APRICOT SALAD
This is a great salad for the holidays due to the very festive orange color.

Steps:
- In a small saucepan, combine gelatin, sugar and water. Bring to a boil and mix until dissolved. Remove from heat, add baby food and pineapple with juice. Stir, set aside to cool for 10 minutes.
- In a small bowl, combine the cream cheese and sweetened condensed milk, mix together until smooth. Pour into fruit mixture and whisk together.
- Stir in pecans and pour into a 9x13 inch pan. Refrigerate until chilled. Top with thawed whipped topping if desired. Sprinkle with pecans to decorate and cut into squares.

- Dissolve gelatin in boiling water; set aside. Beat cream cheese until smooth; gradually beat in milk until smooth. Stir in gelatin. Add pineapple, mixing well. Refrigerate., When mixture begins to thicken, fold in whipped topping. Pour into a 2-1/2-qt. serving bowl. Refrigerate at least 2 hours. If desired, serve with canned apricots and fresh mint leaves.

- In a bowl, dissolve gelatin in water. Drain pineapple, reserving juice. Add pineapple to gelatin and set aside. In a bowl, beat cream cheese and pineapple juice until smooth. Stir in gelatin mixture; chill until partially set, stirring occasionally. Stir in apricots and walnuts. Fold in whipped topping. pour into a 13x9-in. dish. Sprinkle with walnuts if desired. Chill until firm.

Steps:
- Soften Knox in water.
- Heat to dissolve.
- Add rest of ingredients. Pour into 2 quart dish. Chill completely.
- For Topping: Cook all ingredients, except whipped topping, over low heat until thick. Stirring constantly.
- Cool and add whipped topping and spread over chilled jello mixture.

- Bottom:.
- Drain appricots and pineapple, reserve liquid.
- Dissolve jello in 2 cups hot water.
- Add marshmellows and stir until melted.
- Add 1 cup of reserved liquid.
- Combine remaining ingredients and put in a 9X13inch pan.
- Refrigerate until set.
- Topping:.
- Put 1 cup reserved liquid in a sauce pan, heat.
- Mix the sugar and flour, add to liquid.
- Add 1 beaten egg.
- Cook to boiling until thickened.
- Remove from heat and add the butter (margarine).
- Cool then add 2 cups cool whip (dream whip).
- Cover the bottom with the topping & refrigerate. Sprinkle with cheese (Optional).
APRICOT DREAM JELLO SALAD
This is a family favorite, especially at holiday time. No big family get-together is complete without this dish. It looks lovely from a mold. Fast and simple, the hardest part of this is finding the apricot Jello. You can cut calories in this dish by using sugar free, low fat ingredients. They work just as well.

- 1. Combine dry Jello and pineapple in medium sized sauce pan. Heat to simmer and stir until jello is well dissolved. Set off heat and allow to cool slightly.
- 2. Stir buttermilk into jello mixture.
- 3. Mix whipped topping into jello mixture.
- 4. Stir in pecans.
- 5. Pour into 9x9 pan or into jello mold. Chill for 24 hours before serving.

- 1. Combine both jello flavors and make according to package directions. (Use orange juice in place of cold water if desired.) Let it set in refrigerator, until of egg white consistency. 2. Soften cream cheese. Beat cream cheese. Add Cool Whip. 3. Fold mixture into Jello. 4. Place mandarin orange pieces in a greased mold or 13 x 9 Pyrex dish. Pour Jello mixture over them. 5. - Pour 2 cups of the apricot nectar into a saucepan reserving the rest. Add all the jello to the 2 cups nectar and stir well. Heat the saucepan to boiling, stirring constantly, until all the jello is dissolved.
- Pour reserved nectar into a large bowl and add the contents of the saucepan. Stir well to blend. Line a large jello mold with the apricot halves, rounded side down. Pour 2 cups of the jello-nectar mixture over the apricot and refrigerate until firm but still a little sticky, about 1 hour. In a bowl, combine the sour cream with 2 more cups of the jello-nectar mixture and beat until fluffy. Pour on top of the first layer already in mold and let chill 2 hours. Pour remaining jello-nectar mixture over the sour cream layer and chill for several hours or overnight.
- To unmold, dip the mold into hot water for 20 second or so. Loosen around the edges with a knife. Turn out onto serving plate. You may decorate the mold by encircling with fresh fruit or more apricot halves.
