BEST EVER BRUSCHETTA
I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

Steps:
- In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
- Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.
- Slice the bread into individual pieces and spoon the mixture on top.

APRICOT AND CHICKEN BRUSCHETTA
A wonderful appetizer to prepare when you are in a hurry - use a rotisserie chicken from the deli. A Giada De Laurentiis recipe from Everyday Italian. These are so good & come together very easily! I prefer using white meat chicken but any that you like is fine. :)

Steps:
- Preheat the oven to 350ºF.
- Slice the bread into 10 slices, each about 1/2-inch thick.
- Brush the bread slices with the olive oil and arrange on a baking sheet.
- Bake for 10 to 15 minutes until crisp and golden.
- Cool to room temperature.
- Spread each slice of the toasted bread with the apricot preserves(already mixed with crushed red peppers) then place a slice of the cheese on top.
- Arrange the sliced chicken on top of the cheese.
- Cut each piece of prosciutto in half and place on top of the chicken.
- Transfer the bruschetta to a serving platter.
- Drizzle with the extra-virgin olive oil and serve at room temperature, that's what makes it so great! :).

APRICOT CHICKEN

- Heat a large skillet with a lid over medium high heat. Add oil and chicken. Season with salt and pepper. Lightly brown the chicken a few minutes on each side, add onions. Cook 5 minutes. Add vinegar to the pan and let it evaporate. Add apricots and stock. When stock comes to a bubble, add preserves and stir to combine. Cover pan, reduce heat and simmer 10 to 15 minutes. Serve chicken with a sprinkle of chopped parsley.

- In a shallow microwave-safe dish, combine the first seven ingredients; stir in chicken. Cover and microwave on high for 3 minutes, stirring once. , Add green pepper and cashews. - OK I SAUT'E THE SHALLOT AND RED ONION in olive oil and white wine until tender THEN I ADD THE CHICKEN AND BREAKS UP EASY WITH WOODEN SPOON COOK SIMMER ADD SALT AND PEPPER COOK ON LOW 30 - 35 MIN .
- PRE SLICE THE BREAD LIGHTLY OLIVE OIL IT TOAST IN OVEN 400 FOR ABOUT 4-5 MIN OR UNTIL LIGHT TOASTED lower temp to 350
- LET BREAD COOL A FEW MIN AND SPREAD A LAYER OF APRICOT PRESERVES ON IT , THEN TOP IT WITH A slice of cheese , THE CHICKEN MIX TOP WITH piece of prosciutto and remaining SLICED CHEESE AND BACK INTO OVEN ON 350 UNTIL BUBBLY SERVE ASAP HOT drizzle with little olive oil before serving .
