BUFFALO CHICKEN WING SAUCE
If you know someone from Buffalo, they know someone who told them the secret ingredients to the Anchor Bar's famous Buffalo chicken wings. I know people from Buffalo. This is my version, as described to me many years ago, over almost as many beers.

Steps:
- Cut the chickens into legs, thighs, breasts, and wings and place in a large pan. Whisk together the remaining ingredients in a small bowl and pour over the chicken. Cover the chicken and refrigerate overnight.
- Preheat the grill. Place the chicken pieces on the grill at a 45 degree angle to establish good grill marks. Once the chicken easily releases from the grill, turn it over to continue cooking. Make sure to season the chicken with salt while it's cooking. Once the internal temperature reaches 165 degrees F, or its juices run clear, remove the chicken from the grill. Let the chicken rest for 5 to 10 minutes before serving.

CHICKEN WINGS WITH GUAJILLO ANCHOVY SAUCE
At Ducks Eatery in the East Village, the chef, Will Horowitz, believes in the bar snack as a maximum-detonation flavor bomb. And he'll go to great lengths to achieve that: Many of the dishes at Ducks, including the restaurant's wings, shown here, depend on labor-intensive rounds of fermenting and smoking. For our version of the recipe, though, we asked him to reel in the effort without cutting back on the flavor. Think of the result (which involves anchovy fillets, Thai fish sauce, guajillo chiles, ancho chiles and ground chamomile) as a stealth way to sneak ambitious gastronomy into your next Super Bowl party.

Steps:
- In a large bowl, combine the brown sugar, kosher salt, lemon juice, granulated sugar, fish sauce, soy sauce and smoked paprika. Add 2 quarts of water and mix well. Add the garlic, cilantro stems and chicken wings. Mix, cover, and refrigerate for 7 to 14 hours.
- Remove wings from marinade, rinse and transfer to a sheet pan with a rack. Allow to sit uncovered until dry and slightly tacky to the touch, 30 to 45 minutes.
- Cut stem and cap off the guajillo and ancho chiles and remove the seeds; if the chiles are very brittle, warm them briefly in a skillet to soften. Sauté in a dry skillet until the skins change color and begin to smoke heavily, 2 to 3 minutes. Transfer to a container and cover with hot water. Soak until softened, 30 to 45 minutes.
- Drain chiles and place in a food processor. Add garlic, shallot, soy sauce, fish sauce, black pepper, lemons, smoked paprika, white anchovies, chamomile, lemon juice and salt. Purée until smooth.
- Heat oven to 400 degrees. Brush wings with butter or ghee and roast until the internal temperature reaches 160 degrees, about 20 minutes. (Alternatively, the wings could be smoked with your choice of wood at 225 degrees for 2 1/2 hours.)
- Baste wings again with butter or ghee, increase oven temperature to 450 and continue to roast until the skins are brown and crispy, 10 to 15 minutes more. (Alternatively, the wings may be deep-fried at 350 degrees until golden brown and crisp, 8 to 10 minutes.) Allow wings to rest at room temperature for 10 minutes.
- To serve, slather wings with a generous amount of guajillo sauce and top with fresh lemon zest or brined lemon peel and a generous sprinkling of cilantro.
GARLIC ANCHOVY LINGUINE
This is a fabulous recipe for a light and flavorful pasta dish that's full of veggies. The mixture of anchovies and garlic creates an amazing flavor and aroma, and the crushed red pepper flakes add a nice kick. This recipe can handle as much garlic as you like, so push it to the limit.

TOP SECRET HONEY-LIME CHICKEN WING SAUCE !
My best friend and I are culinary students and came up with this recipe while we were in culinary school. It really goes with everything... Chicken... French Fries... Honesty, I would put this s**t on everything... : ) I was to point out that most of these ingredients can be added to taste. The sauce is AMAZING and now the only wing sauce I use.

Steps:
- in a sauce pan saute garlic, cilantro, and half cup of butter until soft, then add bottle of hot sauce.(i use a hot sauce that also doubles as a buffalo wing sauce because i like the extra vinegar, my fave is Franks) - juice three limes using at least a tablespoon of lime zest, and the juice with pulp. add brown sugar, honey, salt and pepper(s) - (s&p to taste).
- simmer on stove until you get a deep red color, then pour over chicken wings or dip chicken fingers. THIS IS DELICIOUS ! The real secret of this recipe is getting that clear-red result after the simmer.
- *butter correction made*.

CHIPOTLE LIME GARLIC WING SAUCE
Found this great Wing Sauce Recipe online. I wanted to trying something different than the normal Buffalo Sauce for my smoked Chicken Wings. The Sauce turned out OUTSTANDING on the Wings. The wife and kids loved the Wings. The In-Laws even said it was the best Wings they have ever had. The Sauce has the best of both worlds, Spicy and Sweet. I'm even thinking about using this Sauce on Smoked Ribs. I'm a big fan of this Website and I just want to share this great recipe with everyone here.

- Melt the butter with the garlic cloves over low heat. Let the mixture bubble gently until the garlic cloves become tender, about 10 minutes. Take care not to "toast" the butter or garlic cloves, removing from heat as needed to prevent browning.
- Whisk together all remaining ingredients in a saucepan and bring to a boil over medium high heat. Boil for 2 minutes, whisking constantly. Remove from the heat and allow to cool for 5 minutes before blending until smooth with a stick blender or a regular blender. Transfer to a jar to refrigerate. It may separate as it cools, so whisk it together before using.
