1 medium potato, cut into 1/4-inch cubes
1 pound smoked kielbasa, cut into 1/2-inch cubes
1 can (32 ounces) sauerkraut, rinsed and well drained
4 cups chicken broth
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 pound sliced fresh mushrooms
1 cup cubed cooked chicken
2 medium carrots, sliced
2 celery ribs, sliced
2 tablespoons white vinegar
2 teaspoons dill weed
1/2 teaspoon pepper
3 to 4 bacon strips, cooked and crumbled

Steps:

  • In a 5-qt. slow cooker, combine the first 12 ingredients. Cover and cook on high for 5-6 hours or until the vegetables are tender. Skim fat. Garnish with bacon.

1 pound smoked Polish sausage, cut into 1/2- inch pieces
5 medium potatoes, peeled and cubed
2 medium onions, chopped
2 carrots, cut into 1/4-inch slices
3 cans (14-1/2 ounces each) chicken broth
1 can (32 ounces) sauerkraut, rinsed and drained
1 can (6 ounces) tomato paste

Steps:

  • In a large saucepan or Dutch oven, combine sausage, potatoes, onions, carrots and chicken broth; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until potatoes are tender. , Add sauerkraut and tomato paste; mix well. Return to a boil. Reduce heat; cover and simmer 30 minutes longer. If a thinner soup is desired, add additional water or chicken broth.

Where I worked one time in a factory, we would have pot luck dinners for our co-workers' Birthdays & such. A lot of good recipes are made & shared at these. This is a recipe I got from a lady that brought this dish one time. She said it was from an old Amish cookbook. I then, a few years later put it in our cookbook that a few of us girls put together & had published & sold copies of. It was called "The Happy Cooker". I hope you enjoy it as much as I do. Even if you don't like sauerkraut, give it a try. You won't taste the kraut.

1 pound(s) smoked ring sausage
1 large onion, chopped
1/3 cup(s) flour
3 cup(s) milk (+ or - )
1 cup(s) cream or whipping cream
3 cup(s) sauerkraut, canned
1 1/2 (+) tablespoon(s) lemon juice
- pepper to taste
- bacon grease

Steps:

  • Slice smoked sausage into bite size slices and brown with onions in bacon grease. *Don't overcook, either browning or while cooking the soup. Remove sausage from pan. Save grease.
  • Have grease hot and add flour. Almost brown, as you would for gravy. Add cream and then milk. Allow to thicken, stirring constantly.
  • Next, add kraut, lemon juice and pepper to taste. May cook on stove or in a crock-pot. May also add more milk now if necessary. Cook about 30 minutes on low heat.
  • *I tried keeping some hot in a crock pot for a Soup Supper we were having in town & found out that the longer you heat this on a high heat, the sausage toughens up.

6 small red potatoes, quartered
3 medium carrots, cut into 1/4-inch slices
1 medium onion, cut into thin wedges
1 can (14 ounces) sauerkraut, rinsed and well drained
1 tablespoon brown sugar
1 tablespoon spicy brown mustard
1 teaspoon caraway seeds
1 pound smoked kielbasa or Polish sausage, cut into 1-inch slices
2 cans (14-1/2 ounces each) reduced-sodium chicken broth

Steps:

  • In a 3- or 4-qt. slow cooker, combine the potatoes, carrots and onion. Combine the sauerkraut, brown sugar, mustard and caraway seeds; spoon over vegetables. Top with sausage and broth. Cover and cook on low for 8-9 hours or until vegetables are tender.

6 tablespoons chopped onion
6 tablespoons all-purpose flour
2 cups milk
2 cups half-and-half
1 teaspoon dried thyme
1 (8 ounce) can sauerkraut, undrained

Steps:

  • Cook and stir smoked sausage and onion in a large saucepan over low heat until lightly browned, about 15 minutes; stir in flour to coat the sausage and onion. Gradually stir in milk, followed by half-and-half. Raise heat to medium, and simmer the soup until thick, about 5 minutes. Stir in thyme. Mix sauerkraut and its juice into the soup and cook just until sauerkraut is heated through, 1 to 2 more minutes.

Number Of Ingredients 3

6 pounds cabbage (about 2 heads)
3 tablespoons canning salt
Optional: 2 peeled and thinly sliced Granny Smith apples, 2 thinly sliced sweet onions, 2 teaspoons caraway seeds and 1 teaspoon ground coriander

Steps:

  • Quarter cabbages and remove cores; slice 1/8 in. thick. In an extra-large bowl, combine salt and cabbage. With clean hands, squeeze cabbage until it wilts and releases liquid, about 10 minutes. If desired, add optional ingredients., Firmly pack cabbage mixture into 4-quart fermenting crock or large glass container, removing as many air bubbles as possible. If cabbage mixture is not covered by 1-2 inches of liquid, make enough brine to cover by 1-2 inches. To make brine, combine 4-1/2 teaspoons canning salt per 1 quart of water in a saucepan; bring to a boil until salt is dissolved. Cool brine before adding to crock., Place crock weight over cabbage; the weight should be submerged in the brine. Or, place an inverted dinner plate or glass pie plate over cabbage. The plate should be slightly smaller than the container opening, but large enough to cover most of the shredded cabbage mixture. Weigh down the plate with 2 or 3 sealed quart jars filled with water. If using a glass container with a lid, cover the opening loosely so any gas produced by the fermenting cabbage can escape. Alternately, you can cover the opening with a clean, heavy towel. If using a crock, seal according to manufacturer's instructions. , Store crock, undisturbed, at 70°-75° for 3-4 weeks (bubbles will form and aroma will change). Cabbage must be kept submerged below surface of the fermenting liquid throughout fermentation. Check crock 2-3 times each week; skim and remove any scum that may form on top of liquid. Fermentation is complete when bubbling stops. Transfer to individual containers. Cover and store in the refrigerator for up to 3 months.

President's Soup (Sauerkraut Soup) image

When DH and I moved to his home village, the first person I made friends with was the wife of that smart guy who helped us tile the cellar. He invited us to his birthday party and I didn't do anything but talk to his wife and eat this soup - I just couldn't stop eating, it was so good! We met weekly since then, but it took years until I finally got the recipe. Great to make ahead for a party.

3 large onions
2 garlic cloves
3 tablespoons canola oil
2 lbs ground beef
3 lbs sauerkraut
2/3 cup tomato paste
4 cups tomato juice
4 cups beef stock
paprika, to taste (sweet)
ground caraway, to taste
salt, to taste
pepper, to taste
Tabasco sauce, to taste
10 small pickled cucumbers
1 bunch parsley
1 cup sour cream

Steps:

  • Coarsely chop onions, finely mince cloves.
  • In a large pot (big enough for the sauerkraut, beef and 8 cups of liquid) heat oil and saute onions and cloves until onions are translucent, then add the ground beef. Cook until done, mashing all lumps of meat thoroughly with a fork. There should not be big lumps of meat when it's done.
  • Pull the sauerkraut apart (don't dump it into the pot in a lump, or you will have burger soup with a giant sauerkraut dumpling) and add it to the meat in small portions. Immediately add tomato paste, tomato juice and beef stock. Mix well, then add one tablespoon pepper, paprika powder and caraway and some salt (depending on how salty the stock already is).
  • Bring to a boil and simmer on low heat for about 30 minutes.
  • Try the soup and add salt and spices to taste, then add Tabasco to taste.
  • Finely slice the cucumbers and add to soup, let simmer for five more minutes.
  • Finely chop the parsley.
  • Serve the soup in bowls, garnish with one dollop of sour cream and some parsley.
  • Enjoy!

1 pound beef stew meat, diced into 1 inch pieces
1 onion, chopped
3 tablespoons vegetable oil
1 ½ cups beer
¾ cup water
¼ cup tomato paste
1 tablespoon paprika
¼ teaspoon salt
¼ teaspoon caraway seed
¼ teaspoon ground black pepper
3 potatoes, cubed
1 ounce sauerkraut
2 tablespoons chopped fresh dill weed
2 tablespoons chopped fresh parsley

Steps:

  • In a Dutch oven, cook meat and onion in hot oil until meat is brown.
  • Stir in beer, water, tomato paste, paprika, salt, caraway seed, and pepper. Cover, and simmer 1 1/4 to 1 1/2 hours.
  • Add potatoes, undrained sauerkraut, and fresh dill to soup. Cover. Cook for about 20 minutes, or until vegetables are tender.
  • Cook uncovered for 10 minutes more, or until mixture is thickened and most of the liquid is evaporated. Sprinkle parsley on top before serving.

9 ounces bacon, chopped
1 onion, chopped
1 large garlic clove, crushed
4 1/4 cups cold water
1/2 teaspoon paprika

5 ounces smoked sausage, sliced (your choice of sausage)
5 ounces sour cream
sea salt & freshly ground black pepper

Steps:

  • Rinse the sauerkraut in cold water and leave to drain.
  • Place sauerkraut, onion, garlic and cold water in a large saucepan with seasoning.
  • Bring to the boil, then simmer for 15 minutes.
  • Meanwhile, fry the chopped bacon in a deep frying pan until the fat starts to run.
  • Stir in the paprika and mix into the sauerkraut mixture.
  • Return to a gentle simmer for another 15 minutes then add the dill and sausage of your choice.
  • Stir in the cream, check the seasoning and reheat until just on the point of boiling.
  • Serve with rye bread.
