1/4 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup cold butter, cut into pieces
7 cups sliced peeled Granny Smith apples (about 7 medium)
1/3 cup apple cider
2 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon Gold Medal™ all-purpose flour
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 375°F. Spray 11x7-inch pan with cooking spray.
  • In food processor, place 1/2 cup flour, 1/4 cup granulated sugar, the brown sugar and butter. Cover; process with on-and-off pulses 4 times or until crumbly.
  • In large bowl, gently toss apples, apple cider, 2 tablespoons granulated sugar, the lemon juice, 1 tablespoon flour and the cinnamon. Spoon into pan; sprinkle crumb mixture over apple mixture.
  • Bake 40 minutes or until apples are tender and topping is golden brown. Serve warm.

8 baking apples, peeled and sliced
¾ cup apple cider
½ tablespoon lemon juice
¾ cup white sugar
¾ cup brown sugar
¾ cup graham cracker crumbs
½ cup all-purpose flour
15 individually wrapped caramels, unwrapped
1 cup brown sugar
1 cup quick oats
½ cup all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon pumpkin pie spice
½ cup butter, cubed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place apples in a 9x13-inch glass baking dish. Mix in apple cider and lemon juice.
  • Mix together sugar, brown sugar, graham cracker crumbs, and 1/2 cup flour in a bowl. Sprinkle sugar mixture over sliced apples and top with evenly spaced caramel squares.
  • Mix together brown sugar, oats, 1/2 cup flour, cinnamon, nutmeg, and pumpkin pie spice for the topping in a large bowl. Cut in butter cubes with 2 knives or pastry blender until the mixture resembles coarse crumbs. Sprinkle topping over apples in the baking dish.
  • Bake, uncovered, in the preheated oven until filling is bubbly and topping is golden brown, about 50 minutes. Let cool before serving.

¾ cup white sugar
1 tablespoon ground cinnamon
1 tablespoon ground allspice

Steps:

  • Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
  • Strain apple mixture though a fine mesh sieve. Discard solids. Drain cider again though a cheesecloth lined sieve. Refrigerate until cold.

3/4 cup firmly packed light brown sugar
1/4 cup all-purpose flour
1/4 cup apple cider
1 1/2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
2 pounds Granny Smith apples
2 pounds Honeycrisp apples
1 1/2 cups all-purpose flour (see Cook's Note)
1 cup old-fashioned rolled oats
2/3 cup firmly packed light brown sugar
1/2 cup pecans, coarsely chopped
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cubed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • For the filling: Whisk together the brown sugar, flour, apple cider, cinnamon, nutmeg and salt in a large bowl. Peel and core the apples and cut into chunks. Add the apples to the brown sugar mixture and toss to combine.
  • Transfer the apple mixture to the prepared baking dish in an even layer.
  • For the topping: Combine the flour, oats, brown sugar, pecans, cinnamon and salt in a medium bowl. Add the butter cubes and use your fingers to completely work the butter into the flour mixture. The mixture should hold its shape when squeezed.
  • Sprinkle the crumble topping over the filling, squeezing some of the mixture into small clumps. Bake until the filling is bubbly, the apples are tender and the topping is golden brown, about 1 hour.
  • Let sit for at least 45 minutes and serve slightly warm or at room temperature.

I don't know why anyone would make a pie instead of a crisp. A crisp, most often made with apples but accommodating of almost any fruit, is better textured, better flavored and easier to make. If you choose to use pears instead of apples, be aware that unripe pears are unlikely to become tender in the time it takes the topping to brown. You must begin with pears that have started to soften, or their texture will remain unpleasantly firm.

1/2 teaspoon cinnamon, or more to taste

1/2 cup walnuts or pecans

Steps:

  • Heat oven to 375 degrees. Toss fruit with half the cinnamon and 2 tablespoons sugar, and spread it in a lightly buttered 8-inch square or 9-inch round baking pan.
  • Combine remaining cinnamon and sugar in container of a food processor with butter, oats and nuts; pulse a few times, just until ingredients are combined. (Do not purée.) To mix ingredients by hand, soften butter slightly, toss together dry ingredients and work butter in with fingertips, a pastry blender or a fork.
  • Spread topping over apples, and bake about 40 minutes, until topping is browned and apples are tender. Serve hot, warm or at room temperature.

1 cup all-purpose flour
2/3 cup packed dark brown sugar
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch pieces and chilled
For the apple filling:
2 pounds firm, sweet apples (4 to 5 medium-large apples)
Up to 1/4 cup water
For serving (optional):
Vanilla ice cream or heavy cream
Equipment: 8-inch-square baking dish, preferably ceramic, glass, enamel-coated cast-iron, or stainless steel (avoid aluminum or uncoated cast-iron)

Steps:

  • Make the crisp topping:
  • In a medium bowl, whisk together the flour, brown sugar, cinnamon, and salt. Add the butter pieces and use your fingers to rub the mixture together until the butter is incorporated and the mixture resembles coarse crumbs. Cover with plastic wrap and place in the refrigerator to chill while you prepare the apple filling.
  • Make the apple filling:
  • Position a rack in the center of the oven and preheat to 375°F.
  • Peel the apples and cut them in half lengthwise. Scoop out the cores and discard. Cut the apple halves lengthwise into 1/2- to 3/4-inch-thick slices-there should be about 6 cups total. Bake until the topping is browned, the apples are tender when pierced with a knife, and the juices are bubbling, about 45 to 50 minutes. Transfer to a wire rack to cool for 10 minutes. Serve warm, with or without a scoop of vanilla ice cream or a drizzle of heavy cream. DO AHEAD: Apple crisp can be baked, cooled completely, covered, and kept at room temperature for 1 day. Reheat, uncovered, in a warm oven until heated through.
