This apple pie porridge is a warming and delicious way to start the day on a cold winter's morning. With oats, apple, maple syrup and cinnamon, it is really simple to make and will be loved by the whole family.

1/2 cup oats
1 cup non-dairy milk
1 apple (half grated, half cubed)
1 tsp cinnamon (optional, or cardamom)
1 tsp coconut oil
1 tsp maple syrup (adjust amount to preference)
1 tbsp desiccated coconut (optional)

Steps:

  • Add the oats, milk, cinnamon, grated apple and coconut (if using) to a saucepan. Bring to a high simmer and then reduce the heat. Cook for 6-10 minutes stirring often until it becomes creamy in texture. Add additional milk if you prefer your porridge to have a thinner consistency.
  • While the oatmeal is cooking melt the coconut oil in a frying pan and once it has turned to liquid, add the cubed apple and maple syrup. Fry for 3-4 minutes until the apple has softened.
  • Pour your oatmeal into a bowl and top with the fried apples. Sprinkle over more cinnamon and maple syrup to preference if you wish to. Serve immediately and enjoy!

Inspired by the flavors of apple pie, this nutritious and hearty bake has the power to make any morning feel like a special occasion. Bake a batch up on Sunday as a make-ahead move for the week or serve it fresh from the oven for a crowd-pleasing brunch option. Serve in bowls with cream and additional maple syrup, as desired.

2 ½ cups uncooked rolled oats
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground allspice
¼ teaspoon ground nutmeg
¼ teaspoon ground cardamom
1 cup chopped toasted pecans, divided
1 teaspoon baking powder
¾ teaspoon kosher salt
5 tablespoons unsalted butter, divided
½ cup brown sugar, divided
2 cups whole milk
1 large egg, lightly beaten
1 tablespoon vanilla extract
2 large Honeycrisp apples, peeled and diced, divided
2 tablespoons maple syrup

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease an 11x7-inch baking dish with baking spray.
  • Place oats in a large skillet over medium heat; toast, stirring often, until oats are beginning to brown and smell nutty, about 4 minutes. Add cinnamon, ginger, allspice, nutmeg, and cardamom; continue toasting, stirring frequently, for another 1 to 2 minutes. Transfer to a medium mixing bowl and cool slightly.
  • Add 3/4 cup pecans, baking powder, and salt to the oat mixture; stir to combine.
  • Melt 3 tablespoons butter in a large microwave-safe bowl. Whisk in 6 tablespoons brown sugar. Add milk, egg, and vanilla to the bowl, whisking until combined. Stir the oat mixture evenly into the milk mixture. Fold in 1/2 of the apple pieces. Spoon mixture into the prepared pan.
  • Bake in the preheated oven until golden brown and set, 35 to 40 minutes.
  • While the oatmeal bakes, add remaining butter and apple pieces to a nonstick skillet over medium heat. Add remaining brown sugar and maple syrup. Cook, stirring often, until apples soften and the liquid thickens into a syrup, 8 to 10 minutes.
  • Spoon apple mixture over the baked oatmeal after you've removed it from the oven. Sprinkle remaining pecans over the top.

1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/2 cup white sugar
1/2 cup packed brown sugar
1/4 cup water
8 apples, peeled, cored and sliced
1 tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1 tablespoon vanilla extract
1 cup all-purpose flour
1/2 cup rolled oats
1 cup sugar
2/3 cup firmly packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup cold unsalted butter

Steps:

  • Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
  • In a large bowl mix sliced apples with nutmeg, ginger, cinnnamon, and vanilla extract (although for most everyone else the full tablespoon of cinnamon might be a lil much *my hubbys a cinnamon addict* x3 you can cut it down to 1/2 tablespoon)
  • Place the bottom crust in your pan. Fill with your apples, mounded slightly. Pour sauce over apples.
  • Bake for 30 mins at 400°F Now for the crumble topping.
  • I actually ganked this crumble topping from ratherbeswimmin
  • Remove pie from oven and lower temperature to 375°. Carefully pour the crumble mixture in the center of the pie, spreading them over the surface evenly. Bake for another 30-40 mins you may have to cover with aluminum foil the final 15 mins to prevent your topping from burning. So keep a close eye on your pie ^.^.

Optional: Sliced apples, toasted pecans and additional maple syrup

Steps:

  • In a 4-qt. slow cooker, combine the first 7 ingredients. Cover and cook on low for 6-8 hours or until liquid is absorbed. Stir in chopped apple. If desired, top servings with apple slices, pecans and syrup.
