Time 45m

Yield 4

Number Of Ingredients 12

4 apples (around 4½ cups)
1 tablespoon fresh ginger (minced)
½ teaspoon cinnamon
½ tablespoon balsamic vinegar
⅓ cup honey
4 half-pint canning jars or ramekins
¾ cup old fashioned oats
¼ cup slivered almonds
⅓ cup whole wheat flour
⅛ teaspoon kosher salt
¼ cup honey
2 tablespoons butter, melted or very soft

Steps:

  • Preheat oven to 375°F.
  • Peel, core, and slice 4 apples into small pieces. Peel and mince or grate the ginger. In a large saute pan, mix together the apples, ginger, cinnamon and kosher salt. Stir in the balsamic vinegar and honey. Saute until softened, about 15 minutes.
  • Meanwhile, in a medium bowl, stir together the oats, almonds, whole wheat flour, kosher salt, honey, and butter.
  • Divide the fruit mixture into 4 half-pint canning jars or ramekins. Spread the crumble over each jar, pressing down on the crumbs to ensure that none are above the mouth of the jar.
  • Place the jars on a baking sheet and bake 15 minutes until top is brown. Cool for 10 minutes and enjoy.

Yield 16

Number Of Ingredients 8

4 ½ cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon salt
10 cups water
3 tablespoons lemon juice
7 quarts peeled, cored and sliced apples

Steps:

  • Place a rack in the bottom of a large stock pot. Fill pot with hot water. Sterilize 7 1-quart canning jars, 7 lids, and 7 rings by placing on rack, jars upright. Bring water to a boil. Boil 10 minutes. Remove with a holder and allow jars to air-dry. Save water for processing apples.
  • Combine sugar, cornstarch, cinnamon, nutmeg, salt, and water in a large saucepan. Place over high heat and cook until thick and bubbly, stirring frequently. Remove from heat and stir in lemon juice.
  • Tightly pack apples into sterilized jars. Slowly pour syrup over apples, covering them completely. Gently tap jars on countertop to allow air bubbles to rise. Screw lids on jars.
  • Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Add more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Sealed jars can be stored for up to a year.

Yield 16

Number Of Ingredients 12

⅔ cup shortening
2 ⅔ cups white sugar
4 eggs
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ teaspoons salt
2 teaspoons baking soda
3 cups all-purpose flour
⅔ cup water
3 cups grated apple
⅔ cup raisins
⅔ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease the insides of 8 straight-sided wide-mouth pint canning jars. Sift together flour, baking soda, salt, nutmeg and cinnamon. Set aside.
  • Cream shortening and sugar until fluffy. Add eggs and beat in well. Add flour alternately with water and mix until smooth. Fold in apples, raisins and nuts.
  • Fill jars 1/2 full of batter, being careful to keep the rims clean. Wipe off any batter that gets on the rims. Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
  • As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
  • Jars should be eaten or kept in refrigerator for up to a week.

RHUBARB CRISP IN A JAR

Rhubarb Crisp in a Jar image

Tangy, ruby-pink rhubarb with buttery-crisp topping - baked and served right in its own individual-serving-size jar.

Provided by Kare for Kitchen Treaty

Time 50m

Number Of Ingredients 12

Ingredients
1 pound rhubarb (sliced 1/2 - 3/4-inch thick (about 4 cups diced))
1/2 cup granulated sugar
2 tablespoons plus 1/3 cup all-purpose flour (divided)
6 tablespoons unsalted butter (cut into pieces)
1/3 cup packed brown sugar
1/3 cup rolled oats
1 teaspoon cinnamon
Whipped cream
Equipment
6 half-pint (8-ounce canning jars with lids and screw-tops)
Rimmed cookie sheet (for holding the jars while baking)

Steps:

  • Preheat the oven to 375 degrees Fahrenheit.
  • Wash and dry six half-pint (8-ounce) canning jars.
  • In a medium bowl, toss the rhubarb with the granulated sugar and 2 tablespoons flour. Divide rhubarb mixture between the six jars - each jar will fill nearly to the top with rhubarb. There will be some flour and sugar left over in the mixing bowl. Sprinkle the remaining mixture over the tops of the rhubarb. Using a long, narrow spoon or butter knife, give the rhubarb a stir to incorporate the remaining flour/sugar mixture.
  • In a food processor, pulse the butter, 1/3 cup flour, brown sugar, rolled oats, and cinnamon until the butter is pea-sized. You can also do this in a medium bowl with a pastry blender, two butter knives, or even your hands.
  • Divide the flour/oat mixture between each jar of rhubarb, sprinkling evenly on top.
  • Place jars on a rimmed cookie sheet and bake for 30 minutes, or until the rhubarb is tender when you poke it with a fork, and the tops are crisp and golden.
  • Let cool for at least fifteen minutes, or until jar is cool to the touch. You can serve after that, topping with whipped cream or ice cream if desired, or cool completely on a baking rack, add lids and tops, and store in the refrigerator for up to 3 days before serving.
