Angel Hair Pasta with Shrimp and Basil image

¼ cup olive oil, divided
1 (8 ounce) package angel hair pasta
1 teaspoon chopped garlic
1 pound large shrimp - peeled and deveined
2 (28 ounce) cans Italian-style diced tomatoes, drained
½ cup dry white wine
¼ cup chopped parsley
3 tablespoons chopped fresh basil
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil, and add 1 tablespoon oil. Cook pasta in boiling water until al dente. Place pasta in a colander, and give it a quick rinse with cold water.
  • Heat remaining olive oil in a 10 inch skillet over medium heat. Cook garlic, stirring constantly, until the garlic is tender, about 1 minute. Do not let the garlic burn. Add shrimp, and cook for 3 to 5 minutes. Remove shrimp from the skillet, and set aside.
  • Stir tomatoes, wine, parsley, and basil into the skillet. Continue cooking, stirring occasionally, until liquid is reduced by half, 8 to 12 minutes. Add shrimp, and continue cooking until the shrimp are heated through, about 2 to 3 minutes. Serve the shrimp mixture over the pasta. Sprinkle with Parmesan cheese.

1 lb angel hair pasta
2 tablespoons olive oil
2 tablespoons butter
1 1/2 lbs shrimp, peeled,tails left on,deveined,and rinsed (35 to 40 per lb.)
3 tablespoons minced garlic
3/4 teaspoon hot chili flakes
1/4 teaspoon fresh ground pepper
salt
1 cup dry white wine
2 cups fresh basil leaves, slivered
1/2 cup toasted pine nuts

Steps:

  • In a 6- to 8-quart pan over high heat, bring about 4 quarts water to a boil; add angel hair and cook, stirring occasionally, just until tender to bite, 3 to 4 minutes.
  • Drain pasta, reserving about 1/3 cup cooking liquid; return pasta to pan.
  • Meanwhile, large frying pan over medium-high heat, melt butter with olive oil.
  • Add shrimp, garlic, chili flakes, pepper, salt; stir for 2 minutes.
  • Add wine; stir often until shrimp are opaque.
  • Cook 2 more minutes.
  • Stir in basil.
  • Pour shrimp mixture into pan with cooked pasta; mix gently.
  • If mixture is too dry, add reserved pasta-cooking liquid.
  • Divide evenly among four wide, shallow bowls.
  • Add salt to taste.
  • Top with pine nuts.
  • And Grated cheese.

1 lb peeled, deveined, tailless shrimp
1/2 c butter or margarine
1 tsp black pepper
1 tsp salt
1/8 c pine nuts (OPTIONAL, if you prefer without, skip this ingredient and step 2)
1 lb cooked vermicelli or angel hair pasta, well salted
1 c extra virgin olive oil
6 clove garlic
1 Tbsp fresh or dried parsley
1/4 c parmesan cheese

Steps:

  • 1. Melt butter in a skillet on med. high heat. Add shrimp, salt and pepper and cook until done, taking care not to over cook. Set aside.
  • 2. Drop pine nuts in skillet on med. heat. Occasionally toss them. When one or more sides turn from pale to light golden brown and they look toasted, remove from heat.
  • 3. Heat olive oil over medium heat. Add garlic and cook until garlic turns light golden color.
  • 4. Add shrimp, pine nuts and parsley to pasta. Slowly stir in olive oil.
  • 5. Toss thoroughly and serve with a dusting of parmesan cheese or add cheese to serving dish and let others pass the bowl and serve themselves!

1-1/2 pounds uncooked medium shrimp, peeled and deveined
3/4 cup crumbled feta cheese
1/2 cup shredded Swiss cheese
1 jar (16 ounces) chunky salsa
1/2 cup shredded Monterey Jack cheese
3/4 cup minced fresh parsley
1 teaspoon dried basil
1 teaspoon dried oregano
2 large eggs
1 cup half-and-half cream
1 cup plain yogurt
Chopped fresh parsley, optional

Steps:

  • In a greased 13x9-in. baking dish, layer half the pasta, shrimp, feta cheese, Swiss cheese and salsa. Repeat layers. Sprinkle with the Monterey Jack cheese, parsley, basil and oregano., In a small bowl, whisk the eggs, cream and yogurt; pour over casserole. Bake, uncovered, at 350° until a thermometer reads 160°, 25-30 minutes. Let stand for 5 minutes before serving. If desired, top with chopped parsley.

This was inspired by one of my favorite restaurant pasta dishes. I keep the lemon separate until the end due to a picky family member, but you could add it earlier if everyone likes lemon. Do not use pre-cooked shrimp and don't overcook the shrimp.

½ (16 ounce) package angel hair pasta
¼ cup butter, divided
1 (16 ounce) package frozen peeled-and-deveined shrimp
½ cup diced onion
2 teaspoons minced garlic
¾ cup diced tomatoes
1 bunch fresh asparagus spears, trimmed and cut into 1-inch pieces
salt to taste
¼ cup grated Parmesan cheese, or to taste
4 wedges lemon

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes. Drain, reserving 1 cup of the water.
  • Melt 1 tablespoon in a large skillet over high heat. Saute shrimp in hot butter until no longer pink, about 5 minutes. Remove shrimp with a slotted spoon to a bowl, retaining liquid in the skillet.
  • Reduce heat to medium-high. Cook onion and garlic in the retained liquid in the skillet until the onions are translucent 5 to 7 minutes. Stir tomatoes into the onion mixture; cook and stir until the tomatoes soften, about 5 minutes.
  • Stir asparagus into the tomato mixture and add the reserved water from cooking the pasta; bring liquid to a simmer and cook until the asparagus is tender, about 5 minutes. Add the shrimp and angel hair pasta; stir. Cook until the shrimp is completely opaque in the middle, 2 to 3 minutes more. Season with salt and garnish with Parmesan cheese and lemon wedges.

3/4 teaspoon minced garlic

2 tablespoons fresh lemon juice

1/4 cup minced flat-leafed parsley leaves

Steps:

  • Bring a large saucepan of salted water to a boil for pasta.
  • In a small saucepan cook garlic in oil over moderately low heat, stirring, until softened and transfer mixture to a large bowl. Add pine nuts, crushing them lightly with the back of a fork, lemon juice, zest, parsley, and salt and pepper to taste.
  • Cook pasta in boiling water until al dente and, reserving 2 tablespoons of the cooking water, drain well. Add pasta with the reserved cooking water to bowl and toss with lemon mixture until it is absorbed. Serve pasta warm or at room temperature.
