APPLE SOJU COCKTAILS
"This refreshing aperitif, a brainchild of David Arnold of the French Culinary Institute, bathes crisp matchsticks of Pink Lady apple with soju (a Korean spirit) and a little sparkle." Gourmet Magazine, 10/07 edition. I saw this cocktail and it looked interesting - thought I'd post it and see what kind of reaction it got. Chilling time at least 30 mins and up to 2 hours.

Yield 8 12 oz Double Old Fashioned Glasses
Number Of Ingredients 4
Steps:
- Equipment: an adjustable-blade slicer fitted with 1/4-inch julienne blade
- Cut apple into matchsticks with slicer, discarding core, then put in a pitcher and stir in soju.
- Let macerate, covered and chilled, at least 30 minutes.
- Fill 8 (12-ounce) double Old Fashioned glasses with ice.
- Strain about 1/4 cup soju into each glass, then add some apple pieces to each glass.
- Top off drinks with tonic and serve with lime wedges.

Steps:
- Cut apple into matchsticks with slicer, discarding core, then put in a pitcher and stir in soju. Let macerate, covered and chilled, at least 30 minutes.
- Fill 8 (12-ounce) double Old Fashioned glasses with ice. Strain about 1/4 cup soju into each glass, then add some apple pieces to each glass. Top off drinks with tonic and serve with lime wedges.

- Subak Soju (Watermelon Soju) They might not be in season now, but as soon as summer hits, you’ll find me at the store buying as many mini-watermelons as I can carry.
- Korean Yogurt Soju Cocktail. Here’s another yogurt-based cocktail that also includes Sprite. I know it sounds odd, and you’d think it would just curdle, but it’s surprisingly pleasant once you get used to it.
- Somaek (Korean Soju and Beer Cocktail) Beer cocktails are nothing new, and you’ll see them in bars all over the world. I’ve always loved the classic shandy (beer and citrus soda), but this cocktail is more like a boilermaker, which is beer and a shot of whiskey.
- Pineapple Soju Recipe. I might be obsessed with these delightful served-in-the-fruit cocktails. It’s just too cute! But funny enough, you won’t use the fruit itself for this recipe, so there’s no need to rush out and buy a whole pineapple.
- The Seoul Mule. Ah, the infamous mule. It goes by a lot of names, and depending on where you go, the spirit will be different. But it’s super tasty no matter what.
- Soju Caipirinha. The caipirinha is one of Brazil’s most famous exports. Made using cachaça, sugar, and lime, it’s light, sweet, and perfect on a hot day.
