SUGARCANE BAKED HAM WITH SPICED APPLES AND PEARS



Sugarcane Baked Ham with Spiced Apples and Pears image

12 sugarcane swizzle sticks, each cut into about 3-inch pieces
1 hickory smoked ham, spiral sliced, 8 to 10 pounds (no bone, water added, cooked)
1 cup firmly packed light brown sugar
1 cup Steen?s 100 percent Pure Cane Syrup
1/2 cup dark molasses
1/2 cup dark corn syrup
1/8 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1 teaspoon dry mustard
1/4 cup water
1 1/2 pounds (about 4) Granny Smith apples
1 1/2 pounds (about 4) Bartlett pears

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a shallow baking pan with parchment or waxed paper. Insert the sugarcane sticks into the ham at 3 to 4-inch intervals. Tie the ham, using kitchen twine, horizontally and vertically, like a package, to hold it together. Place it on a wire rack in the baking pan.
  • In a mixing bowl, combine all of the glaze ingredients together except for the mustard and water. Mix well. In a small bowl, dissolve the mustard in the water, then add to the spice mixture. Blend well.
  • Brush the entire ham with the glaze, coating it evenly. Wash, core, and halve the fruit. Place all around the ham. Baste the ham a second time and baste the fruit with the glaze. Bake for 45 minutes. Baste the ham and fruit again. Bake another 45 minutes. Remove the ham from the oven and let it rest for 5 minutes. Remove and discard the string and swizzle sticks. Serve the apples and pears on a platter with the ham. Serve everything warm or at room temperature.

1/3 cup apple juice
1 cup pancake mix
1 cup milk
2 tablespoons butter, melted

Steps:

  • In a large skillet, combine the apples, sweet potatoes, ham, brown sugar, salt, pepper and curry. Cook over medium heat until apples are crisp-tender; drain. Combine cornstarch and apple juice until smooth; stir into apple mixture. Bring to a boil; cook and stir for 1-2 minutes or until mixture is thickened. , Transfer to a greased 2-qt. baking dish. Cover and bake at 375° for 10 minutes or until sweet potatoes are tender. Meanwhile, in a large bowl, whisk together the pancake mix, milk, butter and mustard; pour over ham mixture. , Bake, uncovered, for 25-30 minutes or until puffed and golden brown.

2 medium sweet potatoes, peeled and cut into 1/2" thick slices
2 large cooking apples (jonathan's or winesap)
1 boneless ham steak (2 pounds) cut into 1/2" cubes
1 large yellow onion, sliced and separated into rings
1/2 c apple cider or apple juice
3 Tbsp butter, melted
2 Tbsp light brown sugar
2 Tbsp maple syrup
2 Tbsp fresh lemon juice
1/4 c golden raisins
1/2 tsp ground cinnamon
1/2 tsp ground allspice
3/4 c crushed corn flakes
3 Tbsp butter, melted
1/2 tsp sweep paprika

Steps:

  • 1. Preheat oven to 375 degrees. Lightly butter a shallow 3 quart casserole and set aside.
  • 2. In a medium saucepan, combine sweet potatoes with water to cover. Bring to a boil over medium-high heat. Reduce heat, partially cover, and simmer for 10 minutes, just until tender. Drain well and set aside.
  • 3. Core apples (do not peel) and slice crosswise into 1/2" slices. Arrange sweet potatoes over bottom of prepared casserole. Cover with apple slices. Evenly distribute ham pieces and onion over apples.
  • 4. In a small bowl, mix cider, melted butter, brown sugar, maple syrup, lemon juice, raisins, cinnamon, and allspice. Spoon mixture evenly over casserole.
  • 5. TO MAKE TOPPING: In a small bowl, combine cornflakes, melted butter, and paprika. Sprinkle evenly over top of casserole. Bake, uncovered, for 40 to 50 minutes, until top is crispy. Serve right away.

3 tablespoons butter
1 tablespoon cornstarch
½ cup packed brown sugar
1 ½ cups apple juice
1 tablespoon lemon juice
½ teaspoon ground cinnamon
½ teaspoon ground allspice
3 large apples - peeled, cored and sliced

Steps:

  • Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
  • Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
  • Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.

1 ham slice (about 1-1/2 pounds)
1 tablespoon butter

Hot cooked rice

Steps:

  • Drain peaches, reserving 1/2 cup syrup; set aside. In a large skillet, brown ham on both sides in butter over medium heat. Remove ham to a platter and keep warm, reserving drippings in skillet., In a small bowl, mix sugar, cornstarch and nutmeg. Add orange juice, lemon juice and reserved peach syrup; stir until smooth. Add to drippings in skillet. Cook and stir until thickened., Stir in peaches and heat through. Add ham slice and heat for 2-3 minutes. Cut into serving-size pieces. Serve over rice.

4 lbs yams, UNPEELED, sliced 1/4 inch thick
1 (20 ounce) can apple pie filling
1 cup golden raisin
3 tablespoons unsalted butter, melted
1 1/2 teaspoons ground cinnamon
1 cup pecans, coarsely chopped
1/3 cup granulated sugar
2 tablespoons unsalted butter

Steps:

  • FOR THE YAMS, with non-stick cooking spray, coat inside of a 4-quart crock pot.
  • Into crock pot place sliced yams, pie filling, raisins, melted butter & cinnamon, then gently stir to mix.
  • Cover & cook on LOW 6-7 hours or until yams are cooked through.
  • FOR THE TOPPING, in large skillet, add chopped pecans, sugar & 2 tablespoons butter, then cook over medium heat, stirring constantly, 8-10 minutes or until sugar mixture adhering to nuts turns golden & starts to melt.
  • Pour mixture onto some heavy duty foil, & let cool completely.
  • When cool, coarsely crush nut mixture.
  • When yams are done, sprinkle with crushed nut mixture & serve.

  • In a 10-inch skillet over medium heat, melt butter or margarine. Add flour to make a roux. Add jelly, brown sugar, cinnamon, nutmeg and cloves cook and stir until mixture reaches a rolling boil. Add ham and yams. Reduce heat to low, cover and simmer for 15 minutes or until meat and yams are heated through, basting occasionally with sauce. Remove ham and yams and arrange on a platter. Over medium-high heat, cook and stir sauce to reduce to desired consistency. Spoon over ham and yams. Garnish with apple rings.
