BACON, APPLE AND BRIE PANINI



Bacon, Apple and Brie Panini image

I had a panini like this at a winery in the Napa Valley, so this is my best attempt to recreate it! These make an amazing lunch and would also be great for bridal showers, baby showers, etc... All you have to do is cut them up into bite-size pieces and insert a toothpick!

2 tablespoons butter, room temperature
2 slices bread
1 teaspoon Dijon mustard
3 slices Brie cheese
1 Fuji apple, thinly sliced
4 strips cooked bacon

Steps:

  • Heat a panini press to medium-high heat according to manufacturer's instructions.
  • Butter 1 side of each slice of bread. Flip 1 slice and spread mustard on top; add cheese. Place apple slices on the cheese. Lay bacon on top. Cover with the other slice of bread, buttered side-up.
  • Place sandwich into the panini press and press down. Grill until lightly browned, about 3 minutes per side.

1 package (17 ounces) refrigerated fully cooked beef roast au jus
SAUCE:
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 tablespoon minced jalapeno pepper
1 tablespoon minced cilantro
1 cup sour cream
SANDWICHES:
1 medium green pepper, cut into strips
1 onion, cut into thin wedges
1 tablespoon canola oil
3 tablespoons butter, softened
8 slices firm Italian or sourdough bread (1/2 inch thick)
1 medium ripe avocado, peeled and thinly sliced
8 to 12 slices deli-style pepper Jack cheese

Steps:

  • Prepare roast beef according to package directions; drain. Shred beef using 2 forks; set aside. Meanwhile, in a small bowl, combine sauce ingredients; set aside. , In a panini grill with lid, cook pepper and onion in oil until tender. Remove from pan and set aside. , Butter one side of each slice of bread. Place four slices, buttered side down, on work surface. Top each slice with 1-2 slices of cheese, one-quarter of each shredded beef, pepper and onions, avocado and about 2 tablespoons sauce. , Top with remaining bread, butter side up. Cover and cook over medium heat about 4 minutes or until golden brown, turning once. Serve warm. ,

12 thick-sliced bacon strips, cut in half
1 medium apple, thinly sliced
1 tablespoon ginger ale
1 teaspoon lemon juice
1/4 cup apple jelly
4 teaspoons minced fresh tarragon
12 slices sourdough bread
6 slices Havarti cheese
2 tablespoons Dijon mustard
3 tablespoons butter, softened

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. In a small bowl, toss apple with ginger ale and lemon juice; set aside., Place jelly in a small microwave-safe bowl; microwave on high for 20-30 seconds or until softened. Stir in tarragon., Spread jelly mixture over 6 bread slices. Top with cheese, apple and bacon. Spread mustard over remaining bread; place over bacon. Spread outsides of sandwiches with butter., Cook on a panini maker or indoor grill for 3-4 minutes or until bread is browned and cheese is melted.

8 slices whole grain bread
1/4 cup honey mustard
2 crisp apples, thinly sliced (I like Braeburn or Fuji or Gala)
8 ounces mild cheddar cheese, thinly sliced
cooking spray

Steps:

  • Preheat panini press on medium heat(or use 2 heavy skillets-one to put on top of the panini while cooking to press it).
  • Lightly spread honey mustard evenly over each slice of bread.
  • Layer apple slices and cheese over 4 slices of bread, using about ½ apple and 2 ounces of cheese for each sandwich. Top each with remaining bread slices. Lightly coat panini press with cooking spray(or coat skillet.
  • Grill each sandwich for 3 to 5 minutes or until cheese has melted and bread has toasted.
  • Remove from pan and allow to cool slightly before serving. Enjoy!
