Egg, cheese and angel hair pasta patties get a tasty vegetable and spaghetti sauce topping.

8 ounces uncooked capellini (angel hair) pasta
1 teaspoon olive or vegetable oil
4 medium carrots, cut into julienne strips (2 cups)
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
1/4 teaspoon salt
1 package (10 ounces) frozen chopped spinach, thawed and squeezed to drain
2 eggs, slightly beaten or 1/2 cup fat-free cholesterol-free egg product
1/2 cup reduced-fat ricotta cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon pepper
1 teaspoon olive or vegetable oil
2 cups spaghetti sauce, heated

Steps:

  • Cook and drain pasta as directed on package.
  • While pasta is cooking, heat 1 teaspoon oil in 10-inch skillet over medium heat. Cook carrots, basil, salt and spinach in oil about 2 minutes, stirring occasionally, until carrots are crisp-tender. Remove vegetable mixture from skillet; keep warm.
  • Mix pasta, eggs, ricotta cheese, Parmesan cheese and pepper. Shape pasta mixture into 4 patties, each 1 inch thick. Heat 1 teaspoon oil in skillet over medium-high heat. Cook patties in oil 6 to 8 minutes, turning after 4 minutes, until golden brown.
  • Top patties with vegetable mixture and spaghetti sauce.

1 pound angel hair pasta
1/2 cup Chili Oil, recipe follows
1/2 cup chopped fresh Italian parsley leaves
1 lemon, juiced
2 tablespoons lemon zest
Coarse sea salt
Dried crushed red pepper flakes
1/2 teaspoon grated lemon peel, optional
2/3 cup freshly grated Parmesan
2 cups olive oil
4 teaspoons dried crushed red pepper flakes

Steps:

  • Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
  • Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
  • Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
  • Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.
  • Yield: 2 cups

ANGEL HAIR PASTA WITH LEMON, FINGERLING POTATOES AND SUNFLOWER GREENS

I love pasta and a little cream. Combined with the lemon and the earthiness of the potatoes and sunflower greens, this is a winner!

4 to 6 smallish fingerling potatoes (about 4 to 6 ounces total), thoroughly washed and dried
1 tablespoons extra-virgin olive oil
2 tablespoons kosher salt, for the pasta water, plus more for seasoning
Freshly ground black pepper
6 quarts water
1/2 pound dried angel hair pasta
1 cup heavy cream
1 cup sour cream
Zest of 2 lemons
Juice of 1 lemon
Worcestershire sauce
1 small bunch chives, trimmed and minced
1/2 cup sunflower greens
4 to 6 smallish fingerling potatoes (about 4 to 6 ounces total), thoroughly washed and dried
1 tablespoons extra-virgin olive oil
2 tablespoons kosher salt, for the pasta water, plus more for seasoning
Freshly ground black pepper
6 quarts water
1/2 pound dried angel hair pasta
1 cup heavy cream
1 cup sour cream

Worcestershire sauce
1 small bunch chives, trimmed and minced

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the potatoes: Put the potatoes on a small baking sheet. Drizzle with the olive oil and season with salt and pepper, to taste. Put the tray in the center of the oven and cook until the potatoes are tender when pierced with the tip of a knife, about 20 to 30 minutes. Set aside.
  • Cook the pasta: Bring a large pot of water to a rolling boil over medium heat. Add the 2 tablespoons salt and bring the water back up to a boil. Add the pasta and cook for 3 minutes. Stir the pasta with a slotted spoon to make sure it does not clump or stick to the bottom as it cooks.
  • In a large colander, drain the pasta. Reserve 1/2 a cup of the pasta liquid, in case it becomes necessary to use it later on.
  • In a large skillet, combine the heavy cream and sour cream. Season with salt and pepper, to taste. Reduce the cream over medium heat whisking until it thickens and all of the sour cream melts, 3 to 5 minutes. Add the lemon zest, lemon juice and a "splash" of Worcestershire sauce. Taste for seasoning. (*See Cook's Note) Stir in the chives.
  • Add the pasta to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to "rest" for 2 minutes, tossing to coat, from time to time. Meanwhile, put the potatoes on a flat surface and use a sharp knife to slice them into 1/2 to 3/4-inch-thick rounds. Stir the potato slices into the pasta sauce.
  • Serve the pasta: Warm the serving bowls. If the cream is overly thick, add a little more of the pasta cooking liquid and swirl it around over the heat for a minute. Stir in the sunflower greens and spoon the pasta into the bowls. Serve immediately.

PUTTANESCA WITH ANGEL HAIR PASTA



Puttanesca with Angel Hair Pasta image

Kosher salt and freshly ground black pepper
12 ounces dry angel hair pasta
3 tablespoons olive oil, plus more for tossing the pasta
One 28-ounce can whole plum tomatoes
6 cloves garlic, thinly sliced
4 anchovy fillets
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 cup roughly chopped pitted black olives
3 tablespoons drained jarred capers
2 tablespoons chopped fresh parsley leaves
Grated Parmesan, for serving

Steps:

  • Bring a pot of salted water to a boil. Cook the pasta according to the package directions for al dente. Drain, toss with some oil and keep warm.
  • Drain the tomatoes into a large bowl and reserve the juice. Roughly crush the tomatoes with your hands.
  • Heat 2 tablespoons of the oil in a large skillet over medium-low heat. Add the garlic, anchovies and chile flakes and cook, stirring occasionally, until the garlic is lightly golden, about 3 minutes. Add the crushed tomatoes and a generous pinch each of salt and pepper. Increase the heat to medium-high and bring to a simmer. Cook, stirring occasionally, until the tomatoes are soft and begin to lose their shape, 5 to 7 minutes. Stir in the olives, capers and reserved tomato juice. Continue to simmer until the sauce has thickened slightly and the flavors have blended, about 10 minutes more.
  • Add the cooked pasta to the skillet along with the parsley and remaining 1 tablespoon oil and toss well. Season with salt and pepper and serve with Parmesan.

Leaves from 2 bunch fresh basil
2 tablespoons pine nuts, untoasted
1 garlic clove
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmigiano-Reggiano
Salt and freshly ground black pepper
1 pound angel hair pasta

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again.
  • Cook the pasta in the boiling, salted water until al dente, about 3 minutes. Drain and transfer to a large bowl. Add the pesto and toss. Taste for salt and pepper, and add a drizzle of oil, if you like.

2 small zucchini, sliced
1 tomatoes, seeded and chopped
2 large mushrooms, sliced
1 green onion, sliced
4 cloves garlic, minced
2 tablespoons black olives, chopped
1/4 teaspoon dried basil, crumbled
1/8 teaspoon dried oregano, crumbled
4 eggs
1 1/2 cups romano cheese, grated
6 ounces angel hair pasta, freshly cooked
romano cheese, grated
2 tomatoes, chopped

Steps:

  • Heat 2 tablespoons oil in heavy medium skillet over medium-high heat.
  • Add zucchini, 1 tomato, mushrooms, onion and garlic and sauté until tender, about 3 minutes.
  • Add olives and herbs.
  • Cool.
  • Preheat broiler.
  • Beat eggs and 1.5 cups cheese in large bowl.
  • Season with salt and pepper.
  • Mix in vegetables and pasta.
  • Heat remaining 2 tablespoons oil in heavy large broilerproof skillet over medium heat.
  • Add egg mixture to skillet.
  • Press mixture with back of spatula to even thickness.
  • Cook until frittata is set and golden brown on bottom.
  • Transfer skillet to broiler and cook until top of frittata is set, about 2 minutes.
  • Run small knife around edge of frittata to loosen.
  • Invert skillet onto large plate.
  • Remove skillet.
  • Cut frittata into wedges.
  • Serve, passing additional cheese and chopped tomatotes separately.
