2 tablespoons olive oil
2 teaspoons fresh lemon juice
1/8 teaspoon salt
4 medium apples, julienned
3/4 cup chopped pecans, toasted
1/2 cup fresh cilantro leaves
1/4 cup dried cranberries
1/4 cup golden raisins

Steps:

In a large bowl, whisk together olive oil, lemon juice and salt. Stir in remaining ingredients.

1/2 cup sugar
1/2 cup distilled white vinegar
3 tart apples, peeled, cored and julienned
2/3 cup chopped red onion
1/2 cup chopped dill pickle

Steps:

Combine sugar and vinegar together in a small bowl.
Mix together apples, onion, and pickle in a medium bowl.
Toss with vinegar mixture and then refrigerate until thoroughly chilled before serving (lets the flavors mix).
