- Rinse potato cubes with cold water, and drain well. Melt butter or margarine in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with butter. Here's what you need: oil, ground beef, kosher salt, black pepper, ground cumin, chili powder, smoked paprika, cayenne, large yellow onion, red bell pepper, garlic, chipotle peppers in adobo sauce, tomato paste, chopped tomato, beef broth, black beans, red kidney bean, french fries, shredded cheddar cheese, sour cream, green onion

Steps:
- Heat the oil in a large pot over medium-high heat. Add the beef and stir to break up. Season with the salt, pepper, cumin, chili powder, paprika, and cayenne. Stir and cook until deep brown in color, 10-15 minutes.
- Add the onion, bell pepper, garlic, chipotles, and a pinch of salt. Cook until the vegetables are softened, about 10 minutes.
- Add the tomato paste and cook until it darkens, becomes aromatic, and starts sticking to the bottom of the pan, 10 minutes.
- Add the chopped tomatoes, beef broth, black beans, and kidney beans. Stir to incorporate, then bring to a boil. Cover, reduce the heat to low, and simmer for at least 30 minutes or up to 2 hours.
- Ladle the chili over the fries and top with cheddar cheese, sour cream, and green onions.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Wash potatoes and poke with fork.
- Bake potatoes, with skins on, for 25 minutes on top rack of oven.
- Allow potatoes to cool.
- Slice into pieces or slices. Slice very thin for chips.
- Squirt 2 teaspoons vegetable into hot cast iron fry pan; season and fry potato pieces until golden crust on each side.
- Season to taste with salt, pepper, and cayenne (known as Dale's Luv).
- Remove to a dish with paper towels to drain excess oil.
- Serve with whatever condiments or toppings that "trips your food chain cravings".

- Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
- Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
- As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.
