SHRIMP WITH GARLIC AND OLIVE OIL

Extra-virgin olive oil, for cooking
4 cloves garlic, thinly sliced
2 to 4 dried red chiles, broken by hand
1 pound extra-large or jumbo shrimp
1 tablespoon lemon zest plus 1 tablespoon lemon juice
1/4 cup anise liqueur, such as Pernod
Kosher salt
Crusty bread, for serving

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Coat the bottom with 1/4 inch olive oil. Add the garlic and crushed chiles to the oil and cook until the garlic starts to sizzle and is very aromatic, then add the shrimp. Cook until the shrimp turns pink, 1 to 2 minutes. Add the lemon zest and juice, then add the anise liqueur and carefully ignite. Cook until the flame subsides. Season with salt and serve with crusty bread to sop up the delicious olive oil!

TAGLIATELLE WITH SHRIMP AND SQUID



Tagliatelle with Shrimp and Squid image

1 pound all-purpose flour
4 large eggs plus 1 yolk
1/4 cup olive oil
1 to 2 tablespoons water, more if needed
1 teaspoon kosher salt
1 fennel bulb, cored and julienned
1/2 red onion, thinly sliced
2 tablespoons olive oil
2 cloves garlic, smashed and finely chopped
1/2 zucchini, diced
1 plum tomato, diced
Kosher salt
Pinch crushed red pepper
1/2 cup white wine
1/4 cup chicken stock
4 jumbo shrimp (21/25 count), deveined and halved lengthwise
2 squid, cleaned and sliced
3 cups arugula
2 tablespoons olive oil
Kosher salt
Grated Parmesan, for serving
Fennel fronds, for garnish

Steps:

  • For the pasta dough: Put the flour on a clean dry work surface. Make a hole (this is also called a well) in the center of the flour pile that is about 8 inches wide (bigger is definitely better here). Crack the eggs and yolk into the hole, and add the olive oil, salt and water.
  • Using a fork, beat the eggs together with the olive oil, water and salt, and then begin to incorporate the flour into the egg mixture. (Be careful not to break the sides of the well, or the egg mixture will run all over your work surface and you'll have a big mess! Also, don't worry about lumps.) When enough flour has been incorporated into the egg mixture that it won't run all over the place, begin to use your hands to get everything well combined. If the mixture is tight and dry, wet your hands and begin kneading with wet hands. When the mixture has really come together into a homogeneous mixture, THEN you can start kneading.
  • When kneading, it is VERY important to put your body weight into it--get on top of the dough to really stretch, not tear, it. Using the heels of your palms, roll the dough to create a smooooooth, supple dough. When done, the dough should look VERY smooth and feel almost velvety. Kneading will usually take from 8 to 10 minutes for an experienced kneader or 10 to 15 minutes for an inexperienced kneader. This is where the perfect, toothsome texture of your pasta is formed. Get in there and have fun!
  • When the pasta has been kneaded to the perfect consistency, wrap it in plastic and let rest for at least 1 hour.
  • For the shrimp and squid sauce: In a large pan, saute the fennel and onion in the oil until translucent, 2 to 3 minutes. Add the garlic, zucchini, tomato and some salt, and continue to cook, stirring occasionally, another few minutes. Stir in the red pepper. Add the wine, bring to a boil, and cook until reduced by half, about 3 minutes.
  • Add the chicken stock, bring to a boil, and simmer until slightly thickened. Add the shrimp and squid. Cook until just done, being careful not to overcook the shrimp and squid or else they'll be rubbery.
  • Take off the heat, set aside and keep warm.
  • For the arugula salad: Toss the arugula in the olive oil; season with salt.
  • To finish the pasta: Bring a pot of salted water to a boil. Roll out the pasta very thin with a pasta maker, following the manufacturer's instructions. Then use the machine to cut the pasta into tagliatelle.
  • Cook a quarter of the pasta in boiling water for 4 to 5 minutes (save the remainder for another use).
  • To serve: Divide the tagliatelle among 4 plates and divide the sauce over it, making sure each plate gets some pieces of shrimp and squid. Top with the arugula salad and some grated Parmesan, and garnish with fennel fronds.

2 garlic cloves, thinly sliced
2 dried red chiles, broken
Extra-virgin olive oil
1/2 pound rock shrimp
Kosher salt

Steps:

  • Special equipment: 2 (4-inch) flameproof ramekins such as terra cotta cazuelas
  • *This makes a really small amount of shrimp. This recipe can be done in batches or a larger amount can be done in a saute pan.
  • Add the garlic and chile to the ramekins and cover with oil to about 1/4-inch deep. Bring the ramekins to a high heat. (This can be done on the grill.) Season the shrimp with salt.
  • When the garlic starts to sizzle and is very aromatic, add the shrimp. Cook until the shrimp turn pink, about 1 to 2 minutes. Sprinkle in a couple drops of water before serving to get the oil to really sizzle. Serve with bread to sop up the delicious olive oil!
  • Sooooooo yummy!

BEIGNETS



Beignets image

Number Of Ingredients 11

3/4 cup lukewarm water
1(.25-ounce) packet active dry yeast
1/2 cup, plus 1 teaspoon sugar
4 cups all-purpose flour
Pinch salt
2 egg yolks
1/2 cup evaporated milk
3 tablespoons melted butter
1 teaspoon vanilla extract
4 to 6 cups peanut or other neutrally-flavored oil, for frying
Powdered sugar, for dusting

Steps:

  • In a measuring cup combine the water, yeast, and 1 teaspoon sugar. Let sit until the yeast gets frothy and smells yeasty.
  • In the bowl of an electric mixer, combine the flour, remaining 1/2 cup sugar, and pinch salt.
  • In another bowl, combine the egg yolks, evaporated milk, melted butter, and vanilla. Add the yeast mixture and whisk to combine well.
  • Add the wet mixture to the dry ingredients and place on the stand mixer fitted with a dough hook. Once the ingredients are well combined, knead 5 minutes. Remove the bowl from the mixer, cover, and place in a warm area for 2 hours, or until the dough has doubled in size.
  • In a wide, deep pot, heat the oil to 350 degrees F.
  • Remove the dough from the bowl and lightly knead on a floured work surface. Cut the dough into 2-inch squares.
  • Set up a paper towel-lined sheet tray to land the beignets when they come out of the oil.
  • Working in batches so as to not crowd the oil, fry the dough squares until they are puffy and golden brown. Remove from the oil, make a pit stop on the paper towels and immediately dust with powdered sugar.
  • Serve hot!!!!!

CHEF JOHN'S SAUSAGE & SHRIMP JAMBALAYA

While true jambalaya is really more of a thicker rice stew than a soup, it's one of those dishes that more stock can be added to easily make it into a soup recipe. Serve garnished with green onion.

8 ounces andouille sausage, cut into 1/4-inch slices
2 tablespoons ground paprika
1 tablespoon ground cumin
½ teaspoon cayenne pepper
½ cup diced tomatoes
1 large green bell pepper, diced
2 stalks celery, sliced 1/4 inch thick
4 green onions, thinly sliced
1 teaspoon salt
1 bay leaf
1 cup uncooked brown rice
3 cups chicken stock
1 pound large shrimp, peeled and deveined
salt and ground black pepper to taste

Steps:

  • Place butter and sausage in a large stockpot over medium heat; cook and stir for 5-6 minutes until sausage begins to brown.
  • Stir in paprika, cumin and cayenne; cook for 1 minute.
  • Stir tomatoes, celery, green pepper, green onions, salt, and bay leaf into sausage mixture.
  • Add brown rice and stir to combine. Stir in chicken stock and turn heat to low. Cover and cook for until rice is just tender, about 45 minutes.
  • Stir in shrimp, replace lid and cook for 5 minutes. Season with salt and black pepper.

The chef Paul Prudhomme's unassailably authentic seafood jambalaya requires two hours of cooking time, apart from the preparation. This version stands up reasonably well, and cuts down the preparation and cooking time to just under 60 minutes.

2 pounds shrimp in the shell
2 tablespoons corn, peanut or vegetable oil
2 tablespoons flour
1 cup finely chopped onion
1 cup finely chopped green onions or scallions
1 cup finely chopped green pepper
1 cup finely chopped celery
1 tablespoon finely minced garlic
1 cup cooked ham cut into 1/2-inch cubes
2 cups crushed imported tomatoes
1/2 teaspoon dried thyme
1 teaspoon dried crushed oregano
1 cup uncooked long-grain rice, optional, or serve the dish with Creole rice (see recipe)
Salt to taste if desired
Freshly ground pepper to taste
5 cups shrimp broth (see recipe) or water
1/2 cup finely chopped green onion or scallions, optional, for garnish

Steps:

  • Peel and devein the shrimp. The shells may be used to make a broth (see recipe).
  • Heat the oil in a kettle or large saucepan with a heavy bottom over medium heat. Add the flour, and cook, stirring constantly, until lightly browned. Do not burn.
  • Add the onion, green onions, green pepper, celery and garlic. Cook, stirring, until wilted. Add ham and stir. Add the tomatoes, thyme and oregano, and bring to a boil. Stir in the uncooked rice, if desired. Add salt, pepper and shrimp broth. Reduce heat to medium-low, and simmer, uncovered, about 25 minutes; add the shrimp and stir. Cook about 10 minutes longer or until it has thickened, but is still slightly soupy. Serve in bowls with chopped green onions on the side as an optional garnish.
