1 egg
2/3 cup apple juice or 2/3 cup milk
1/2 cup vegetable oil
1 teaspoon vanilla
1/4 cup sugar
2 cups flour
1/4 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup pecans or 1/2 cup walnuts, chopped
1 apple, chopped and peeled
1 tablespoon sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 400.
  • In a large bowl, beat egg with juice/milk, oil and vanilla.
  • Stir in flour, sugars, baking powder, and salt until moistened.
  • Stir in nuts and apple.
  • Fill large, paper-lined muffin cups with batter.
  • Mix the last amount of sugar and cinnamon and sprinkle on muffins.
  • Bake for 20 minutes.

A large fluffy muffin with a sweet buttery topping. My jumbo muffin tins hold 1 cup per muffin, so this is scaled for my tins.

½ cup butter
1 ¼ cups white sugar
1 teaspoon vanilla extract
½ teaspoon salt
2 eggs
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground cinnamon
½ cup milk
2 cups peeled, cored and sliced apples
½ cup walnuts
¼ cup white sugar
½ teaspoon ground cinnamon
3 tablespoons all-purpose flour
2 tablespoons butter, cubed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Coat top and insides of jumbo muffin pan with cooking spray, or line with muffin papers.
  • In a large bowl, cream together 1/2 cup butter, 1 1/4 cups sugar, vanilla, and salt until light and fluffy. Beat in eggs, one at time. Mix together the 1 3/4 cups of flour, baking powder, and 1/2 teaspoon cinnamon. Stir in the flour mixture alternately with the milk, mixing just until incorporated. Fold in apples and walnuts. Scoop into muffin cups to fill 3/4 full. Lightly sprinkle the tops with cinnamon crumble.
  • To make Cinnamon Crumble: In a small bowl, combine 1/4 cup white sugar, 1/2 teaspoon of cinnamon, 3 tablespoons all-purpose flour, and 2 tablespoons cubed butter. Mix together using a pastry blender, or two butter knives. The crumble topping should resemble small peas.
  • Bake in preheated oven for 30 minutes, or until tops are golden brown, and a toothpick inserted into the center comes out clean. If they are browning too quickly, cover with tin foil. Remove from pans, and cool on wire rack.

One of my family's favorite apple muffin recipe, the topping on these muffins is delicious!! This recipe makes about 30-32 mini muffins also.

2 cups flour
1/2 cup sugar, plus
2 tablespoons sugar (or to taste)
3 teaspoons baking powder (slightly heaping)
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup cold butter (no subs!)
1 large apple, peeled and diced
1/3 cup walnuts, chopped
1 egg
2/3 cup half-and-half cream or 2/3 cup milk
1 teaspoon cinnamon
2 tablespoons brown sugar

Steps:

  • Set oven to 400 degrees.
  • Line 16 muffin tins with paper liners.
  • In a large bowl, sift together flour, sugar, baking powder, 1/2 teaspoon cinnamon and salt.
  • Cut in the butter with a pastry blender.
  • Measure out 1/4 cup to add to topping ingredients; set aside.
  • Add in the chopped apples and nuts to the flour mixture.
  • In a small bowl, whisk together egg and half and half cream, then add to the flour mixture; stir JUST until combined, mixture will be lumpy.
  • Spoon into muffin tins about 2/3 full.
  • To the reserved 1/4 cup butter mixture add in 1 teaspoon cinnamon and 2 tablespoons brown sugar; toss to combine.
  • Sprinkle the topping mixture over each muffin.
  • Bake for 15-20 minutes.

1/3 cup brown sugar, packed
1 tablespoon all-purpose flour
1/2 teaspoon cinnamon, ground
1/8-1/4 teaspoon nutmeg, ground
2 cups apples, peeled, finely chopped
1/2 cup nuts, finely chopped
1 1/2 cups sugar
3/4 cup butter, softened
3 eggs
1 1/2 teaspoons vanilla extract
3 1/2 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
12 ounces sour cream
cinnamon sugar

Steps:

  • In a saucepan, melt butter.
  • Stir in brown sugar, flour, cinnamon and nutmeg until smooth.
  • Add apples; cook over medium-low heat for 10 minutes or until apples are tender, stirring frequently.
  • Remove from the heat; stir in nuts.
  • Set aside to cool.
  • In a mixing bowl, cream butter and sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in vanilla.
  • Combine the dry ingredients; add to the creamed mixture alternating with sour cr eam.
  • Spoon 1/4 cupfuls of batter into greased jumbo muffins cups.
  • Spoon apple mixture into the center of each (do not spread). Top with remaining batter.
  • Sprinkle with cinnamon-sugar.
  • Bake at 350° for 25-27 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.
  • Editors Note: If using regular-size muffin cups, fill cups half full with batter; add a rounded teaspoonful of apple mixture and remaining batter.
  • Bake for 16-18 minutes.

1 cup chopped peeled tart apple
1/2 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg
1/3 cup 2% milk
3 tablespoons canola oil
1 teaspoon vanilla extract
3 tablespoons chopped walnuts
3 tablespoons raisins

Steps:

  • In a small bowl, combine the apple and sugar; set aside. Combine the flour, baking powder, cinnamon and salt. In another bowl, whisk the egg, milk, oil and vanilla; stir into dry ingredients just until moistened. Fold in the apple mixture, walnuts and raisins. , Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. , Bake at 375° for 18-20 minutes or until a toothpick inserted in the center comes out clean.
