Acorn Squash with Apple image

Peeling an acorn squash is the key to this delicious dish that's cooked in a microwave. A fast and easy delight for busy families.

1 acorn squash
2 apples, cored and sliced
1 tablespoon butter
2 tablespoons brown sugar
1 tablespoon finely chopped walnuts
½ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • To easily peel the acorn squash without losing a lot of vegetable, gently drop the squash in a large pot of boiling water, and boil for 15 minutes. Pour off the boiling water and fill with cold water and let sit 5 minutes to cool. When cool enough to handle, use a knife to slice off the peel on the ridges and use a teaspoon to dig out the peel in the valleys. Slice the squash in half and remove the seeds and stem. Then slice the halves into sections and finally cut into 1 inch chunks.
  • Place the squash chunks into a large microwave-safe bowl along with the apples. Dot with pieces of butter. Sprinkle the brown sugar, walnuts, salt and cinnamon over the top. Cover with plastic wrap, and poke a few holes in it for ventilation.
  • Cook in the microwave for 7 1/2 minutes on full power. Remove, uncover, and stir. Return to the microwave, and cook for another 7 1/2 minutes on full power, until tender. Serve hot.

Fall is one of my favorite times to celebrate food. Fresh-picked apples and this sweet squash come together for a fall treat. It's up to you to serve it as a side dish or a dessert. Let's get squashed!

2 buttercup squash, halved and seeded
3 cups red apples, peeled and cut into small chunks
½ lemon, juiced
½ cup chopped pecans, divided
2 tablespoons brown sugar
½ teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place buttercup squash halves in a baking dish.
  • Place apples in a large bowl; cover with lemon juice. Stir in all but 1 tablespoon of the pecans, brown sugar, and cinnamon.
  • Spoon apple mixture into the buttercup squash halves. Sprinkle remaining pecans on top. Dot 1 1 1/2 teaspoon butter over each squash.
  • Bake in the preheated oven until squash is tender, about 45 minutes.

1 large acorn squash, cut into quarters, seeded
1/2 cup mixed dried fruit, chopped
1 small apple, cored, coarsely chopped
1/3 cup toasted pecans, chopped
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground mace
1/3 cup maple syrup

Steps:

  • Place squash quarters, cut sides up, in a baking pan; add ½ inch of hot water.
  • Bake, covered at 400* until squash is fork-tender, about 30 minutes.
  • Combine dried fruit, apple, pecans and spices; spoon into squash.
  • Drizzle maple syrup over fruit and squash.
  • Bake, loosely covered, until apples are tender, about 10 minutes longer.

1 medium acorn squash
1 cup chopped peeled apple
4 teaspoons honey
2 teaspoons butter
1/8 teaspoon ground cinnamon

Steps:

  • Cut squash in half; discard seeds. Place squash cut side up in a 9x5-in. loaf pan. Fill centers with apple. Cover and bake at 400° for 30 minutes., In a microwave-safe bowl, combine honey and butter. Cover and microwave on high for 15-20 seconds or until butter is melted. Drizzle over squash. Sprinkle with cinnamon. , Bake, uncovered, 25-30 minutes longer or until tender.

This recipe is adapted from Kaarin's Recipe #146036. I made significant changes for my husband's needs as he is currently following the Atkins diet and I needed to replace some of the higher-carb ingredients, as well as tweaked a bit more for my tastes :) This went over VERY well at our home, I hope you like it! I think it would be yummy with butternut squash, too.

2 acorn squash, halved and seeded
1 tablespoon butter, melted
1 teaspoon brown sugar
1 teaspoon maple syrup
1/4 teaspoon garlic salt
1/4 teaspoon black pepper, freshly ground
1/2 lb pork sausage (sage, maple, hot, whatever you like best!)
1 tablespoon olive oil (optional)
1 medium onion, finely chopped
1 celery rib, finely chopped
1/2 cup pecans, chopped
1 apple, peeled, cored and chopped (I used Gala)
1/4 teaspoon ground sage
1/4 teaspoon ground cayenne pepper
1/2 teaspoon garlic salt
1/2 teaspoon black pepper, freshly ground
1/2 cup parmesan cheese, grated (and more to top stuffing)
1/2 cup almond meal
1 egg, beaten
2 tablespoons fresh parsley, chopped

Steps:

  • Preheat oven to 400 degrees F. Arrange squash cut side up in a 9x13 pan and pierce all over the flesh, without breaking the rind, using a fork or butter knife. Combine the butter, brown sugar, maple syrup, garlic salt and pepper; brush over cut sides and cavity of squash. Spoon the rest of the butter mixture evenly into the cavities of the squash.
  • Bake in a large roasting pan until squash is tender yet still holds its shape, about 1 hour.
  • To make the stuffing, cook sausage over medium-high heat in a large pan until light brown, breaking up into small pieces. Set pork aside in a large bowl. If there are not enough drippings, add 1 tablespoons olive oil to the pan. Add onion, celery and pecans; saute 5-7 minutes or until softened. Stir in apple, sage, cayenne, salt and pepper and saute 3-4 more minutes, or until apple is softened.
  • Add vegetable mixture to bowl with sausage and stir to combine. Pour any remaining butter mixture from squash cavities into the stuffing. Add parmesan and almond meal and stir again. Taste and season with sage, cayenne, salt or pepper if needed (depending on your sausage you may not want to add more seasoning).
  • Stir in the egg and parsley.
  • Fill the squash halves with stuffing; they should be slightly mounded. Sprinkle generously with parmesan. Put pan in oven, then pour 1 cup water carefully between the squash into the pan.
  • Return to oven and bake, covered, for 20 to 25 more minutes, or until the top of the stuffing is lightly browned.
  • Enjoy!

3 acorn squash, halved and seeded
2 tablespoons stick margarine
1 cup chopped onions
3 cups peeled, seeded, and chopped Granny Smith apples
½ cup golden raisins
2 tablespoons light brown sugar
1 teaspoon ground cinnamon
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Place the squash onto a baking sheet cut side down. Fill the baking sheet with 1/2 inch of water.
  • Bake the squash in the preheated oven for 40 minutes. Drain off any water remaining in the baking sheet.
  • While the squash is baking, melt the margarine in a large skillet over medium heat. Cook the onion and apple in the margarine until the onion has softened and turned translucent, 10 to 15 minutes. Scrape the mixture into a bowl to cool until the squash has finished baking.
  • Once the squash is done, stir the raisins, brown sugar, cinnamon, and Cheddar cheese into the apple mixture. Turn the squash cut side up on the baking sheet and fill with the apple mixture. Return the squash to the oven; bake until the filling is hot and the cheese has melted, about 15 minutes.
