Yield 120

Number Of Ingredients 5

1 (.25 ounce) package active dry yeast
¼ cup warm water (110 degrees F/45 degrees C)
3 cups all-purpose flour, divided
3 cups white sugar, divided
3 cups milk

Steps:

  • In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.
  • On days 2 through 4; stir starter with a spoon. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Days 6 through 9; stir only.
  • Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup to make your first bread, give 2 cups to friends along with this recipe, and your favorite Amish Bread recipe. Store the remaining 1 cup starter in a container in the refrigerator, or begin the 10 day process over again (beginning with step 2).

EASY & QUICK AMISH BREAD

Easy & Quick Amish Bread image

I have had this recipe for at least 10 years, it was given to my by my mom after i got married but i just started making this about a year ago when i got pregnant with my second child and only wanted fresh homemade baked bread.. this bread is awesome. I make at least 4 loaves a week for my family. It is the simplest bread recipe i have and the tastiest . 1 loaf is usually gone hours after it comes out of the oven. Now here is the thing I am NOT avid baker, if its too complicated i screw it up, so this recipe in my book is fool proof..... If you make it and it doesn't come out.. you did something out of order ,... it is not the recipe.... follow the mixing directions exactly.. good baking and enjoy..

Time 2h

Yield 2 loafs, 24 serving(s)

Number Of Ingredients 6

2 cups warm water, 105-115 F degrees
2/3 cup sugar
1 1/2 tablespoons active dry yeast
1 -1 1/2 teaspoon salt
1/4 cup vegetable oil or 1/4 cup unsalted butter
6 cups bread flour, I use white bleached it works fine

Steps:

  • I use a mixer with a dough hook but it is just as easy to mix by hand if you don't have one.
  • Proof the dough in a warm draft free place, I turn the stove on warm (150 F) when the yeast is proofing the turn off when I add the flour.
  • ==============================.
  • In your mixer bowl pour warm water and sugar, stir until sugar is dissolved.
  • After sugar dissolves stir in yeast and allow the yeast to proof until yeast gets to a creamy foamy state. about 5-10 minutes max. depending on how warm the water is.
  • After yeast proofs mix in oil and salt into the yeast.
  • mix in flour 1 cup at a time, after all four has been mixed(6c.) it it will still be a little sticky. do not add more flour to the mixer.
  • Turn bread out onto a well floured surface an knead until smooth .
  • Place dough in a well oiled bowl and turn dough to coat with oil.
  • Cover bowl with a damp cloth/towel and allow dough to rise in a warm place and double in size. about 1 hour.
  • After dough doubled punch center down and tun onto your floured surface again an knead for a few minutes, and then divide the dough n 1/2 and shape into loaves .
  • Place the 2 loaves in well oiled bread pans and let rise a second time for about 30-45 minutes, until dough rises about 1-2 inches above the pans. If you happen to forget about them an they rise higher , no harm you just will have a bigger loaf.
  • I proof them in the oven the then just turn the heat on.
  • Bake a 350 degrees for 30-35 minutes.

EASY FRIENDSHIP BREAD (AMISH BREAD) STARTER

Easy Friendship Bread (Amish Bread) Starter image

This bread didn't originate from the Amish, but it's amazing nonetheless! Mix all ingredients together in a gallon-size ziploc bag.

Provided by RedheadAblaze

Categories     Yeast Breads

Time 5m

Yield 6-8 slices, 6-8 serving(s)

Number Of Ingredients 18

1 (1/4 ounce) package dry active yeast
1 cup milk
1 cup flour
1 cup sugar
1 cup flour
1 cup sugar
1 cup milk
1 1/2 cups flour
2 cups sugar
2 cups milk
3 eggs
1 cup oil (or 1/2 cup oil, 1/2 cup applesauce)
1/2 teaspoon baking soda
1/2 teaspoon vanilla
2 1/2 teaspoons cinnamon
1 (5 1/8 ounce) box instant vanilla pudding
1 cup raisins (optional)
1 cup nuts, chopped (optional)

Steps:

  • Dissolve yeast in small amount of warm water.
  • Mix all ingredients together in a gallon-size ziploc bag. This is day one.
  • Day 1 - Do nothing (This is the day you receive your starter, see date on your bag.).
  • Day 2 - Mush the bag.
  • Day 3 - Mush the bag.
  • Day 4 - Mush the bag.
  • Day 5 - Mush the bag.
  • Day 6 - Add to the bag: 1 cup flour, 1 cup sugar, 1 cup milk - Mush the bag.
  • Day 7 - Mush the bag.
  • Day 8 - Mush the bag.
  • Day 9 - Mush the bag.
  • Day 10 - Follow the instructions below:.
  • Pour entire contents of the bag into a large non-metal bowl.
  • For 4 starters: Add 1-1/2 cups flour, 1-1/2 cups sugar, 1-1/2 cups milk.
  • For 1 starter: Add ½ cup flour, ½ cup sugar, ½ milk (Tip: Starter will form lumps - add flour and sugar only and stir until smooth then add milk gradually (it will take a lot of stirring.).
  • Label four (or one), one-gallon Ziploc bags with "Day 1" and the date. Fill each of these bags with one cup of the mixture. These are starters for you to pass onto your friends and/or co-workers. If you'd like, you may keep one for yourself. Note: If you keep a starter bag for yourself, you will be baking bread every 10th day. If you don't keep one for yourself, you will have to wait until you receive another starter bag from a friend, as the Amish are the only ones who know how to create a starter. After filling the bags, there will be 1-1/2 cups of batter remaining.
  • Preheat the oven to 325'.
  • To the remaining batter add 3 eggs, 1-1/2 tsp baking powder, 1 cup oil (or ½ oil & ½ applesauce), ½ tsp baking soda, ½ cup milk, ½ tsp vanilla, 1 cup sugar, 2 cups flour, ½ tsp salt, 1 large box vanilla instant pudding, 2 tsp cinnamon, 1 cup raisins (optional), 1 cup chopped nuts (optional).
  • Note: It is easier to mix if you combine the dry ingredients (except for sugar and pudding) in another bowl then add it slowly to the batter.
  • Grease bottom and sides of 2 large loaf pans or spray with Pam. Mix ½ cup sugar and 1-1/2 tsp cinnamon in a small bowl. Dust the insides of each of the pans with half of the mixture, making sure to cover the bottom and sides well.
  • Pour batter evenly into the 2 pans and sprinkle with remaining sugar mixture over top of the batter.
  • Bake for approximately 1 hour (until toothpick comes out clean.) Cool until the bread loosens from the pan easily. Turn onto serving dish. May be served warm or cold. Enjoy.

QUICK AMISH FRIENDSHIP BREAD OR MUFFINS (NO STARTER REQUIRED)

Quick Amish Friendship Bread or Muffins (No Starter Required) image

I love this bread and I had a craving for it, but didn't want to wait the month it took for the starter to be ready, so, I modified it a bit. It might not be quite as tasty as the original, but it's great if you want it in a hurry! I like to use butterscotch pudding for a different, but really nice flavor! Hope you enjoy!
