These pretty fruit pizzas have been a hit every time I've served them. They start with pre-made cookie dough making them super simple! -Janet O'Neal, Poplar Bluff, Missouri

1 tube (16-1/2 ounces) refrigerated sugar cookie dough
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

Number Of Ingredients 8

2 skinned and diced kiwi fruits
1/2 cup diced strawberry
1 1/2 diced apples (green)
16 ounces whipped cream cheese
1/2 cup sugar
1/8 cup milk
1 (12 ounce) package refrigerated sugar cookie dough
any other fruits you may like such as grapes, rasberrys, blueberrys, etc

Steps:

  • Preheat oven to 350 degress.
  • Roll out cookie dough onto large around flat circular pan (pizza pan) and cook for 10 minutes or until golden brown.
  • leave on pan and cool sugar cookie dough in fridge.
  • Whip cream cheese, sugar and milk. If thats not enough milk or if you want to change the consistency, add more milk.
  • Dice and mix fruit together in a medium bowl.
  • Spread cream cheese onto cooled cookie dough and sprinkle with diced fruit.
  • Refrigerate until serving.

Add fruit and sliced banana to prepared and frosted pizza just before serving. I like to start in the center with a layer of fruit and work my way out. Sprinkle with coconut flakes.Caramel Apple Pizza: Slice apples into thin slices, and place them in a bowl. Sprinkle one 2 teaspoons of lemon juice over apples and toss until they are covered. This will prevent browning. Add slices to pizza in a design of your choice. One idea is to start in the middle fanning apple slices out into a circle from the center, with red apple skins all facing the direction. Fan the green apple slices out for the next layer, again with the skins all facing the same direction. Drizzle caramel topping over apples.

  • In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, cream the softened butter for about 1 minute on medium speed. Get it nice and smooth, then add the sugar and beat on medium speed until fluffy and light in color. Beat in egg and vanilla. Scrape down the sides as needed.
  • In a medium bowl, whisk the flour, salt, baking powder, baking soda, and cornstarch together. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients. Once completely combined, cover the dough tightly and chill in the refrigerator for 30 minutes and up to 1 day. Without chilling, your cookie dough may spread over the sides of the pan.
  • Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan. Remove chilled cookie dough from the refrigerator and press onto the pizza pan in an even flat circle, as pictured above. Bake for 18-20 minutes or until the edges are very lightly browned. Overbaking will lend a hard crust. Allow crust to cool completely before decorating. I put the crust in the refrigerator after 10 minutes of cooling at room temperature – this sped up the process.
