These delicious treats are found in bakery shops throughout Austria and Bavaria and are enjoyed as part of a continental breakfast or brunch with a cup of coffee. They are best made with authentic german quark "Recipe #476124", but ricotta or even cream cheese can be substituted. Use canned apple pie filling or check out "Recipe #481442" for a homemade pie filling. This pastry can also be made without the apple pie filling, just increase the amount of cheese and sugar to taste.

1 cup apple pie filling
1 cup Quark or 1 cup ricotta cheese
1/2 reconstituted raisins (optional)
1 egg
1/4 cup sugar
1 teaspoon vanilla extract
1 (8 ounce) package puff pastry
2 tablespoons milk
confectioners' sugar, for dusting

Steps:

  • Thaw the puff pastry, unwrap and cut into 8 equal squares.
  • Cream the quark together with the sugar, vanilla extract, egg and drained raisins, if using, fold in the pie filling and stir to combine. If using ricotta, drain first, the mixture should not be runny.
  • Put a tablespoon of filling onto each pastry square, pick up the two opposing dough corners first, then the two other corners, press all four together in the center to make a sealed pocket.
  • Brush with milk and place on a prepared baking sheet, preheat oven to 3125F and bake until puffed up, golden brown and delicious.
  • Let cool slightly, dust with confectioners sugar.

6 lbs apples
2 cups sugar
1/4 cup flour
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
2 whole cloves
1 teaspoon grated lemon zest
2 tablespoons lemon juice
1 tablespoon ascorbic acid (optional) or 2 teaspoons lemon juice to treat the apples

Steps:

  • Wash, peel and slice apples. Treat to prevent darkening - either with a produce protector or 2 tsp of lemon juice.
  • Combine sugar, flour and spices. Rinse and drain apples; stir into sugar mixture.
  • Let stand until juices begin to flow, about 30 minutes. Stir in lemon juice and zest.
  • Cook over medium heat until mixture begins to thicken. Remove cloves, ladle pie filling into plastic freezer jars or containers, leaving 1/2 inch head space.
  • Cool at room temperature, not to exceed two hours. It is now ready to be used in a recipe or else, seal, label and freeze.

3 sweet apples -- peeled, cored and thinly sliced
2 tablespoons sugar
2 tablespoons flour
pinch of salt
1 teaspoon apple pie spice
1 tablespoon vanilla extract
1 (15 ounce) package prepared, unbaked pie crust, thawed
milk
1 egg, beaten

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a bowl, toss apple slices together with sugar, flour, salt, apple pie spice, and vanilla extract until evenly coated.
  • Lay pie dough flat on a lightly greased baking sheet. Pile apples on one side of dough, leaving a 1 inch border. Brush border and opposite half side of dough with milk. Fold dough over apples, being careful not to over-stuff or the dough will tear. Fold over edges and pinch together to seal. Cut several small slits in the top of the pocket with a sharp knife, then brush top with beaten egg.
  • Bake in the preheated oven for 40 minutes, or until flakey and golden brown. Serve warm, or at room temperature.

3 slices bacon, thick-sliced
1 sheet puff pastry, thawed
6 slices deli turkey, thin
mustard
3 slices swiss cheese

Steps:

  • Preheat oven to 400. Lightly butter or spray a cookie sheet.
  • Place a paper towel on a microwavable plate and lay the bacon slices in the center. Fold the excess paper towel over the bacon and microwave on high for two minutes or until bacon is crisp.
  • Unfold the puff pastry and cut it lengthwise into thirds. Cut each piece in half. Place three rectangles on the cookie sheet and place two turkey slices on each piece, leaving 1/4 inch border around the entire edge. Spread a little mustard over the turkey and top with the cheese. Cut the bacon slices in half. Arrange on top of the cheese. Cover with the remaining dough and press on all sides with a fork to seal the edges.
  • Bake the pockets for 15-18 minutes, or until golden brown.

12 frozen puff pastry shells, unthawed
1 cup heavy cream
1/4 cup whole milk
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 (16 ounce) package frozen chopped spinach, thawed and squeezed dry
1 1/4 cups Fontina cheese, grated
1/4 cup parmesan cheese, freshly grated
3 -5 green onions, finely chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a heavy large baking sheet with parchment paper.
  • Arrange the frozen pastry shells on the baking sheet and bake until they puff and become golden brown, about 20 minutes.
  • Using a small knife, cut out the center of the pastry shells.
  • Meanwhile, stir the cream, milk, salt, and pepper in a medium bowl.
  • Stir in the spinach, Fontina cheese, Parmesan, and green onions.

1 package (1/4 ounce) quick-rise yeast
1 tablespoon sugar
1/2 teaspoon salt
2/3 cup water
1/4 cup butter
FILLING:
4 cups thinly sliced peeled tart apples (about 2-3 medium)
1/3 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
TOPPING:
1/4 cup milk
4 teaspoons sugar

Steps:

  • In a large bowl, combine 1 cup flour, yeast, sugar and salt. In a saucepan, heat the water and butter to 120°-130°. Add to the dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes., Divide dough into four portions. Roll each portion into an 8-in. square. Cut into four 4-in. squares. Cut apple slices into thirds; toss with sugar, flour and cinnamon. Place 1/4 cup filling on each square; bring up the corners up over the filling and pinch to seal. Secure with a toothpick if needed. Place 3 in. apart on baking sheets coated with cooking spray. Cover and let rise in a warm place for 30 minutes., Brush with milk; sprinkle with sugar. Bake at 375° for 12-14 minutes or until golden brown. Remove to wire racks. Discard toothpicks.

¼ cup cream cheese, softened

⅓ cup raspberry
⅓ cup blueberry
1 tablespoon sugar
½ tablespoon lemon juice
½ teaspoon lemon zest

1 tablespoon brown sugar

Steps:

  • Brush the egg wash over the pastry around the edges and between each filling, then top with the remaining puff pastry sheet. Use your fingers to press the pastry down around each filling. Once tightly pressed, use a pizza cutter or knife to cut out each pocket.
  • Seal the outside edges with a fork. Poke the top of each pocket with a fork 3-4 times to ventilate. Brush the tops with egg wash.
  • Bake for 25 minutes, or until golden brown.
  • Make the glaze: In a medium bowl, combine the powdered sugar, milk, and vanilla. Stir until smooth and thick.
  • Remove the pockets from the oven and let cool for 5 minutes. Decorate with the glaze, then serve immediately, or wrap in wax paper and freeze for up to a week. Reheat in the toaster oven.

Steps:

  • Peel and dice apples.
  • Stir water and baking powder together in a small bowl.
  • Combine the baking powder-water mixture, butter, brown sugar, cinnamon, nutmeg, and salt in a medium-size skillet over medium-high heat. Whisk together until combined and mixture has become thick and bubbly.
  • Add apples and stir until they are fully coated and tender.
  • Lay pastry out and flatten with rolling pin so that it is about ¼-inch (6cm) thick throughout.
  • Preheat oven to 375°F (190°C).
  • Slice pastry into 12 rectangles.
  • Spoon apple mixture onto top 6 rectangles.

  • Using a knife, make 3 or 4 slits in each pie.
  • Bake for 20-25 minutes or until golden brown.
  • Fold a rectangle of parchment paper in half horizontally
  • Take the bottom corners and fold up ¾ of the way and then ⅔ of the way.
  • Flip the rectangle over and fold the left third into the center, taking the right third and folding it into the "wing" created by the middle fold.
  • Flip this pocket over and use to hold and travel with an apple pie.
