Italian Meatballs With Peppers image

Meatballs seasoned with Italian herb mix and enriched with mushrooms. Served with rice and a crisp salad these meatballs are fabulous

1 lb ground turkey
1/4 cup finely chopped onion
1 teaspoon Italian herb seasoning
1/4 teaspoon salt
2 teaspoons olive oil
1 cup chopped red bell pepper
1 cup chopped yellow bell pepper
1 cup sliced fresh mushrooms
1 garlic clove, finely chopped
1 teaspoon instant chicken flavor instant bouillon
1 (12 fluid ounce) can fat-free evaporated milk, divided
4 teaspoons all-purpose flour
2 cups hot cooked rice
chopped fresh parsley

Steps:

  • Mix turkey, onion, herb seasoning and salt in large bowl; form mixture into 24 one-inch meatballs.
  • Heat olive oil in large skillet over medium-high heat. Add meatballs; cook for 3 to 4 minutes or until browned.
  • Reduce heat to low; cook, stirring occasionally, for 15 minutes or until cooked through. Remove meatballs from skillet; keep warm.
  • Add bell peppers, mushrooms, garlic and bouillon to skillet; cook, stirring occasionally, for 2 to 3 minutes. Combine 1 tablespoon evaporated milk and flour in small bowl; add to skillet.
  • Gradually stir in remaining evaporated milk; cook, stirring frequently, for 5 to 8 minutes or until sauce is slightly thickened.
  • Add meatballs to skillet; stir to coat. Serve over rice. Garnish with parsley.

Was sent to me from mother-in-law shortly after married as a quick simple meal to throw together on a weeknight for my boys.

8 ounces penne pasta (uncooked)
2 teaspoons olive oil
1/2 cup onion (chopped)
1 green bell pepper (cut into strips)
1 red bell pepper (cut into strips)
1 yellow bell pepper (cut into strips)
8 ounces tomato sauce
14 1/2 ounces diced Italian tomatoes (undrained)
16 ounces armour italian-style meatballs (thawed)
1/4 cup parmesan cheese (grated)

Steps:

  • Cook pasta according to packaging diretions, drain, & keep warm.
  • In large skillet heat oil over medium heat and add onion and peppers. Cook 5-6 minutes or until tender crisp stirring occassionally.
  • Stir in tomatoes, sauce, and meatballs.
  • Cook covered for 6-8 minutes or until heated through.
  • Place pasta in large bowl and pour meatball mixture over pasta to coat. Sprinkle with parm and serve immediately.

This recipe was passed to me from my late mother-in-law...the VERY first time I met her AND my soon to be husband's extended family. She told me if I was going to marry her son I better learn how to make this recipe real quick...good thing I love to cook huh! It's ALL about the food!

2 -3 lbs ground beef
1 -1 1/2 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese
6 eggs
2 tablespoons dried basil
1 pinch salt and pepper

Steps:

  • Shape into meatballs a little bigger than a golf ball -- for some reason, Italian meatballs are always huge but they taste so great!
  • Brown in oil or bake in a 350° oven until browned then add to a basil - tomato sauce (your own recipe) or mine when I post it.
  • For a few good variations add: Italian sausage, ribs (mmm).
  • This is not for the calorie-counting/cholesterol-watching crowd!

1 bermuda onion, halved lengthwise and thinly sliced
1 red bell pepper, seeded and thinly sliced
1 yellow bell pepper, seeded and thinly sliced
1 green bell pepper, seeded and thinly sliced
1 fennel bulb, trimmed and thinly sliced
2 garlic cloves, thinly sliced
1 cup canned diced tomato
salt & freshly ground black pepper
1/2 lb cooked Italian pork sausage (hot, sweet, or a combination)
2 cups penne pasta
1/4 cup chopped basil
2 tablespoons chopped flat leaf parsley

Steps:

  • In a large non-stick skillet, heat the oil.
  • Sauté the onion, bell peppers, and fennel until the vegetables turn golden, 8-10 minutes.
  • Add the garlic and sauté 1-2 minutes longer.
  • Stir in the tomato, salt, and pepper.
  • Reduce the heat and simmer, stirring occasionally.
  • Add the sausage; simmer covered, stirring occasionally, until the flavors are blended, about 20 minutes.
  • If the sauce becomes too dry, add 1-2 tablespoons of water.
  • Meanwhile, cook the penne according to directions; drain.
  • Add the basil, parsley, and penne to the sausage mixture; toss to combine.
