Stir in eggs, vanilla extract, and apple juice until well mixed; pour the liquid mixture into the flour mixture about 1/3 cup at a time, stirring after each addition. Mix in the oats and chopped apple.

OATMEAL COOKIE APPLE CRISP
This is by far the best apple dessert I've ever tasted! The topping tastes just like an oatmeal cookie. It's the perfect combination of crunchy, chewy cookie and buttery soft apples. Great dessert for a party or family gathering (double the recipe in a 9x13-inch baking dish) or to make just for yourself on a chilly evening. Simply delicious.

APPLE CRISP COOKIES
In case you haven't seen any of my other recipes, I should tell you that I'm pretty much partial to cookies:) This recipe is pretty much a staple in my kitchen--it's easy, adaptable, really yummy, and everyone who drops by eats them by the handful. I have used other pie fillings as well, but the apple is just so cozy and fitting for the coming seasons;) If you get a chance to try these, I hope you enjoy them:)

APPLE CRISP COOKIES
Let's face it, apple crisp is great but you can't easily pack it for lunch or snack on it as easy as you may want. This was my inspiration for coming up with this cookie. If you like apple crisp you will equally like this cookie. I prefer a background nutmeg flavor, feel free to add more (or leave it out) for your taste.

I adopted this recipe from Recipezaar in August 2006. I haven't tried the recipe, but I hope to very soon. Here is what the original poster said about this recipe: "This treat relates to the all so famouse apple cobbler mom used to make."
