APPLE CIDER POUND CAKE
This Apple Cider Pound Cake is fluffy, moist, and tastes like fall! The apple cider and spices add great flavor, and the cinnamon sugar gives a crunch. It's like an apple cider doughnut in cake form!

Steps:
- Preheat oven to 350°F. Line the bottom of a 9x5" loaf pan with parchment paper, then spray it with nonstick cooking spray (the kind with flour) or grease and flour it.
- Whisk flour, baking powder, salt , cinnamon, nutmeg, and cloves in a medium bowl. Set aside.
- Stir melted butter, sugar, and sour cream or Greek yogurt in a large bowl. Stir in eggs, one at a time, then stir in vanilla. Add apple cider and dry ingredients and stir just until moistened. Pour into prepared pan.
- Bake for 34-40 minutes, until a toothpick comes out clean. (Mine took 39 minutes.)
- While the cake is baking, make the glaze. Heat the sugar and apple cider in a small saucepan over medium heat until it boils. Boil for 1 minute, then remove from heat.
- Stir together topping ingredients, sugar and cinnamon, in a small bowl.
- Cool pound cake for 15 minutes in the pan. Use a knife to loosen around the edges, then carefully remove the cake and place it on a cooling rack set over a cookie sheet. Use a pastry brush to brush the apple cider glaze over the top of the cake. Immediately sprinkle with cinnamon sugar mixture. Let cool before eating.
- Store loosely covered at room temperature for up to 3 days or freeze for up to 1 month. I like to slice and freeze the slices in sandwich bags.

APPLE CIDER OATMEAL BREAD
This quick bread takes only a handful of ingredients to make. Just make sure you use sparkling apple cider, as regular apple cider will not work.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a loaf pan with nonstick spray.
- Combine self-rising flour, sparkling cider, oat flour, sugar, cinnamon, and baking powder in a large bowl; mix well. Pour batter into the prepared loaf pan. Mix sugar and cinnamon in a small bowl and sprinkle over the top.
- Reduce the oven temperature to 375 degrees F (190 degrees C). Bake the loaf in the preheated oven for 35 minutes.
- Remove the loaf and pour melted butter on top. Continue baking for 20 minutes. Cool before slicing.

APPLE CIDER LOAF
Based on a traditional beer bread recipe, I made this to use up some fresh apple cider before it "turned." Great results! If you don't have apple pie spice, just use a mixture of cinnamon, cloves, and nutmeg.

- 1. Preheat oven to 375°F. Grease bottom of 9x5-in loaf pan, and line bottom and long sides with parchment paper. Lightly grease the parchment paper. Drain the dried fruit well and pat dry with paper towels.
- 2. Beat together the cider, egg, Bisquick, brown sugar, and apple pie spice in a large mixing bowl until well blended. Stir in the dried fruit bits. Pour batter into prepared pan.
- 3. Bake 55 to 65 minutes in center of oven. Test with toothpick, which should come out clean. Cool 10 minutes in pan, then turn out onto wire rack to finish cooling. Remove parchment paper. Brush well with the melted butter while still warm.
- 4. Cool at least 15 minutes before slicing. Wrap leftovers and store in refrigerator.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
- Mix together flour, baking powder, soda, salt and nuts.
- In a large bowl, beat margarine, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples. Pour flour mixture into batter; stir just until moistened. Spread into prepared pan.

- Cream the butter and 1-1/4 cup of the sugar together in a large bowl. Add eggs and cream thoroughly.
