APPLE AND CINNAMON PULL-APART BREAD

Apple and Cinnamon Pull-Apart Bread image

Provided by Marilena Leavitt

Categories     Breakfast

Time 1h10m

Yield 8 servings

Number Of Ingredients 16

Dough
2½ cups all-purpose flour
¼ cup sugar
2¼ tsp. active dry yeast
½ tsp. salt
¼ cup whole milk
4 TBSP. butter
3 large eggs, lightly beaten, at room temperature
1 tsp. pure vanilla extract
Filling
½ cup brown sugar, packed
2 tsp.ground cinnamon
½ tsp. freshly grated nutmeg
4 TBSP. butter
1 small Golden Delicious apple, diced
--- ---- Caramel sauce for drizzling (if serving it as a simple dessert)

Steps:

  • In a large bowl (or the bowl of an electric mixer), whisk together the flour, sugar, yeast, and salt. Place the milk and butter in a small heavy-bottomed saucepan and cook over low heat until the butter just melts, 5 to 6 minutes. Remove from heat and let cool slightly.
  • Add the milk mixture to the flour mixture, then add the eggs and vanilla. With the mixer on low, beat until the flour mixture is moistened. Increase the speed to medium and mix until the dough is smooth, about 6 minutes. Scrape the dough down in the bowl to loosen it, cover with plastic wrap and a dishtowel. Set the bowl in a warm place and let the dough rise, for at least an hour and up to two hours.
  • While the dough is rising, line a 4½" by 8½" loaf pan with parchment paper, leaving a 3-inch overhang on the long sides. Butter the parchment and the sides of the pan. In a small bowl, combine the brown sugar, cinnamon, and nutmeg. In a small saucepan, melt the butter until brown.
  • Punch the dough down, then transfer to a lightly floured work surface and roll into a 12" by 18" rectangle. If the dough is sticking, sprinkle the underside with a bit more flour. Arrange the dough so the long side is in front of you. Brush the cooled melted butter over the dough, then sprinkle with the brown sugar mixture.
  • Core and cut the apple into ¼" pieces. Place the pieces on a paper towel and press gently with a second paper towel, so some of the moisture is absorbed. Cut the dough crosswise into 6 even strips. Sprinkle 1 strip with some of the apples, gently pressing them into the dough. Top with another strip of dough and more apples; repeat with the remaining strips of dough and apples. Cut the stack into 6 equal portions. Stand the prepared loaf pan on one of its short sides, and arrange the stacks with cut sides facing out (tucking in any fallen apples). Cover and let rise for 20 minutes.
  • Heat oven to 350°F. Bake loaf until deep golden brown, about 45-50 minutes. If the top starts to brown before the bread is ready, place a piece of aluminum foil loosely over it to protect it. To make sure the bread is cooked through, insert a cake taster and make sure it comes out dry. Let cool in the pan for 5 minutes, then transfer to a wire rack and let cool for 10 minutes more.
  • If desired, drizzle with some caramel sauce and serve.

PULL APART BRIOCHE CINNAMON ROLLS

Pull Apart Brioche Cinnamon Rolls image

Number Of Ingredients 17

1/4 cup Water
3 teaspoon Yeast
3 tablespoons Granulated Sugar
1/2 cup Whole Milk- warm
1.5 teaspoons Salt
3 Eggs
12 tablespoons Butter- melted
3.5 - 4 cups All Purpose Flour
1/2 -2 teaspoons Vanilla Bean Pod or Vanilla
6 tablespoons FOR FILLING: Unsalted Butter
1/2 cup Brown Sugar
3 tablespoons Ground Cinnamon
.2 tablespoons Sea Salt- pinch
2 ounces FROSTING- Cream Cheese - soft
1 cup Powdered Sugar
1-2 tablespoons Milk/Cream
1 teaspoon Vanilla

Steps:

  • Combine warm water, yeast and sugar in a large mixer bowl and mix on low speed until incorporated. Allow the mixture to sit about 3 minutes or until poofy. Add the warm eggnog, salt, eggs and melted butter and mix until combined. Gradually mix in the flour until the dough comes together. Remove the dough from the bowl and place on a lightly floured surface. Kneed into a smooth ball. Grease a large bowl and add the dough to the bowl. Cover the bowl with plastic wrap and let sit 1-2 hours or until the dough has doubled in size. To make the filling. Add the brown sugar, cinnamon, vanilla beans (if using) and salt to a bowl and mix well. Lightly dust a surface with flour. Once the dough has doubled in size, punch the dough dough and roll the dough into a rectangle (about 9x24 inches). Spread about 6 tablespoons of the butter (softened almost to a melted stage) evenly over the dough. Spread the brown sugar + cinnamon evenly over the butter and lightly push the brown sugar into the butter. Starting with the long edge closest to you, pull the edge up and over the filling and carefully roll the dough into a log, keeping it fairly tight as you go. When you reach the edge, pinch along the edge to seal. Place the log seam side down on a baking sheet lined with parchment paper. With a pair of sharp kitchen scissors cut diagonal slices almost to the bottom of the log. Arrange the cut sections so that they lean to alternating sides. Use your hand to gently push the dough together to help compress the log better. Alternately, you can bake the bread in two 9x5x3 bread pans to make two bread loafs. Cut and shape the dough as directed and then use your hands to push the dough together to almost the size of you bread pan. The dough will zigzag slightly. Using the parchment paper, lift the dough up and into the bread pan. Immediately cover the dough and place in the fridge overnight. Do not let the dough sit at room temperature long or it will start to get very big. The next morning, preheat the oven to 350 degrees F. Remove the dough from the fridge while the oven preheats and brush with 2 tablespoons melted butter. Bake the bread log for 20-25 minutes (the bread in the loaf pan needs about 45-50 minutes) or until lightly browned on top, do not over bake. While the bread is baking, whisk the softened cream cheese, powdered sugar and vanilla together until smooth. Add milk until your desired consistency is reached. Serve the bread hot with a drizzle of frosting. Total time: 12 hours
