Tender apple slices are tucked beneath a sweet crunchy topping in my comforting dessert. For variety, replace the apples with your favorite fruit. -Barbara Schindler, Napoleon, Ohio

8 medium tart apples, peeled and sliced
1/4 cup lemon juice
1-1/2 teaspoons grated lemon zest
2-1/2 cups granola with fruit and nuts
1 cup sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted

Steps:

  • In a large bowl, toss the apples, lemon juice and zest. Transfer to a greased 3-qt. slow cooker. Combine the granola, sugar and cinnamon; sprinkle over apples. Drizzle with butter. , Cover and cook on low for 5-6 hours or until the apples are tender. Serve warm.

This is a nice and simple recipe, the most time consuming thing is preparing the apples. The topping is nice and crunchy. Different fruits, such as dried cranberries, raisins, rhubarb or any type of berry could be added for a unique taste.

6 medium granny smith apples or 6 medium other firm apples
1/2 cup packed brown sugar
1 teaspoon cinnamon
2 tablespoons lemon juice
3/4 cup butter, cubed and softened (or margarine)
3 -4 cups granola cereal (with or without raisins)

Steps:

  • Preheat oven to 400F.
  • Core, peel (or not) and slice apples.
  • In a large bowl, stir together apples, brown sugar, lemon juice and cinnamon.
  • Put in a 9"x9" casserole dish and dot with 1/3 of the butter.
  • Place granola in a plastic bag and crush with a rolling pin to break it up.
  • Place granola in a bowl and add the rest of the butter.
  • Using a fork, push the butter into the crushed granola, working it through.
  • Sprinkle the mixture over the apples.
  • Cover the dish with foil and bake for 40 to 45 minutes.
  • Remove foil and bake about 10 minutes longer or until the topping has browned.
  • Let stand for approximately 10 minutes then serve with vanilla ice cream.
  • Enjoy!

By toasting a bit of prepared granola with butter, we were able to keep this dish light and healthy while still providing a delicious crunchy topping for sweet spiced apples.

3 tablespoons unsalted butter
1 1/2 cups store-bought oat granola, such as Bear Naked Maple Pecan
2 tablespoons all-purpose flour
1 tablespoon plus 1/4 cup sugar
5 crisp apples, such as Fuji or Gala (about 2 1/2 pounds), peeled, cored and cut into 1/2-inch-thick slices
1/2 teaspoon pumpkin pie spice
1 tablespoon fresh lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a medium nonreactive and ovenproof skillet over medium heat. Add the granola, 1 tablespoon of the flour and 1 tablespoon sugar and toss until the sugar is dissolved and the granola is well coated. Transfer to a bowl. (Reserve the skillet.)
  • Pour the apples into the skillet; toss with the pumpkin pie spice, lemon juice and remaining 1/4 cup sugar. Cook, stirring occasionally, until the apples are juicy and slightly softened, 5 to 7 minutes. Stir in the remaining 1 tablespoon flour. Scatter the reserved granola mixture evenly over the top and transfer the skillet to the oven. Bake until the crisp is bubbling and the apples are tender, 35 to 40 minutes. Serve warm.

½ tsp sunflower oil
4 dessert apples, peeled, cored and thickly sliced
½ lemon, juiced
2 tbsp coconut sugar, plus a little extra to sprinkle
150g W.K. Kellogg Coconut, Cashew & Almond No Added Sugar Granola
2-3 tbsp cashew nut butter

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Heat the oil in a small ovenproof frying pan over a medium heat. Add the apples, lemon juice and 2 tbsp of the coconut sugar. Cook for about 5 mins, stirring until the apples soften, then turn up the heat and cook for another 2 mins to caramelise them
  • Remove the pan from the heat. Sprinkle with the granola, blob over the cashew nut butter and then sprinkle the remaining sugar over. Transfer to the oven and bake for 10-15 mins, until the granola topping turns golden
