APPLE SCONES WITH BLACKBERRY COMPOTE

Apple scones with blackberry compote image

The perfect autumnal afternoon treat, sit back and enjoy with a warming cup of tea

Provided by Good Food team

Categories     Afternoon tea, Treat

Time 35m

Yield Makes 8

Number Of Ingredients 7

225g self-raising flour , plus extra for dusting
50g butter
4 tbsp golden caster sugar
¼ tsp cinnamon
1 apple , peeled, cored and diced
125ml milk , plus extra for brushing
clotted cream and fresh or defrosted blackberry compote (see goes well with), to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip flour into a large bowl with butter then rub in using fingers until the mix looks like fine crumbs. Stir in sugar and cinnamon, add apple and give everything a mix.
  • Pour in milk and stir it in quickly, then fold dough over 2-3 times until it's a little smoother. Tip onto a lightly floured surface; pat into a round about 3cm deep.
  • Dip a 6cm cutter into some flour then cut out scones, flouring the cutter each time. Squash offcuts lightly back into a round and repeat until all dough is used up. Brush tops with a little milk then place on to a lightly floured baking sheet and bake for 18-20 mins until risen and golden. Allow to cool on the tray.
  • To serve, split scones then spread with a dollop of clotted cream and a spoonful of blackberry compote.

APPLE CINNAMON SCONES

Apple Cinnamon Scones image

I landed my first job in a bakery when I was sixteen. I would come in after school and make huge batches of scone mix to help the morning baker. After I graduated from high school, I became the principal baker --and spent the summer waking up at 2 a.m. Even though I had to go to bed at 7 p.m., I felt like the coolest kid in town. The bakery offered a bunch of different flavors of scones, and I could never decide on a favorite.

Time 45m

Yield About 18 scones

Number Of Ingredients 10

361 grams (3 cups) all-purpose flour
132 grams (2/3 cup) granulated sugar
12 grams (1 tablespoon) baking powder
2 grams (1 teaspoon) ground cinnamon
1 gram (1/4 teaspoon) fine sea salt
142 grams (5 ounces) (10 tablespoons) cold unsalted butter, cut into 1/2-inch cubes
340 to 425 grams (2 to 2 1/2 cups) chopped apples, peeled if desired
242 grams (1 cup) heavy cream
Egg wash: 57 grams (1 large) egg, beaten with 15 grams (1 tablespoon) water and a small pinch of fine sea salt
Turbinado or coarse sugar, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C), with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon and salt. Add the butter and toss to coat the cubes with flour. Cut the butter into the flour by rubbing it between your forefingers and thumbs until the butter pieces are between the size of peas and walnut halves. Add the chopped apples and toss gently to combine.
  • Make a well in the center of the dry ingredients and pour in the cream. Toss the mixture with your fingers to combine, then knead gently to ensure everything is evenly moistened.
  • Scoop 1/4-cup mounds of the dough onto the prepared baking sheets (I do this by hand because I like them to look craggy, but you can use a No. 16 (1/4-cup scoop)), leaving at least 1 1/2 inches between them. Brush the tops of the scones with the egg wash and sprinkle generously with turbinado sugar.
  • Bake the scones, switching the sheets from front to back and top to bottom at the halfway mark, for 20 to 22 minutes, until the tops and edges are golden brown. The scones can be served warm or at room temperature.

APPLE BUTTERMILK SCONES

Buttermilk brings a bit of tang and tenderness and is a great partner to the scones' sweet-spicy cinnamon flavor. Expect a crunchy golden exterior with crumbly edges and a soft center.

  • Pre-heat your oven to 425 degrees. Combine all of your dry ingredients, and mix them together well. If you like spicier scones, add another 1/2 tsp cinnamon, or better yet, some nutmeg or cloves.
  • Shred your apple. Add the shredded apple, then the milk and mix until they form a soft dough. Add a bit of flour if the dough is too sticky, it really depends on how moist your shredded apple is.
  • Knead a few times, working some extra flour into it until it is barely sticky. Divide into two balls of dough.

  • In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and spice., Work in the butter just until the mixture is unevenly crumbly; it's OK for some larger chunks of butter to remain unincorporated., Stir in the chopped apple and cinnamon chips., In a separate mixing bowl, whisk together the eggs, vanilla, and applesauce., Add the liquid ingredients to the dry ingredients and stir until all is moistened and holds together., Line a baking sheet with parchment; if you don't have parchment, just use it without greasing it.
  • Sprinkle a bit of flour atop the parchment or pan., Scrape the dough onto the floured parchment or pan, and divide it in half.
  • Gently pat and round each half into a 5" to 5 1/2" circle about 3/4" thick., To make the topping, stir together the coarse sugar and cinnamon.
  • Brush each circle with a bit of water or milk, and sprinkle with the topping., Using a knife or bench knife that you've run under cold water, slice each circle into 6 wedges., Carefully pull the wedges away from the center to separate them just a bit; there should be about 1/2" space between them, at their outer edges., For best texture and highest rise, place the pan of scones in the freezer for 30 minutes, uncovered.
