Apple Pear Salted Caramel Scones image

Homemade scones made with fresh apples and pears are topped with made-from-scratch caramel sauce for an easy breakfast treat that's ready in only 35 minutes.

1 cup sugar
2 tablespoons light corn syrup
2 tablespoons water
1/4 teaspoon lemon juice
1/2 cup whipping cream
1/2 teaspoon vanilla
1 tablespoon unsalted butter, softened
3 1/4 cups Original Bisquick™ mix
1/4 cup sugar
1/4 cup cold unsalted butter, cut into small pieces
1 cup chopped peeled apple
1 cup chopped peeled pear
1/2 cup whipping cream
1 egg
Sea salt, for sprinkling

Steps:

  • To make Caramel Sauce: In large microwavable glass bowl, beat 1 cup sugar, the corn syrup, water and lemon juice. Microwave uncovered on High 5 to 7 minutes or until mixture turns a light golden color. Transfer to cooling rack for 5 minutes.
  • Meanwhile, in small microwavable bowl, microwave whipping cream uncovered on High about 30 seconds or until warm. Slowly pour on top of sauce in large bowl, beating constantly with whisk. Add vanilla and 1 tablespoon butter; beat to combine. Cool completely before using.
  • To make Scones: Heat oven to 425°F. Spray cookie sheet with cooking spray.
  • In large bowl, mix Bisquick mix and 1/4 cup sugar. Cut in 1/4 cup butter, using pastry blender, until mixture looks like coarse crumbs. Stir in chopped apple and pear.
  • In small bowl, beat whipping cream and egg with whisk. Stir cream mixture into Bisquick mixture with wooden spoon until dough forms.
  • Transfer dough to work surface lightly sprinkled with extra Bisquick mix. Knead until dough comes together (about 5 to 6 turns). Divide dough in half, then shape each half into 6-inch circle. Cut each circle into 6 wedges. Transfer wedges to cookie sheet.
  • Bake 11 to 15 minutes or until golden brown. Transfer to cooling rack to cool slightly. Drizzle tops with caramel sauce; sprinkle with sea salt. Serve warm.

2 tablespoons brown sugar
1-1/2 teaspoons baking powder
1/4 teaspoon salt

1/4 cup plus 2 tablespoons half-and-half cream
1 large egg yolk, room temperature
1-1/2 teaspoons vanilla extract
2/3 cup shredded peeled apple
1 tablespoon caramel ice cream topping

Steps:

  • In a small bowl, combine the flours, brown sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk the cream, egg yolk and vanilla; add to dry ingredients just until moistened. Stir in apple. Turn onto a floured surface; knead 10 times. , Pat into a 5-in. circle. Cut into 4 wedges. Separate wedges and place on an ungreased baking sheet. Bake at 400° for 15-20 minutes or until golden brown. Cool for 10 minutes. Drizzle with caramel topping.

1/4 teaspoon ground allspice
3 medium pears, peeled and sliced (about 3 cups)
2 medium tart apples, peeled and sliced (about 2 cups)
1/3 cup sugar-free caramel topping
OAT TOPPING:
1/4 cup quick-cooking oats
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
3 tablespoons cold reduced-fat butter
1/4 cup chopped walnuts
Reduced-fat vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. Mix sugar and allspice; toss with fruit. Place in an 8-in. square baking pan coated with cooking spray. Drizzle with caramel topping., Mix oats, brown sugar and flour. Cut in butter until crumbly; stir in walnuts. Sprinkle over filling., Bake until top is golden brown and fruit is tender, 40-45 minutes. Serve warm. If desired, top with ice cream.

It also means a galette cooks a bit faster and can be sliced while warm, a boon for the impatient. Don't be alarmed if your galette leaks as they most often do. The final product never seems to suffer.

1 cup/130 grams all-purpose flour, plus more for the work surface
1/2 cup/60 grams whole-wheat flour
2 tablespoons granulated sugar
3/4 teaspoon kosher salt
10 tablespoons/140 grams cold unsalted butter (1 1/4 sticks), cut into pieces
4 tablespoons/60 milliliters ice water
1 large egg, lightly beaten, for brushing
Sanding sugar, for sprinkling (optional)
1 to 2 crisp apples, such as Pink Lady (12 ounces/340 grams), peeled, cored and very thinly sliced
1 to 2 just ripe Bartlett pears (12 ounces/340 grams), cored and very thinly sliced
1/3 cup/75 grams packed dark brown sugar
1 tablespoon cornstarch
3/4 teaspoon freshly grated lemon zest
1/4 teaspoon ground cinnamon
2 tablespoons unsalted butter, cut into pieces
2 cups/480 milliliters apple cider
1/3 cup/75 grams packed dark brown sugar
2 tablespoons unsalted butter
1/2 teaspoon kosher salt
2 tablespoons heavy cream

Steps:

  • In the bowl of a food processor, combine flours, sugar and salt. Add the butter and pulse until the mixture resembles coarse sand with some larger pieces. Add the ice water and pulse just until the mixture is evenly moistened. Tip the mixture out onto a piece of plastic wrap. Use the edges of the plastic to pack the dough into a disc. Wrap and refrigerate for at least 1 hour and up to 3 days.
  • Heat the oven to 400 degrees. In a large bowl, toss together apples, pears, sugar, cornstarch, lemon zest and cinnamon. On a lightly floured piece of parchment, roll the dough out into a 12-inch circle. Top the dough with the prepared fruit in concentric circles leaving a 1 1/2-inch border. Lift and press the edges up over the fruit, folding as necessary. Using the parchment paper, transfer the galette to a rimmed baking sheet. Chill for 10 minutes.
  • Brush the border of the pastry with the beaten egg and sprinkle with sanding sugar, if using. Dot the fruit with the butter. Bake until the filling is tender and the crust is deep golden brown, about 45 minutes. Some of the juices may leak out, but that's O.K.
  • Meanwhile, make the caramel: Bring apple cider to a boil over medium-high heat in a small saucepan. Continue to cook the cider until it has reduced to 1 cup liquid, about 13 to 14 minutes. Then add brown sugar, butter, and salt and stir to combine. Reduce heat to maintain a simmer, and continue to cook the mixture, whisking often, until it has become syrupy and thickened slightly, about 13 to 15 minutes. Whisk in the cream and set aside to cool slightly. (The caramel will thicken as it cools.)
  • Remove tart from the oven, and let it cool slightly on the pan on a rack. Transfer the galette to a serving plate and drizzle with caramel. Serve warm or at room temperature with any remaining caramel.

In a large bowl combine 2 and 1/2 cups of the flour, salt, baking powder, baking soda, brown sugar, cinnamon, ginger, and nutmeg; mix well, making sure no large clumps of brown sugar remain.

Gently fold the apple chunks, and any remaining flour, into dough with a spatula until just combined.
  • Pour the shaggy mixture out onto a clean, floured work surface and shape the dough (you will have to work/knead it quite a bit to get it together) into an 8-inch circle. Cut the dough into 8 wedges and carefully transfer them to the prepared sheet. Bake for 22-24 minutes, or until cooked through and the tops are golden brown. Drizzle with salted caramel sauce, sprinkle with sea salt (if using), and serve at once!
