I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.

3 cups quick-cooking oats
1 cup packed brown sugar
1 cup milk
½ cup vegetable oil
2 eggs, beaten
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • Mix oats, brown sugar, milk, oil, eggs, baking powder, salt, and cinnamon together in a bowl using an electric mixer. Pour into the prepared pan.
  • Bake in the preheated oven until set, 25 to 30 minutes, making sure not to let brown.

This wholesome family favorite can be prepared in advance and tastes a lot like a cinnamon oatmeal cookie. I typically take a minimalist approach, but the recipe is easy to customize through the addition of raisins, nuts, etc. If doubling the recipe, use a 9×13 baking dish, adding a few minutes to the cooking time as needed. Yield: 6-8 servings

Number Of Ingredients 9

2 large eggs
1/2 cup packed brown sugar
1/2 tablespoon baking powder
1/2 tablespoon vanilla
1 teaspoon cinnamon
1/4 teaspoon kosher salt
1/4 cup butter, melted
1 1/4 cups milk (regular, almond, etc.-choose your favorite)
3 cups old-fashioned rolled oats

Steps:

  • Grease an 8-inch square baking dish or other 1 1/2 quart casserole and set aside. In a mixing bowl, whisk the eggs and then add the brown sugar, baking powder, vanilla, cinnamon, and salt. Mix well-you don't want any lumps. Whisk in the melted butter and milk. Add the oats and stir to thoroughly combine. Transfer the mixture to the prepared baking dish. At this point, you can cover and refrigerate overnight or as little as one hour. (This gives the oats time to absorb some of the liquid.) When ready to bake, allow the oatmeal to sit at room temperature while the oven preheats to 350 degrees F. Bake, uncovered, for 30 minutes (give or take a few depending on oven and proportions of selected baking dish) or until just set in the middle. Serve warm with milk or yogurt, fruit, and/or other favorite oatmeal toppings. Add a drizzle of maple syrup or a sprinkle of brown sugar if more sweetness is preferred. Baked oatmeal can also be enjoyed cold or at room temperature and may be served like a muffin, with no toppings.

1 stick (8 tablespoons) unsalted butter, melted, plus for greasing the pan
2 cups quick oats
3/4 cup granulated sugar
3/4 cup whole milk
1 vanilla bean, scraped (see Cook's Note)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 egg
Heavy cream
Brown sugar
Berries

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
  • Combine the oats and sugar in a medium bowl, then pour in the milk.
  • Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
  • Next comes the melted butter and the egg.
  • Then just stir it all together into a big delicious oaty mess of wonder.
  • Plop the mixture into the prepared pan and spread it out.
  • Bake for 30 minutes, until set.
  • Cut into squares while still warm. Serve with cream, brown sugar and berries.

3 cups old-fashioned rolled oats (see note for quick oats)
1/2 cup lightly packed brown sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/4 cups dairy or non-dairy milk (see note)
1/4 cup pure maple syrup
2 large eggs
1 teaspoon vanilla extract
6 tablespoons melted butter or oil (see note)
Toppings: additional milk, berries, sliced bananas, chopped nuts, etc

Steps:

  • Preheat the oven to 350 degrees F. (Skip this step right now if making the oatmeal overnight.)
  • Lightly grease a 9X13-inch baking pan (or smaller pan for thicker oatmeal). Set aside.
  • In a large bowl, add the oats, brown sugar, baking powder, and salt. Stir to combine.
  • In another bowl or liquid measuring cup, whisk together the milk, maple syrup, eggs, vanilla, and butter or oil.
  • Add the wet ingredients to the oats mixture and stir to combine.
  • Pour the mixture into the prepared pan. Cover and refrigerate until ready to bake (up to 24 hours) or bake right away.
  • Bake uncovered for 25-30 minutes until the edges are lightly golden and the oatmeal is set. Serve warm with additional toppings.
