2 lb anasazi beans
1/2 c onion (chopped)
1/2 lb bacon (cut up)
2 can(s) green chiles (chopped)
2 can(s) rotel (tomato's, green chili, garlic)
2 medium zucchini (sliced)
2 tsp garlic
2 tsp salt
2 tsp italian seasoning
water

Steps:

  • 1. Using a pressure cooker....Cook 1 hour...if cooking in Dutch Oven cook 5 hours same if cooking in Crock Pot.
  • 2. Sort and beans, place into Pressure Cooker, add all ingredients, fill cooker to about 1 1/2 inch from screws at top of cooker. You have to give it room to swell. You can soak over night if you are cooking other than pressure cooker. Cook 1 Hour...

These are the best beans you will ever eat. If you live in Colorado they are at most grocery stores. Outside of Colorado you might have to order them online. They cook fast with no soaking and are gas free. (Did I say that?) Once you try them they will be the only beans you will ever use.

1 bag(s) anasazi beans
1 onion chopped
1 clove garlic finely chopped
1 Tbsp parsley flakes
black pepper to taste
2 c cubed ham
6 c water
carrots or celery chopped (optional)

Steps:

  • 1. Throw everything in a pot, bring to boil then simmer until done.
  • 2. You can serve it over rice or eat it as a soup with crackers or crusty bread. Easy!!

2 cups Anasazi beans
4 cups water
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
2 tablespoons chopped garlic
2 cups chicken broth
2 cups chopped green chile peppers
4 ears sweet corn, shucked and kernels cut off
4 medium tomatoes, chopped
1 ham hock
1 (6 ounce) can tomato paste
salt and ground black pepper to taste

Steps:

  • Wash and drain Anasazi beans. Place in a slow cooker with 4 cups water and soak 8 hours to overnight.
  • When ready to cook, heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Skim foam off the top of the beans. Add onion-garlic mixture, chicken broth, chile peppers, corn kernels, tomatoes, ham hock, tomato paste, salt, and pepper. Cook on Low until beans are tender, about 8 hours.

2 jalapenos, chopped

Steps:

  • Wash and soak a pound of beans according to the directions on the package. Drain them and put them in a pot.
  • Cover them with water and cook them until they are tender, adding more water if necessary.
  • While the beans are cooking, saute chopped onions, minced garlic cloves, and jalapenos in olive oil. Add the vegetable mixture to the beans while they are cooking. Season with cumin, salt, and pepper.

2 cups dried anasazi beans
2 tablespoons oil (olive or canola)
1 medium onion, chopped (or 4 T. dried)
1 garlic clove, minced (or 1 t. powder )
1 (4 ounce) can chopped green chili peppers, chopped (or 1 med. fresh)
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cumin
2 tablespoons sun-dried tomatoes
salt & pepper

Steps:

  • Rinse & sort beans.
  • Cover with water & soak overnight; OR bring to a boil for 5 minutes, remove from heat, cover & let rest for 1 hour.
  • Drain, rinse & cover beans with water. Bring to a boil, cover & simmer approximately 1-1/2 hours or until nearly tender.
  • In a skillet, saute onion & garlic in oil until transparent. Add this mixture & all remaining ingredients to beans.
  • Simmer uncovered for 1 hour, until tender, stirring occasionally.
  • May be necessary to add water during last hour of cooking so keep a watchful eye.

smoke ham hock or leftover ham bone
1 tsp cumin, opt
2 Tbsp chili powder
2 clove garlic, peeled
1 whole jalapeno, opt

1/4 c pinto seasoning
2 clove garlic
1 whole jalapeno

Steps:

  • 1. I found these recently at a local store and decided to try them, they are similar in taste to pinto but with a milder "bean" flavor. They are really outstanding and my new go to bean!
  • 2. NOTE: This is a crockpot recipe. These can also be made on the stove top, reduce cooking time to about 2-3 hrs. over a med. simmer.Ham hocks can usually be found in the section of your store where the whole hams are sold. If not using ham hocks, salt pork or bacon, but the ham hocks give you more flavor!
  • 3. Rinse beans and pick out any bad ones. Using "Casserole" brand is recommended. Place all ingredients in crockpot. Fill crockpot 2/3 full of water. Turn on low and cook overnight. May need to reseason with a tsp of cumin, chili pwd. or salt after cooking.

Steps:

  • Anastasia's Best-Ever Baked Beans:.
  • • 5 cans of pork and beans (15 ounce cans - VanCamps's Pork and Beans or similar).
  • • 2 medium or 1 large onion, chopped (yellow or sweet onion, not vidalia).
  • • 1 to 2 tablespoons butter (for sauteing onions).
  • • 3/4 cup ketchup.
  • • 1/2 cup molasses.
  • • 3 tablespoons yellow mustard.
  • • 1/4 to 1/2 cup brown sugar (use less for less sweetness).
  • • 6 to 8 slices uncooked bacon, each cut in half or thirds.
  • Preheat oven to 325* F. degrees f. Spray a 9x13 baking dish with non-stick cooking spray.
  • Saute onions over medium to medium-high heat in butter until onions are tender and translucent.
  • Mix beans, sauteed onions, ketchup, mustard, molasses and brown sugar until blended well. Pour in prepared baking dish. Top with uncooked bacon in single layer (see photo above). Bake on middle rack of oven uncovered for 2-3 hours. Beans are ready when the top is dark and caramelized. Serve warm. Enjoy!
  • TIP - Make in Slow Cooker.
  • These can also be thrown together and cooked in the slow cooker set on low for 6 to 8 hours as well. It won't get that nice caramelize top, but it will still be delicious if you're in a pinch for time. Be sure to saute the onions first.
