I'm a new mom, and my schedule is very dependent upon our young son, so I like meals that can be ready in as little time as possible. This all-in-one chicken stir fry recipe with a hint of sweetness from honey is a big time-saver. -Caroline Sperry, Allentown, Michigan

2 teaspoons cornstarch
1 tablespoon cold water
3 teaspoons olive oil, divided
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 garlic clove, minced
3 tablespoons honey
2 tablespoons reduced-sodium soy sauce
1/8 teaspoon salt
1/8 teaspoon pepper
1 package (16 ounces) frozen broccoli stir-fry vegetable blend
Hot cooked rice, optional

Steps:

  • Mix cornstarch and water until smooth. In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat; stir-fry chicken and garlic 1 minute. Add honey, soy sauce, salt and pepper; cook and stir until chicken is no longer pink, 2-3 minutes. Remove from pan., In same pan, stir-fry vegetable blend in remaining oil just until tender, 4-5 minutes. Return chicken to pan. Stir cornstarch mixture and add to pan; bring to a boil. Cook and stir until thickened, about 1 minute. Serve with rice if desired.

1/4 cup honey
3 to 4 teaspoons soy sauce
1-1/2 teaspoons lemon juice
1 teaspoon ground ginger
1-1/4 pounds boneless skinless chicken breasts, cut into 1/4-inch slices
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 package (16 ounces) frozen stir-fry vegetable blend
1 can (8 ounces) sliced water chestnuts, drained
4 to 6 cups hot cooked rice

Steps:

  • In a small bowl, combine the honey, soy sauce, lemon juice and ginger; set aside. , Sprinkle chicken with salt and pepper. In a large skillet or wok, stir-fry chicken in oil for 3-4 minutes or until lightly browned. Add vegetables and water chestnuts; stir-fry 3-4 minutes longer or until vegetables are crisp-tender. , Stir honey mixture and stir into chicken mixture. Cook for 3-5 minutes or until heated through and chicken is no longer pink. Serve with rice.

2 tablespoons olive oil
1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
7 cloves garlic, sliced, or to taste
salt and ground black pepper to taste
4 tablespoons honey, or to taste
4 tablespoons soy sauce, divided, or to taste
2 (16 ounce) packages frozen Asian vegetable medley
1 cup sliced mushrooms
3 cups water
3 cups instant white rice (such as Minute®)

Steps:

  • Heat oil in a wok over medium heat. Add chicken and garlic, and season with salt and pepper. Cook and stir until chicken is browned, about 5 minutes. Add honey and 1 tablespoon soy sauce; stir to coat chicken. Transfer chicken to a plate, leaving juices in the wok.
  • Add frozen vegetables, mushrooms, and remaining soy sauce to the wok. Cook and stir over medium heat until vegetables are crisp on the outside and tender on the inside, about 7 minutes.
  • Stir chicken back into the wok and cook until no longer pink in the centers and sauce has reduced, 5 to 10 minutes.
  • Meanwhile, stir water and rice together in a microwave-safe bowl. Cover and cook in the microwave on high until water is fully absorbed, about 5 minutes.
  • Serve chicken and vegetables over hot rice.

This is a recipe that I have used in many different variations over the years. Stir-frying is an art and is sooo fun! You can vary your vegetables any way you like, and you can even use a frozen bag if you wish. I have listed the veggies that we use and love. Make sure you trim all the fatty parts and fatty veins out of your chicken. Serve this with cooked white or fried rice.

Number Of Ingredients 13

1 lb boneless skinless chicken breast, cut into 1-inch pieces
1 large garlic clove, minced
3 tablespoons olive oil, divided
3 1/2 tablespoons honey
3 1/2 tablespoons soy sauce (I use reduced sodium)
1/2 teaspoon salt
1/4 teaspoon pepper
1 red bell pepper, seeded, cut into 1-inch pieces
1 yellow bell pepper, seeded, cut into 1-inch pieces
1/2 yellow onion, sliced
1 large carrot, diagonally sliced, thin
2 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • In a large wok or nonstick skillet, heat half of the oil over medium to medium-high heat. When a drop of water sizzles in the oil, the heat is sufficient. If the oil begins to smoke, it is too hot. Add the garlic and the chicken pieces. Use two wooden spoons or wooden spatulas to stir-fry the chicken and coat them with the hot oil in the pan. Let the chicken cook, stirring with your spatulas frequently for 3 minutes, until the chicken is mostly white.
  • Sprinkle the chicken with salt and pepper, then add the honey and soy sauce. Stir all together with the spatulas. Let the ingredients cook, stirring every 1-2 minutes, until the chicken pieces get a brown crust on at least one of their sides (5-7 minutes). Once the chicken begins to crust, make sure you watch carefully so they do not burn. When the chicken has a nice brown crust, and the juices that run from them when pierced run clear, remove the chicken to a plate and set aside. Take the wok or skillet off the heat and wipe out with a paper towel. Be careful!
  • Place wok or skillet back on the heat (medium to medium-high) and heat the other half of the oil. Once water sizzles in the oil, add the bell peppers, onion, and carrot pieces. Mix well with the spatulas, then let them cook, stirring frequently, until they are tender, about 5 minutes.
  • Stir the chicken pieces into the pan with the vegetables and mix well. Combine the cornstarch and cold water in a small bowl, and mix it well with a fork. Stir the cornstarch mixture into the wok or skillet, and let all ingredients cook for 2 minutes, stirring constantly, until thickened.
  • Serve immediately over white or fried rice.
