1 cup unsweetened apple sauce
1 box vanilla cake mix (14-oz)
peanut butter
almond butter
Chocolate hazelnut spread
Vanilla or chocolate icing
Grape jelly
Dye-free sprinkle
mini chocolate chips
Coconut
Toasted chopped nuts
Whole nuts
Fresh apple slices

Steps:

  • Stir together apple sauce and cake mix in a large bowl until combined. Spray muffin tins with cooking spray and then evenly add batter to the muffin cups filling each 2/3 full.
  • Bake at 350F for 16 - 17 minutes or until they're golden brown a wooden pick inserted in the center of the cupcake comes out clean. Cool the cupcakes on a baking rack. Once cool, decorate with optional spreads and sprinkles. Store in an airtight container for up to 3 days.

⅔ cup shortening
2 ⅔ cups white sugar
4 eggs
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ teaspoons salt
2 teaspoons baking soda
3 cups all-purpose flour
⅔ cup water
3 cups grated apple
⅔ cup raisins
⅔ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease the insides of 8 straight-sided wide-mouth pint canning jars. Sift together flour, baking soda, salt, nutmeg and cinnamon. Set aside.
  • Cream shortening and sugar until fluffy. Add eggs and beat in well. Add flour alternately with water and mix until smooth. Fold in apples, raisins and nuts.
  • Fill jars 1/2 full of batter, being careful to keep the rims clean. Wipe off any batter that gets on the rims. Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
  • As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
  • Jars should be eaten or kept in refrigerator for up to a week.

1 (15.25 ounce) package yellow cake mix
2 teaspoons ground cinnamon
⅓ cup vegetable oil
3 eggs
1 cup Mott's® Natural Applesauce
1 cup confectioners' sugar
½ teaspoon ground cinnamon
2 teaspoons milk, or as needed
Chopped pecans for garnish

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) or to temperature indicated on cake mix package. Line 24 muffin cups with paper liners.
  • Pour cake mix into bowl and add 2 teaspoons cinnamon. Prepare cake batter (with vegetable oil and eggs) according to package directions.
  • Fill muffin cups 2/3 full, and bake according to package directions (typically 18 to 21 minutes) or until a toothpick inserted into the middle of a cupcake comes out clean.
  • Remove muffin pans from the oven, and allow to cool.
  • Cut a plug about 1-1/2" inches long and 3/4 inch in diameter out of the center of each cupcake. Fill the opening with about 2 teaspoons applesauce or enough to fill hole.
  • Beat together the confectioners' sugar, cinnamon, and milk until mixture can be drizzled. If too thin, add more sugar; if too thick, add more milk. Drizzle icing over top of cupcake. Sprinkle with chopped pecans. Allow icing to dry before serving.

1/3 cup butter, softened
3/4 cup sugar
2 large eggs. room temperature
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3/4 cup applesauce
1 cup prepared cream cheese frosting

Steps:

  • In a large bowl, cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients; add to creamed mixture alternately with applesauce., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing to a wire rack. Frost cooled cupcakes.

These make lovely gifts, and the size can be varied (I've made 1/2 pint and pint jars with equal success.) These will keep in the cupboard for up to one year (theoretically!) Depending on the size on your jars, you can either bake them in muffin tins, or use crumpled aluminum foil on a baking sheet to keep them from sliding. Correction: Thanks to the review, I'm redacting the "storing in cupboard" portion of the note. These should be stored in the freezer or consumed immediately.

1/2 teaspoon baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda

2 cups applesauce
2/3 cup nuts (optional)

Steps:

  • Mix together dry ingredients & set aside.
  • Cream together sugar & shortening, beat in eggs, water & applesauce. Add dry ingredients.
  • Stir in nuts.
  • Pour in well-greased pint jars, ones with wide mouths & no necks. (Use a pastry brush to reach all spaces.) Fill 1/2 full.
  • Bake at 325F for 45 minutes.
  • Wipe lips of jars clean, put canning lids & rings on, screw tight. Jars will seal as they cool.
  • Decorate tops of jars. Stores in cupboard for up to one year (in theory.) Makes 12-14 pint jars. (Double recipe makes 3 dozen 1/2-pint jars. If using this size, adjust cooking time.).

Steps:

  • Creating the Gift in a Jar:
  • Wash and thoroughly dry a 1-quart wide-mouth canning jar.
  • Layer the ingredients in the jar as listed above starting with the flour, salt, baking powder, sugar, brown sugar and then chocolate chips - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
  • Secure the lid and decorate as desired; attach the instructions for making these cookies found below.

1/2 cup sugar
1-1/4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

1-1/2 cups all-purpose flour, divided
2 tablespoons quick-cooking oats
ADDITIONAL INGREDIENTS:
1 large egg, lightly beaten, room temperature
1 cup unsweetened applesauce
1/2 cup butter, melted
1 teaspoon vanilla extract
1 tablespoon sugar

Steps:

  • Combine the first five ingredients. In a 1-pint glass jar, layer 3/4 cup flour, oats, sugar mixture and remaining flour. Cover and store in a cool, dry place for up to 6 months. Yield: 1 batch (about 2 cups total). , To prepare muffins: Preheat oven to 375°. Combine egg, applesauce, butter and vanilla. Stir in muffin mix just until moistened. Fill greased muffin cups three-fourths full. Sprinkle with sugar. Bake until a toothpick comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack.
