Steps:
- Combine the oats, water, apples, cinnamon and nutmeg in a medium size saucepan. Bring to a boil over medium high heat, stirring occasionally.
- As soon as it boils, reduce heat to low and simmer for just a few minutes, until the oats are soft and the apples are tender. Remove from the heat and add brown sugar to taste.
- The sweeter the apples, the less brown sugar you will need. Scoop into serving bowls and top with butter and pecans if desired. Enjoy!

- Preheat oven to 375 degrees F (190 degrees C).
- Beat white sugar, brown sugar, eggs, butter, shortening, baking soda, cinnamon, vanilla extract, salt, baking powder, and nutmeg together in a bowl with an electric mixer on medium speed until smooth; stir in oats, apples, and flour until dough is evenly combined. Drop dough by rounded tablespoons, about 2 inches apart, onto baking sheets.
- Bake in the preheated oven until cookies are lightly browned, 9 to 11 minutes. Transfer cookies to a wire rack to cool, 3 to 5 minutes.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a loaf pan with nonstick spray.
- Combine self-rising flour, sparkling cider, oat flour, sugar, cinnamon, and baking powder in a large bowl; mix well. Pour batter into the prepared loaf pan. Mix sugar and cinnamon in a small bowl and sprinkle over the top.
- Reduce the oven temperature to 375 degrees F (190 degrees C). Bake the loaf in the preheated oven for 35 minutes.

- Coat the inside of a 4-5 quart slow cooker with cooking spray.
- Combine all the ingredients in the slow cooker and stir. I find it helpful to mix the brown sugar with the cinnamon; the cinnamon gets better incorporated and doesn't separate from the mix as much.
- Cook for 7-8 hours on low.
- Stir thoroughly before serving with a rubber spatula or wooden spoon.
- Serve immediately.
- Refrigerate leftovers; reheat with a splash of milk.
- *This recipe is easily cut in half for smaller slow-cookers. A time of 4 hours is optimal.
