SMASHED CHINESE CUCUMBER SALAD

Smashed Chinese Cucumber Salad image

Smashing cucumbers is a delicious and rustically beautiful preparation that is common across Asia. Smashing them creates a variety of different textures, and draining them concentrates the flavor. This is a simple-to-prepare dish but it packs personality!

Provided by Molly Yeh

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 8

1 pound Persian or mini cucumbers
1 teaspoon kosher salt
1 tablespoon soy sauce
1 tablespoon Chinese black vinegar
2 teaspoons toasted sesame oil
1 teaspoon sugar
1/2 teaspoon crushed red chile flakes
Toasted sesame seeds and fresh cilantro, for garnish

Steps:

  • Place the cucumbers in a resealable plastic bag. Seal and use the palm of your hand to lightly smash the cucumbers. Take the cucumbers out of the bag and cut into 1-inch chunks. Add to a bowl and season with salt. Toss to coat.
  • Combine the soy sauce, vinegar, sesame oil, sugar and chile flakes in a medium bowl. Whisk to dissolve the sugar.
  • Add the cucumbers, then toss and garnish with the toasted sesame seeds and cilantro.

ASIAN STYLE SLAW

Asian Style Slaw image

I always like to have a few salads at my BBQ to balance out the heavier stuff. Cole slaw is one of the classics, and I love it, but I like to make it my own by mixing in a few Asian flavors. I use the pre-shredded coleslaw mix that comes in bags at the supermarket or for red and green shredded cabbage packaged separately. And then I dress it up with some other fresh ingredients to make an outstanding and different kind of slaw.

Provided by Dave Lieberman

Categories     side-dish

Time 10m

Yield 12 servings

Number Of Ingredients 13

1 bunch (6 large) scallions, trimmed and thinly sliced
2 (16-ounce) bags coleslaw mix or 1 (16-ounce) bag each of shredded green and shredded red cabbage
1 small red onion, thinly sliced
1/4 cup soy sauce
1/4 cup lemon juice
1/4 cup vegetable oil
2 tablespoons grated fresh ginger (from about a 1-inch piece)
2 tablespoons white vinegar
2 tablespoons dark brown sugar
2 teaspoons Asian sesame oil
2 teaspoons sesame seeds, optional
1 teaspoon salt
20 grinds black pepper

Steps:

  • Rough up the scallion slices a little with your fingers so all the little layers of the scallion whites separate. Toss the coleslaw mix or both kinds of cabbage, the red onion and scallions together in a large bowl until everything is thoroughly mixed. You can make the slaw up to this point up to a day in advance as long as you keep it refrigerated. Before serving, simply bring the slaw back to room temperature, make the dressing and toss.
  • Stir the remaining ingredients together in a small bowl until blended, then pour over the vegetables. Serve within 1 hour of dressing or the cabbage will get wilty and sad.

CUCUMBER COLESLAW

Cucumber Coleslaw image

I created this cucumber coleslaw recipe so I could use a julienne peeler I received as a gift. I had leftover sparkling wine, so I thought I'd try to use it over julienned cucumbers to make this refreshing slaw. It's a nice way to round out a brunch or picnic. -Merry Graham, Newhall, California

  • In a small mixing bowl, dissolve the miso paste in 2 tablespoons of hot (not boilinwater, stirring until smooth. Whisk in the vinegar, sugar, oil, and ginger. Add about 1/8 teaspoon (a biig pincof salt. Taste, and add more salt as needed. If you like a slightly sweeter dressing, add more sugar (a 1/4 teaspoon at a time), until it's to your liking. Set aside. Dressing becomes very flavorful if you make it ahead of time and stash it in the fridge for a few hours.
  • Slice the vegetables in thin strips, using a mandolin with a julienne blade, a julienne peeler, or a spiral vegetable slicer. Toss with the dressing, and garnish with sliced green onions.
