Another "impossible" pie made with Bisquick. No crust - just mix and bake. From Robin Miller's friend, Anita, and "Robin to the Rescue."

1 1/3 cups sugar
1 cup buttermilk
1/2 cup Bisquick
1/3 cup butter, melted
1 teaspoon vanilla extract
3 large eggs
confectioners' sugar (to sprinkle on top)

Steps:

  • Preheat the oven to 350 degrees.
  • Coat a 9-inch pie plate with cooking spray.
  • Combine the sugar, buttermilk, Bisquick, melted butter, vanilla, and eggs in a blender and process until smooth.
  • Pour into the prepared pie plate and bake until browned and still a little jiggly (the pie will set as it cooks), 30 to 40 minutes.
  • Let cool for 10 minutes before slicing into wedges. Sprinkle with a little confectioner's sugar.

1 1/2 cups granulated sugar
1 tablespoon flour
1 tablespoon grated lemon zest
4 large eggs
1 cup buttermilk
1 stick butter, melted
1 unbaked 10-inch basic pie crust shell

Steps:

  • Preheat the oven to 350 degrees F. In a large mixing bowl, combine the sugar, flour, and lemon zest. Whisk in the eggs, 1at a time. Stir in the buttermilk and melted butter. Pour the buttermilk mixture into the pie shell and bake until the top is lightly browned and the center sets, about 25 minutes. Remove from the oven and cool to room temperature. Slice the pie into individual servings. Garnish with the whipped cream and mint.

  • Heat oven to 350. Grease pie plate. Beat all ingredients until smooth, 30 seconds in blender on high or 1 minute w/ hand blender. Pour into pie plate. Bake for 40-45 minutes. Cool 5 minutes. ENJOY!

I have had this recipe since my son was a child .I think I first got it out of a Bisquick recipe booklet ... The original recipe calls for 1/2 cup of sugar ,but I cut it down to 1/4 cup ..I think it is to sweet at 1/2 cup ,but it is a matter of taste ..

1 tsp vanilla extract
3 large eggs -room temp

Steps:

  • 1. Heat oven to 350 degrees.Grease a 9x1 1/4 inch pie plate .
  • 2. Beat all ingredients until smooth .in a blender on high30 seconds or one minute with hand mixer.Pour into pie plate .
  • 3. Bake at 350 until knife inserted in center comes out clean ,about 30 to 35 minutes .Cool 5 to 10 minutes before cutting .Serve with fresh fruit if desired ..
