ANISE CUTOUT COOKIES

Steps:
- In a bowl, cream shortening and sugar until fluffy; add eggs and aniseed. Combine flour, baking powder and salt; add to the creamed mixture. Add apple juice and mix well. , On a floured surface, knead until well blended, about 4-5 minutes. Roll dough to 1/2-in. thickness; cut into 2-in. shapes. Place on greased baking sheets. , Bake at 375° for 12-16 minutes or until lightly browned. Combine sugar and cinnamon; roll cookies in the mixture while still warm. Cool on wire racks.

GLAZED ANISE COOKIES
Years ago, my German neighbor made similar cookies and hung them on her Christmas tree for the neighbor kids to eat. I finally came up with my own recipe and have been very pleased with the results.

- In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in aniseed and extract. Combine the flour, baking powder and salt; gradually add to the creamed mixture. Cover and refrigerate for 1 hour or until easy to handle. , On a lightly floured surface, roll out to 1/4-in. thickness. Cut with floured 2-1/2-in. cookie cutters. Place 1 in. apart on ungreased baking sheets.Bake 375° for 10-12 minutes or until lightly browned. Remove to wire racks to cool. , In a large heavy saucepan, combine the sugar, water and cream of tartar; bring to a boil over low heat. Cook and stir until a candy thermometer reads 226° (thread stage). Cool to 110° (do not stir). Stir in the extract, food coloring if desired and enough confectioners' sugar to achieve spreading consistency. Spread over cookies.

NANA'S ANISE CUTOUT COOKIES
These cookies have been made in my family for 4 generations now and I must say that they are a family favorite above all others. If you love the flavor of anise I think you will surely Love these cookies.

Steps:
- 1. Thoroughly cream butter,sugar vanilla and anise. Add eggs; beat til light and fluffy
- 2. Stir in milk
- 3. Gradually add dry ingredients(I use my kitchen aid stand mixer) til blended. Divide dough in half and chill several hours
- 4. When ready to bake; On lightly floured surface, roll to 1/4 in thickness. Cut into your favorite shapes. Bake on greased cookie sheet spaced 1 in. apart for 9-11 minutes.(depending on how thick or thin you roll them) @ 375 degrees. Cool slightly, remove from pan to rack to decorate. Frost as you wish..............Yields 3-4 dozen depending on thickness and size of cutter
- 5. Frost with your favorite Buttercream frosting Hint: I add anise to my frosting to compliment the flavor in the cookie...Nana always did. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the shortening and sugar until smooth. Beat in the eggs one at a time, then stir in the anise extract. Combine the flour, baking powder and salt; stir into the creamed mixture alternately with the milk. Mix until just blended. Over-mixing will result in tough cookies.
- On a lightly floured surface, roll out the dough to a thickness of 1/4 inch. Cut into desired shapes with cookie cutters. Place cookies at least one inch apart onto the prepared cookie sheets.
- Bake in the preheated oven for about 12 to 15 minutes or until firm. Cookie will not turn a golden brown. If they do, they're over-done. Turn out onto rack to cool. Wait until cool if frosting.
