ASIAN MEATBALLS WITH SESAME LIME DIPPING SAUCE

Asian Meatballs with Sesame Lime Dipping Sauce image

Enlivened with crisp water chestnuts and fresh cilantro, these delicate Asian-inspired veal and pork meatballs are a world away from their Italian counterpart - but they're just as moist and irresistible.

Categories     Beef     Citrus     Dairy     Egg     Herb     Pork     Soy     Bake     Quick & Easy     Gourmet

Yield Makes 4 (main course) servings

Number Of Ingredients 15

1/4 cup whole milk
1/4 cup fine dry bread crumbs
3/4 pound ground pork
3/4 pound ground veal
1 large egg, lightly beaten
1/2 cup canned sliced water chestnuts, rinsed, drained, and finely chopped
1/2 teaspoon salt
1/2 cup chopped fresh cilantro plus 1/4 cup sprigs
1/4 cup fresh cilantro sprigs
5 tablespoons soy sauce
4 teaspoons Asian sesame oil
2 tablespoons fresh lime juice
2 tablespoons water
2 teaspoons sugar
Accompaniment: steamed white rice

Steps:

  • Put oven rack in middle position and preheat oven to 500°F.
  • Pour milk over bread crumbs in a large bowl and stir until liquid is absorbed. Add ground meat, egg, water chestnuts, salt, chopped cilantro, 1 tablespoon soy sauce, and 2 teaspoons oil and mix with your hands until combined well. Shape 3 tablespoons meat mixture into a ball and transfer to a 13- by 9-inch glass baking dish. Make more meatballs with remaining mixture, arranging meatballs about 1/2 inch apart in baking dish. Bake until cooked through, about 15 minutes.
  • Meanwhile, stir together lime juice, water, sugar, remaining 4 tablespoons soy sauce, and remaining 2 teaspoons oil in a bowl until sugar is dissolved.
  • Transfer meatballs to a serving dish. Stir sauce, then drizzle meatballs with 1 tablespoon sauce and sprinkle with cilantro sprigs.
  • Serve meatballs with remaining sauce.

GRILLED ASIAN CHICKEN WITH CILANTRO & LIME DIPPING SAUCE

Grilled Asian Chicken With Cilantro & Lime Dipping Sauce image

I found an interesting recipe on Epicurious and adapted it over time. You can check out the original here (http://www.epicurious.com/recipes/food/views/Grilled-Five-Spice-Chicken-105523). I made it a bit healthier by using boneless, skinless chicken, added some spices I like to the marinade, and boosted the flavor in the dipping sauce too. I'll admit that I really don't measure anything when I cook so all of the amounts are approximate. Don't sweat it - use more or less of things as you prefer. This comes together in a snap - I make the marinade in the morning before work and let it sit in the fridge all day. Then, when I get home, I pull it out to the counter and toast the star anise immediately. The dish comes together in 15 minutes from that point.

Categories     Chicken Breast

Time 30m

Yield 4 3 strip servings, 4 serving(s)

Number Of Ingredients 22

1 lb boneless chicken tenders
2 tablespoons vegetable oil
2 tablespoons soy sauce
3 tablespoons ginger, minced
2 tablespoons garlic, minced
1 1/2 tablespoons sugar
1 teaspoon salt
2 teaspoons ground turmeric
1 1/2 teaspoons Chinese five spice powder
1 teaspoon ground coriander
4 star anise pods
1 garlic clove, minced
1 teaspoon crushed red pepper flakes
1 1/2 tablespoons sugar
1/3 cup soy sauce, preferably low sodium
3 tablespoons fresh lime juice
1 tablespoon lime zest
1 teaspoon asian fish sauce
1 teaspoon rice vinegar
3 tablespoons water
3 tablespoons cilantro, chopped
2 tablespoons scallions, chopped

Steps:

  • In a large bowl, combine all the ingredients except the star anise and chicken. Stir well to blend. Add the chicken pieces and toss. Cover with plastic wrap or transfer to a zip log bag and marinate in the refrigerator for at least 4 hours (and ideally overnight).
  • Thirty minutes before cooking, remove the chicken and the marinade from the refrigerator, and allow to sit out at room temperature. Place the star anise pods in a dry, hot pan over medium high heat and toast for about 3 minutes. Remove from the pan and pound or grind in a spice grinder into a powder. Add the star anise powder to the chicken and marinade and stir well. Meanwhile, make the sauce by mixing all ingredients together in a small bowl.
  • Cook the chicken on a traditional grill for about ten minutes, or use a stovetop grill pan, sprayed with a little non-stick cooking spray. Alternatively, you could even broil the chicken on high, turning a couple of times for even browning.
  • Transfer to a serving platter and serve with the dipping sauce. This chicken is great with some rice to soak up the extra sauce and an Asian-style slaw, steamed sugar snap peas, or broccoli sautéed with some sesame seeds and red pepper strips. My husband loves this simple dish and it's a big hit with my kids too! It's also a great crowd pleaser at an outdoor BBQ. It's like comfort food, made just a little more exotic than usual!

  • Hoisin Sauce. Hoisin sauce isn’t as well-known as soy sauce. However, it’s gained popularity over the last several years because it’s a terrific ‘all-around’ sauce you can use on practically anything.
  • Tonkatsu Sauce. People love to describe things as ‘quick and easy.’ Even so, it’s hard to find a quicker or easier recipe than tonkatsu sauce. Want to save this blog post?
  • Ssamjang. Ssamjang is another five-minute sauce anyone can make. It uses a few more ingredients than tonkatsu sauce, but it’s seriously worth it. Ssamjang is a famous Korean sauce with a rich depth of bold flavors.
  • Teriyaki Sauce. Like soy sauce and hoisin, you can buy teriyaki sauce anywhere. Even in America, it’s as common as mustard or ketchup. Still, you may run out one day.
  • Classic Vietnamese Dipping Sauce (Nước Chấm) Want authentic Vietnamese flavors for dinner? This dipping sauce will do the trick. It’s perfectly balanced between sweet and tangy, has a lovely appearance, and takes only five minutes to prepare.
  • Gochujang. Also known as Korean barbecue sauce, gochujang is thick, sweet, smoky, and spicy. It’s a fantastic substitute for BBQ sauce and has more heat.
  • Filipino Banana Ketchup. The ingredients list for this simple condiment is a little odd. I mean, in what other recipe would you mix bananas, tomato paste, ginger, brown sugar, and vinegar?
  • Peanut Dipping Sauce. This recipe for peanut dipping sauce is one of the best. It produces delightfully creamy, nutty, and slightly spicy peanut sauce you’ll want to eat with a spoon.
  • Doubanjiang | Broad Bean Paste. Doubanjiang is a Sichuan staple. It’s a thick, spicy sauce with just a hint of tang. It’s also chunky, dense, and somewhat sticky.
  • Ponzu Sauce. Ponzu is a bold, citrusy sauce that needs no introduction. You’ll know exactly what I mean if you’ve ever tried it. It’s not a condiment you’ll soon forget.
