Fresh apricots bring flavor and nutrition to this delicious breakfast smoothie! Apricot smoothies are great for after school snacks, too!

10 apricots, cut in half and seed removed
1/4 c plain yogurt
1/2 c milk
2 tbsp honey
1 tsp vanilla

Steps:

  • Blend all ingredients in blender until smooth. Pour into two chilled glasses and serve!

½ cup plain fat-free Greek yogurt
½ cup crushed ice
1 apricot - peeled, pitted, and chopped
2 tablespoons honey
1 tablespoon flax seeds
1 tablespoon lemon juice

Steps:

  • Blend raspberries, yogurt, ice, apricot, honey, flax seeds, and lemon juice together in a blender until smooth.

Just made this up today with what I had on hand and both my toddler and I loved it. A yogurt based smoothie that is quite tasty. The flaxmeal is not a MUST, but does increase the "health factor" and it tastes great in this smoothie (feel free to increase it to 2 T if you like).

1/4 cup sliced strawberry (frozen if you like)
5 apricot halves (from a can or tin with juice reserved)
3/4 cup nonfat vanilla yogurt
1 tablespoon apricot nectar (reserved from the can)
1 tablespoon flax seed meal
1/4 cup cold water

Steps:

  • Place first 5 ingredients in blender and mix well. Add water til you get the desired consistency. Taste and add a bit more apricot nectar if it's not sweet enough for you!
