ARIZONA CACTUS AND BEANS
Being surrounded by land filled with wild prickly pear cactus in Arizona, I was inspired to find different ways to enjoy this local plant. This is a simple but tasty recipe that is best if served with warm cornbread.

Steps:
- Heat oil in a skillet over medium heat. Add potatoes and carrots; cook and stir until potatoes are tender, about 10 minutes.
- Stir cactus, chili powder, garlic, fenugreek seeds, coriander, and cumin into the potato mixture. Cook, stirring frequently, until cactus is softened, about 5 minutes. Add pinto beans; cook, stirring gently, until just heated through, about 3 minutes.

- Preheat oven to 375*. In medium skillet, heat butter and saute onion. In large bowl, combine kidney beans, baked beans, ketchup, brown sugar, vinegar, mustard and bacon. Mix well. Pour mix into covered baking dish and bake 35 minutes or until hot.

Actually this recipe was from my son in Tuscon,AR. He called them his "KA-BOY TOTTERS" He had a great sence of humor. And he was a pretty good cook...I am so glad I have a few of his recipes. I haven't made this in awhile...But it is pegged to make again very soon. A friend of his worked at a restaurant in Ariz.and passed this...

- 1. Rinse beans under cold rinning water and discard any stones or shriveled beans. **Hint: Take the pork hock and inclose it in a clean piece of cheese cloth. Tie it into a bag. This will keep the skin bones, and meat together, and not running wild in the beans. In a 4 quart saucepan,combine beans,hock in bag, onion,chiles with their liquid, oregano and salt. Add water 1 inch above beans. Heat to a boiling over high heat. reduce heat to low, cover and simmer 1-1/2 hours. Stirring occasionally,adding more water as needed. Add 1-1/2 cups of more water to saucepan, cover and simmer 2 hours longer, or until beans are tender and liquid has thickened.Stirring occasionally,and adding more water as necessary to prevent sticking. With a slotted spoon,transfer ham hock to a cutting board. Cut and pull meat from the hock and finely chop (ONLY THE MEAT)...discard bones,fat and skin. Stir meat into beans and serve. Corn bread goes well with this dish. And hot sauce on the side...as needed. ** I think next time I will try to adjust this recipe for crockpot cooking.

- Cut up the bacon and cook it.
- Stir-fry green pepper and onions in bacon drippings.
- Combine all ingredients and cook for 10 minutes at 350, then lower to 250. Cook for one hour.
- Serve hot or cold.

- 1. Preheat oven to 375 degrees. In a skillet heat butter and saute onion. In a large bowl cimbine kidney beans, baked beans, ketchup, vinegar, mustard and bacon. Mix well. Add the sauted onopn, mix well. Pour mixture into a covered baking dish and bake for 35 minutes. Makes 4-6 servings.

- Pick over beans and rinse well.
- Combine beans and water in a large kettle.
- Bring to boiling; cover; cook 2 minutes.
- Remove from heat and let stand 1 hour then pour into crockpot.
- Brown salt pork in a large skillet.
- Remove with a slotted spoon to crockpot.
- Sauté onion, garlic and green pepper in pan drippings; remove with slotted spoon to crockpot.
- Brown beef, a few pieces at a time in pan drippings; remove to crockpot with slotted spoon.
- Stir in salt, oregano, red pepper, cumin and tomato sauce.
- Add more water, if necessary to bring liquid level above beans.
- Cook on LOW for 10 hours or on HIGH for 6 hours, or until beans are tender.
