Raita Recipe- an Indian yogurt sauce with cucumber, mint and cilantro. Cooling and refreshing, serve this with spicy Indian dishes to cool the palate.

Number Of Ingredients 13

¾ cup whole milk plain yogurt ( or sub coconut yogurt)
½ cup finely diced or grated cucumber (removed seeds first)
1 tablespoon finely chopped red onion (optional, sub chives or green onion)
2 teaspoons lemon or lime juice, more to taste
1 tablespoon olive oil
½ teaspoon cumin seeds, toasted, crushed ( or use ground)
½ teaspoon coriander seeds, toasted, crushed ( or use ground)
2-3 tablespoons chopped mint
2-3 tablespoons chopped cilantro
¼ teaspoon salt, more to taste
¼ teaspoon pepper
for heat, add 1-2 teaspoons finely minced serrano peppers- optional
garnish with fresh herbs, chive blossoms or chili flakes

Steps:

  • Place all ingredients in a bowl and stir.
  • Refrigerate until ready to serve.

1 1/4 cups plain yogurt, preferably whole milk
1/4 teaspoon coarse salt
Freshly ground pepper
1/8 teaspoon chile powder, or cayenne pepper
1/2 small sweet crisp apple, peeled and finely diced

Steps:

  • Place yogurt in a small bowl. Beat lightly with a fork until smooth and creamy. Stir in salt, pepper, chile powder, and apple.

LAMB KOFTAS WITH BEETROOT & APPLE RAITA

Skewer patties of spicy lamb mince and serve with a vibrant pink yogurt sauce for an easy, freezable weeknight dinner

1 red onion , thinly sliced
juice 1 lemon , plus wedges to serve
800g lamb mince
4 tsp garam masala
200g natural yogurt
1 apple , grated
1 small beetroot , about 50g, peeled and grated
small bunch coriander
cooked rice or warmed wraps, to serve

Steps:

  • Heat the grill to high. Toss the onion with half the lemon juice, plus some seasoning, and set aside.
  • Using your hands, mix the mince with 3 tsp of the garam masala and some seasoning. Divide the mix into 6, then roll each into a long thin sausage. Insert a skewer along the length of each kofta, then grill for 5 mins each side until cooked through. If using wooden skewers, soak them for 10 mins first.
  • Make the raita as the lamb cooks. Mix together the yogurt, apple, beetroot, the remaining garam masala, the lemon juice and some seasoning. Serve the koftas with the onions, raita, lemon wedges, coriander leaves and cooked rice or wraps.
