I've had this recipe for a long time. It's the only crust my wife asks for whether I'm making pot pies, fruit pies or turnovers. It makes awesome homemade Hot Pockets too. You can substitute whole wheat flour for all or some of the AP flour. This is enough for a 9 inch 2 crust pie, two 9 inch single crust pies or 10-12 hot pockets. You can double the recipe if you have a really big mixing bowl for OAMC.

4 cups all-purpose flour
1 1/2 teaspoons salt
1 egg, beaten
1 tablespoon granulated sugar
1 1/2 cups Crisco
1 tablespoon vinegar
1/2 cup water

Steps:

  • Blend flour, sugar and salt.
  • Cut in Crisco to pea sized pieces.
  • Mix together egg, water and vinegar.
  • Add to flour.
  • Mix until moistened and a soft dough forms.
  • Refrigerate for at least 1 hour before rolling.
  • This will keep in the refrigerator for up to a week and will be easy to roll.

A custard pie made more delightful with the addition of cottage cheese. It can be made in a pastry or graham cracker crust.

1 (16 ounce) package small curd cottage cheese
1 cup white sugar
3 tablespoons all-purpose flour
1 teaspoon fresh lemon juice
1 pinch salt
3 egg yolks
3 egg whites
1 (12 fluid ounce) can evaporated milk
1 ½ cups milk
2 (9 inch) pie shell

Steps:

  • Place cottage cheese in strainer and let drain for about 1 hour or until most of liquid has been drained.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine cottage cheese, sugar, flour, lemon juice, salt, egg yolks, evaporated milk, and regular milk. Mix well.
  • In a separate clean bowl, beat egg whites until firm. Fold into batter until smooth. Pour into pie crusts.
  • Bake for 15 minutes at 425 degrees F (220 degrees C), then reduce oven to 350 degrees F (175 degrees C) and bake for an additional 25 minutes or until knife inserted in center comes out clean.
  • Cool on racks, then refrigerate. Flavor improves if served a day after baking.

Ladies this is a great pie crust especially for those that have difficulty rolling out pie dough. It is one of my favorites when I am in a hurry and just don't feel like all the mess. 1 1/2 c flour + 3 tablespoons
1/2 tsp salt
PLACE THE FLOUR AND SALT IN AN 8 INCH PIE PAN
MAKE A WELL WITH THE FLOUR AND SALT MIXTURE IN THE PAN
MIX IN A MEASURING CUP THE FOLLOWING INGREDIENTS:
1/2 c canola oil
3 Tbsp milk
WISK THE OIL AND MILK TO BLEND AND ADD TO THE WELL AREA IN THE FLOUR MIXTURE IN THE PAN.
IF YOU FIND THE PLIABILITY OF THE DOUGH TOO DRY OR TOO WET COMPENSATE WITH MILK. KEEP IN MIND HUMIDITY DOES COME INTO PLAY HERE.

Steps:

  • 1. I mix this with a fork at the beginning until it gets like a play dough consistency then begin kneading in the pan to complete the mixing.
  • 2. Once mixed begin patting to the sides and the bottom of the pan taking care to not get it too thick in any areas, It should be pressed to be somewhat level.
  • 3. Now just as you would a rolled pie crust you can press the top edge to form that pretty edge or just leave it straight across. Your preference!
  • 4. Either bake empty and fill later or fill now with your choice of filling.
  • 5. If your baking just the pie crust alone bake at 350 degrees until golden brown.

  • In a small bowl, whisk together the egg, vinegar, and water. Pour over the dough and mix until combined (dough will be sticky). Wrap the dough with plastic wrap and let it chill in the refrigerator for at least 1 hour before rolling.
  • For a hot pie (e.g. with a filling that needs to be baked), divide the chilled dough in half on a generously floured work surface. Roll half of the dough to ¼-inch thick and transfer to a 9-inch pie dish. Repeat with the second half of dough if the pie is covered. Bake as instructed in the recipe. Wrap any remaining dough in plastic wrap and store in the refrigerate.
  • For a cold pie (e.g. with a filling that doesn't need to be baked), move oven rack to the lowest tier and preheat oven to 375°F. Divide the chilled dough in half on a generously floured work surface. Roll half of the dough to ¼-inch thick and transfer to a 9-inch pie dish. Loosely fit aluminum foil over the lined pie dish and weigh down with pie weights, raw rice or uncooked beans. Bake for 25 to 30 minutes. Remove the weights and foil and continue baking for 10 to 12 minutes until golden brown. Fill and chill according to the recipe.

  • Add lard, butter, or shortening, whichever you decide to use; and blend in with your hands or pastry blender until crumbly. It doesn't matter if there's still little pebbles, you just don't want them any larger than pea size.
  • Gradually add ice cold water, and form into ball. If it looks like it will be too dry, just add a bit more water. You want it wet enough that it will stick together. But do not over mix.
  • Divide into 3 balls. Dust your counter top with flour and place your ball of dough onto flour. You can spread a bit with your hands, then dust the top with flour as well. Using rolling pin, roll into a round disc, just a couple inches larger than your pie plate. You'll want to start in the center and roll outward, just applying a little pressure as you roll. And rotate around in a circle to get it nice and round.
