- Thaw spinach and squeeze out water. Soften cream cheese.
- In a mixing bowl, combine spinach, cream cheese and seasoning salt. Mix well and spoon into 2 quart casserole dish.
- Sprinkle with bread crumbs and bake at 350 degrees F (175 degree C) for 20 minutes.

- In a large bowl combine spinach, cream cheese, mushroom soup and 1/2 of the fried onions; mix well. Transfer mixture to a 2 quart casserole dish and sprinkle with remaining fried onions.
- Bake for 20 minutes, or until heated through.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Place cottage cheese, eggs, flour, sour cream, salt, and pepper in a food processor. Process until smooth. Mix spinach, cottage cheese mixture, and 2 cups of Cheddar cheese in a bowl, then spread into the prepared baking dish.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 45 minutes. Top with the remaining 2 cups of Cheddar cheese and continue baking until cheese has melted, about 10 minutes.

SPINACH CASSEROLE
Steps:
- Pre-heat oven to 350-degrees F.
- Wash spinach (trim stems if using fresh bunches), and drain well. In a food processor, chop spinach to about the size of confetti. Put in colander in workable amounts to squeeze out all possible liquid.
- Over medium heat, brown the ground beef and sausage, about 15 minutes. Add chopped celery, onion and garlic. Continue cooking until vegetables are translucent, about 5 minutes. Be sure to drain all grease.
- In a large mixing bowl, combine chopped spinach with cooked meat and mix thoroughly. Add 1/2 cup of broth. Season the mixture with cinnamon, cloves, allspice, salt, and pepper. Add drained olives. Spoon into 2 1/2 quart casserole dish and cover with lid. Bake for 1 to 1 1/2 hours.

- Stir in tomato sauce, onion, herbs, 1/2 teaspoon salt and pepper.
- Simmer uncovered for 10 minutes, stirring occasionally.

- Preheat oven to 350 degrees. Butter a shallow 2-quart casserole.
- Cook the spinach according to the package directions, drain well and place in a mixing bowl. Add 1/2 cup of melted butter, the cream cheese and lemon juice and blend well with a fork.
- Scatter the artichoke quarters evenly over the bottom of the greased casserole dish. Cover with the spinach mixture and smooth the top.
- Cover the top with the Ritz crumbs, drizzle with 1 tablespoon melted butter and bake on the middle rack until bubbly in the center and lightly browned on the top, about 25 minutes. Cool about 5 minutes and serve.

- Preheat oven to 375 degrees.
- Heat oil in Dutch oven, and saute onion, mushrooms and garlic until tender.
- In a small bowl, mix egg, flour and cottage cheese. Add to sauteed vegetables, along with the spinach. Stir in rice, pepper, thyme and 1 tablespoon Parmesan cheese.
- Turn into a greased 12-by-8-inch baking dish, and top with sunflower seeds and remaining Parmesan cheese.
- Bake for at least 30 minutes.

ANYTIME SPINACH CASSEROLE
A great meal for any time of the day. My daughter and I usually eat it for dinner and then have the leftovers for breakfast the next day.

- Thaw spinach in microwave or on stove top.
- In a bowl beat 6 eggs and add milk (optional). Mix in 1 cup of your favorite cheese, we like co jack, mozzarella or a blend of the two.
- Next place thawed and drained spinach in casserole dish and pour egg/cheese mixture over the top. Do a light stir and then sprinkle crushed crackers and top with pats of butter and a light layer of cheese.
- Place in 350°F oven until casserole is firm in the center. About 35-45 minutes depending on oven. Casserole will settle upon cooling.
- Flavor with salt and pepper, a dash of cayenne pepper or hot sauce. I have not tried variations of this dish because we like it as is but I think using pepper jack cheese or jack cheese with chilies would taste great. Yum!
