1 lb boneless skinless chicken breast half
1/4 cup orange marmalade
1 teaspoon cornstarch
1/4 teaspoon ground ginger
1/2 teaspoon minced garlic
1 cup unsweetened applesauce
2 tablespoons sliced green onions

Steps:

  • Wash and dry chicken breasts, cut each breast lengthwise into 4 pieces.
  • Place in single layer in foil-lined 13x9x2” baking pan.
  • Set aside.
  • In 1-quart saucepan, combine marmalade, cornstarch, ginger and garlic.
  • Add applesauce.
  • Cook over medium heat, stirring constantly, until mixture starts to boil.
  • Spread evenly over chicken.
  • Bake at 400F about 20 minutes or until chicken is tender and juices run clear.
  • Garnish with green onions and serve hot over rice if desired.

½ cup apple jelly
1 tablespoon honey
1 tablespoon Dijon mustard
½ teaspoon ground cinnamon
½ teaspoon salt
4 skinless, boneless chicken breast halves

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix apple jelly, honey, mustard, cinnamon, and salt together in a bowl. Brush chicken breasts with glaze.
  • Place glazed chicken breasts on the preheated grill; cook, occasionally brushing chicken with more glaze, until chicken is no longer pink in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

6 boneless skinless chicken thighs (1-1/2 pounds)
3/4 teaspoon seasoned salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 cup unsweetened apple juice
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme

Steps:

  • Sprinkle chicken with seasoned salt and pepper. In a large skillet, heat oil over medium-high heat. Brown chicken on both sides. Remove from pan., Add juice and thyme to skillet. Bring to a boil, stirring to loosen browned bits from pan; cook until liquid is reduced by half. Return chicken to pan; cook, covered, over medium heat 3-4 minutes longer or until a thermometer inserted in chicken reads 170°.

4 boneless skinless chicken breast halves
1/2 teaspoon pepper
1 tablespoon olive oil
2/3 cup chunky applesauce
2 tablespoons brown sugar
1 teaspoon chili powder

Steps:

  • Sprinkle chicken with pepper.
  • In a large skillet, brown chicken in oil on both sides.
  • In a small bowl combine the remaining ingredients; pour over chicken. Cover and cook 7-10 minutes longer or until a meat thermometer reads 170.
  • Serve desired amount. Cool leftovers, transfer to a freezer container and freeze for up to 3 months.
  • TO USE FROZEN CHICKEN: Thaw them in refrigerator overnight. Cover and microwave on high for 8-10 minutes or until heated through, stirring once.

4 frozen chicken breast halves (or thighs)
1 1/2 cups applesauce
1 tablespoon dried onion flakes (or 1 yellow onion, chopped finely(my choice)
1 tablespoon apple cider vinegar
1/4 teaspoon cinnamon
1/2 teaspoon black pepper
2 garlic cloves, minced
1/4 teaspoon red pepper flakes (optional)

Steps:

  • Put the frozen chicken pieces into your crockpot.
  • Add the onion (if you are using the dried onion, wait and add it to the applesauce).
  • In a bowl, mix the applesauce, vinegar, garlic, and spices together. Pour on top of the chicken.
  • Cover and cook on low for 5-7 hours, or on high for 3-4.
  • Serve with rice or noodles.
