- In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into eight patties., In two large skillets, cook burgers in oil over medium heat for 5-6 minutes on each side or until a thermometer reads 160°., Meanwhile, combine mayonnaise and wasabi; spread over buns. Serve burgers on buns with cabbage.

- In a large mixing bowl, combine the ingredients, EXCEPT the arugula, for the slaw. Toss and mix with your hands. In another mixing bowl, combine the ingredients for the sauce and whisk together. Reserve about ¼ cup and then pour the rest over the cabbage slaw and toss and blend. Refrigerate until serving. Add the arugula right before serving and toss in. In a mixing bowl, combine all the ingredients for the burgers and blend together well with your hands. Form into 4 equal side patties. Cook on a hot grill (about 400-500 degrees) about 3 -4 minutes per side. Remove, stack one on top the other and let them rest about 5 minutes. Assemble your burgers and serve with your favorite sides! I went for nice kettle chips!
ASIAN BURGER
Steps:
- Place the beef in a bowl, add with curry powder, sugar, cilantro, scallions, garlic, chiles, cumin, salt, and pepper, and mix well. Form into 4 (8-ounce) patties. Place patties on grill and grill to desired doneness. Place scallion pieces and shiitake caps on the grill and brush with the teriyaki sauce and grill until well charred.
- Serve burgers on sesame buns topped with grilled scallion and shiitakes and more teriyaki sauce, if desired.

- Heat the oil and butter in a large wok or frying pan on medium heat.
- Add the garlic. Stir fry for about 1-2 minutes, stirring constantly until garlic is fragrant. DO NOT burn!

- Put the steak in a shallow dish and pour over the soy sauce. Heat a large frying pan or wok over a high heat. Pour in the oil and swirl the pan to coat. Add the onion and stir-fry for 2-3 minutes until softened. Turn the heat to medium and add the garlic, then stir-fry for 1 minute until the raw smell fades – keep it moving or it will burn. Remove the pan from the heat and set aside.
- Heat a heavy-based frying pan over a high heat. Remove the steak from the dish (reserve the soy sauce) and rub with oil. When the pan is smoking hot, add the steak and cook for 2 minutes on each side for medium-rare, pressing down to flatten so it crisps and caramelises. Once cooked to your liking, remove to a plate and set aside to rest.
- Return the first pan/wok to a high heat and, once the onions sizzle again, add the star anise and ginger, then stir-fry for 2 minutes. Once fragrant, add the chilli and peanuts, then stir-fry until the peanuts start to colour. Add the wilted cabbage and stir-fry for 5 minutes or until the cabbage has coloured a little.
- Pour in half the soy sauce from the steaks (discard the rest) and the fish sauce, then squeeze in the lime and cook for 2 minutes. Scatter over the herbs and stir. Taste and season. Divide between 2 plates. Slice the steak and put on top of the stir-fry, pouring any resting juices on top. Serve immediately with lime wedges.
