I LOVE kettle corn, and after much experimentation, I have created the perfect recipe for home-made kettle corn by using my favorite popcorn-making device--the Stir Crazy Popcorn Popper.

Number Of Ingredients 4

1/2 cup popcorn
1/2 cup sugar
1/2 cup vegetable oil
salt

Steps:

  • Make sure your Stir Crazy Popcorn Popper is turned off.
  • Using your Stir Crazy Popcorn Popper, combine ingredients on the non-stick surface of the machine.
  • Cover the Stir Crazy Popcorn Popper with the bowl provided by Stir Crazy.
  • Turn on Stir Crazy Popcorn Popper.
  • Watch the popcorn pop! It's fun!
  • When only 3 seconds remain in between pops, flip Stir Crazy Popcorn Popper over to yield a big bowl of kettle corn.
  • Salt to your liking!

Best Kettle Corn Ever. The secret is to bake it! Delicious kettle corn in 15 minutes. Outrageously easy and clean up is a snap.

Number Of Ingredients 6

8-10 cups popcorn ((2 bags microwave popcorn))
1/3 cup corn syrup ((Karo))
1/2 cup sugar
1 T . water
2 T . sugar ((for sprinkling))
coarse salt to taste ((opt))

Steps:

  • Heat oven to 350 degrees.
  • Line with foil and grease or vegetable spray an 18" x 9" pan cake pan.
  • Spread popcorn on foil in pan.
  • In a deep 16-24 oz micro-proof cup or bowl, stir together corn syrup, sugar and water.
  • Heat sugar mixture in microwave on high for 1 minute.
  • Gently Stir.
  • Microwave again 1 minute and stir.
  • Microwave 30 seconds more till syrup is foamy. Syrup will be extremely hot. Use caution in handling.
  • Quickly and thinly drizzle syrup evenly over popcorn.
  • Sprinkle with 2 T. additional sugar.
  • Sprinkle with coarse salt if desired.
  • Bake in oven for 5 minutes.
  • Stir with large spoon and bake 3- 5 more minutes. Do not allow popcorn to scorch.
  • Remove from oven and flip onto wax paper or baking parchment.
  • Cool completely and break apart before serving. 6 servings.

I decided to try my hand at Kettle corn, I love kettle corn but it's expensive. This is going to be a once a week treat I think. I am going to be tweaking the recipe until it's just right. I think it needs MORE corn.

Unpopped Popcorn 3/4 cup
Sugar 2/3 cup
Olive Oil 2 1/2 Tablespoon

Steps:

  • dump all ingredients in stircrazy popcorn popper. Put on lid. Keep an eye on it until the corn is done popping. Less than five seconds between pops is what I go by. Flip popper upside down and unplug. Remove base. Dump popcorn into a stainless steal bowl, it will melt plastic. Keep kids away it's HOT!!! Break up big chunks. Pour half a cup of hot water onto base while it is unplugged to help get everything cleaned up. Clean as soon as you are done eating your kettle corn.

This will be an instant family hit; a bowl of the pop corn is so good it won't last a whole movie.

¼ cup corn oil
¼ cup unpopped popcorn
2 tablespoons white sugar
1 ½ teaspoons brown sugar
salt to taste

Steps:

  • Heat the corn oil in a large pot over medium heat. Stir in the corn kernels once hot. When the first couple of kernels pop, stir in the white and brown sugars. Cover the pot with a lid, and agitate the pot in a circular motion on the stove. Allow the corn to pop, agitating constantly, until the rate has slowed down to one pop every two or three seconds. Remove the pot from the stove, and shake the pot until the popping stops. Pour into a large bowl, and allow to cool to room temperature. Break apart the large clumps of popcorn by hand, and season with salt to taste.

¼ cup vegetable oil
¼ cup white sugar
½ cup unpopped popcorn kernels

Steps:

  • Heat the vegetable oil in a large pot over medium heat. Once hot, stir in the sugar and popcorn. Cover, and shake the pot constantly to keep the sugar from burning. Once the popping has slowed to once every 2 to 3 seconds, remove the pot from the heat and continue to shake for a few minutes until the popping has stopped. Pour into a large bowl, and allow to cool, stirring occasionally to break up large clumps.

  • Place a large stock pot on the stove top. Set heat to medium-high. Add oil. While your oil is heating (it won’t take long), measure out your popcorn into a small bowl. Add sugar to the kernels.
  • Wait until you see your oil smoke. That’s your cue! Pour popcorn kernels and sugar into the pot.
  • Immediately stir using a wooden spoon or rubber spatula, scraping sugar from bottom of pan. This step should only take about 10 seconds. Cover pot with lid. You will need to shake the pot with your hands and you’ll want to make sure the lid stays on, so I get a dish towel and drape it over the top.
  • Hold the pot by the handles in a way that you’re securing the lid on as well. Shake the pan side to side in all directions and up and down a few times. Do this every 20 seconds or so. It will keep the sugar from burning on the bottom and help the kernels to be evenly coated.
