Butter, for greasing the pan
1 1/4 cups all-purpose flour, plus more for the pan
3/4 cup sugar
2 eggs
1/3 cup olive oil
1 teaspoon vanilla extract
Juice and zest of 1 orange (about 3 tablespoons juice, 1 tablespoon zest)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Confectioners' sugar for dusting

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.
  • Mix together the sugar and eggs in a medium bowl with a hand mixer on medium speed until blended and light. Drizzle in the olive oil and vanilla and mix until light and smooth. Add the orange juice and zest and mix well. Sift together the flour, baking powder, baking soda and salt in another medium bowl. Add the flour mixture half at a time to the wet ingredients and mix on low just to incorporate. Pour into the prepared cake pan and bake, 25 to 30 minutes. Let the cake cool 15 minutes, dust with confectioners' sugar and serve.

3 cups water, divided
1 cup sugar
1 can (12 ounces) frozen orange juice concentrate, thawed
2 tablespoons lemon juice
1/2 cup half-and-half cream

Steps:

  • In a saucepan, bring 1 cup water and sugar to a boil, stirring frequently. Boil for 1 minute or until sugar is dissolved. Remove from the heat; stir in orange juice concentrate, lemon juice and remaining water. Transfer to a freezer-proof bowl. Cover and freeze until firm., Remove from the freezer. Beat until blended. Beat in cream. Cover and return to freezer. Remove from the freezer 20 minutes before serving.

SHARBAT (ORANGE ICE)



Sharbat (Orange Ice) image

A wonderfully refreshing drink popular throughout the Middle East. This particular version of it is from Iran, and is from the Bay Books' publication: 'The Best of Lebanese and Middle Eastern Cooking'. It is impossible to provide "accurate" freezing times for this recipe, as it's really up to you - and also of course to the efficiency of your fridge - just how many times you repeat step 4. When I've made this, I've repeated this step three times, so that's what I've calculated into the "cooking time". For this recipe "cooking time" = freezing time. This is, therefore, obviously a prepare-ahead drink/dessert, and one which is ideally made when you are in the kitchen preparing other dishes. I'm posting it for the 2005 Zaar World Tour. Orange-blossom water can be purchased from Middle Eastern grocery stores. I'd recommend making this Sharbat with fresh oranges and lemons, and with natural spring water or filtered water. And to use more or less sugar, to satisfy your taste preferences.

500 ml orange juice
125 ml lemon juice
375 g sugar (to taste)
800 ml water
1 tablespoon orange blossom water

Steps:

  • Combine the orange and lemon juices.
  • Place the sugar and water in a saucepan, bring to the boil, simmer for 5 minutes and then cool.
  • Stir in the fruit juices and orange-blossom water, pour into freezer trays, cover with foil and freeze.
  • As the ice freezes a little, beat it lightly with a fork to reduce the size of the ice crystals; and repeat this process at 30 minute intervals.
  • Transfer the Sharbat from the freezer to the refrigerator 20 minutes before serving.
  • Note: The Sharbat may be served in scooped-out orange shells or in glasses or in shallow bowls; and may be served with shredded lemon or orange peel, or both; or with thin slices of orange.

Before commercial ice cream was available in the Gulf countries, homemade ices were very popular in the summer heat. This is a basic recipe calling for oranges and lemons, but can easily be substituted with crushed melon, strawberries, or whatever your favorite fruit may be. From "The Arabian Delights Cookbook." Recipe time does not include freezing.

1 cup sugar (more or less, depending on the sweetness of the fruit)
2 1/2 cups water
1 1/3 cups fresh orange juice
1/2 cup fresh lemon juice
1 orange, rind of, finely grated
1 lemon, rind of, finely grated

Steps:

  • Bring the sugar and the water to a boil.
  • Boil 5-10 minutes, until the sugar is completely dissolved; cool slightly and strain if necessary.
  • Add the juices and rinds, stirring to mix well, or blend in a food processor.
  • Pour liquid in glass bowl and freeze until slushy.
  • Use an electric mixer or a food processor to beat the frozen mixture until smooth.
  • Pour into a container of your choice, and return to the freezer.
  • Freeze until firm.

ORANGE CHOCOLATE LAVA CAKES

Nonstick cooking spray
3/4 cup bittersweet chocolate chips
4 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil, plus more for drizzling
Zest of 1 orange
1/4 cup sugar
1 whole egg, plus 1 egg yolk
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
Sea salt, for sprinkling
1 orange, segments cut into supremes

Steps:

  • Preheat the oven to 375 degrees F. Spray a muffin tin with nonstick cooking spray.
  • Melt the chocolate, butter and oil in a medium bowl in the microwave until completely melted, about 1 minute. Whisk the mixture until smooth. Stir in the orange zest and cool slightly.
  • Whisk the sugar, egg and yolk until pale in a medium bowl. Whisk in the melted chocolate mixture. Stir in the flour and vanilla until smooth. Divide the batter among four prepared muffin tins. Bake the cakes until just barely dry on top (they will be soft in the middle), about 12 minutes. Remove the cakes from the oven and cool, about 5 minutes.
  • Gently flip the cakes onto a plate. Sprinkle the cakes with sea salt and top with the orange supremes. Drizzle with a bit of oil.

CRANBERRY-ORANGE SPRITZER

1 cup sugar
1/2 cup whole berry cranberry sauce
2 teaspoons orange zest
1 cup water
1 cup dry white wine, optional
3 cups seltzer water
1 lemon, cut into wedges

Steps:

  • In a medium saucepan, heat the sugar, cranberry sauce, orange zest, and water over medium heat until it comes to a boil. Simmer for 3 minutes and then remove from the heat. Allow to sit for at least 30 minutes, then chill.
  • Place ice into 4 glasses; pour 1/4 cup cranberry syrup into each glass. Add 1/4 cup white wine, if using, the juice from a wedge of lemon and 3/4 cup seltzer to each glass.

2 cups raspberries, plus a few for garnish
1/4 cup orange juice
1/4 cup sugar
2 1/2 cups ice

Steps:

  • Place a 9-by-13-inch pan in the freezer.
  • Add the raspberries, orange juice and sugar to a blender and blend until smooth. Using a sieve, strain the mixture into a bowl and discard the seeds. Return the fruit puree to the blender, add the ice and blend until smooth again. Pour into the chilled pan and transfer to the freezer.
  • After 20 minutes, scrape the pan with a fork to create a slushy consistency. Return to the freezer for an additional 20 minutes. Scoop and serve with a few raspberries.

ITALIAN LEMON ICE

It was very hot and humid here today, so I made some Italian Lemon Ices to help cool off :) I have included both versions because most people have a definite preference for either the "water ices", or the creamier "Roman Style" ices. One of my fondest summer memories as a child, was when my grandmother would "slip" me a dime, so I could go down to the neighborhood Italian bakery and buy a cup of lemon ices....yum!

2 cups hot water
3/4 cup sugar
1/2 cup lemon juice, fresh squeezed
1 teaspoon grated fresh lemon rind
1 1/2 cups sugar
1 quart water
3/4 cup lemon juice, fresh squeezed
1 egg white
1/4 cup sugar
3 ounces white rum

Steps:

  • ***Water Ices*** (serves 4).
  • Melt sugar in hot water, add lemon juice and rind.
  • Let mixture stand for 5 minutes.
  • Strain, place mixture in a freezing tray and freeze, stirring frequently, until it reaches a mushy consistency.
  • If you have an electric ice cream machine, pour mixture into machine and freeze according to manufacturer's directions.
  • ****Roman Style**** (serves 6).
  • Combine sugar and water in saucepan, heat until sugar melts.
  • Add lemon juice.
  • Strain mixture through a very fine sieve.
  • Freeze until mushy, stirring frequently.
  • Beat egg white until stiff.
  • Remove ice mixture from freezer when mushy.
  • Add stiffly beaten egg white and 1/4 cup sugar and mix well.
  • Add rum and mix.
  • Return to freezer and continue to freeze to ices consistency (not solid), stirring often.
  • If you have an electric ice cream machine, pour mixture into machine and freeze according to manufacturer's directions.
  • Add beaten egg white and sugar according to manufacturer's instructions as you would if you were adding additional ingredients (nuts, choc chips, etc) to your ice cream.

ITALIAN WATER ICE - ORANGE

2 cups water
1 cup sugar
1 cup fresh orange juice
1 grated orange, rind of (no white part)
2 tablespoons fresh lemon juice

Steps:

  • Boil water and sugar together for 5 minutes.
  • Cool.
  • Stir in juice and peel.
  • Pour into shallow bowl and put in freezer.
  • As it starts to freeze, keep stirring the outside crystals into the center and mix in peel.
  • Do about every half hour -MUST DO!.
  • When real slushy, stop and freeze overnight.
  • To serve, you must scrape very thin layers of the slush off the top.
  • I use a big spoon with sharp edges moving it sideways.
