and allow to rest for five minutes in a warm place.
  • While pork is roasting, prepare sauce by simmering the shallots, ginger, lime juice, and wine in a small saucepan over medium-high heat until it has reduced to about 2 tablespoons of liquid. Add the cream, and continue to simmer until it has reduced by half. Pour mixture into a blender, along with soy sauce and miso. Blend on low speed for 10 seconds until pureed, then slowly add butter, a few cubes at a time with blender running until it is incorporated. Season to taste with salt, and keep in a warm place until ready to use.
  • To serve, slice the tenderloin into medallions, and pour warm sauce overtop; serve immediately.
