Ambrosia Sweet Potatoes image

A VERY PRETTY DISH! All the right flavors which blend well with sweet potatoes. Easy to prepare. This recipe is from a local fund raiser cookbook and was submitted by Sudie Blanchard.

6 cups sweet potatoes, cooked and sliced
1/2 orange
1/2 lemon
1 (9 ounce) can crushed pineapple, drained
3/4 cup brown sugar
1/2 cup butter, melted
1/2 cup shredded coconut
maraschino cherry (for decorating)

Steps:

  • Place sweet potatoes in a baking dish. Slice orange and lemon into thin slices.
  • Alternate layering slices on top of sweet potatoes.
  • Combine drained pineapple, brown sugar and melted butter. Pour mixture over sweet potatoes. Sprinkle with shredded coconut.
  • Decorate with cherries. Bake in a 350°F oven for 30 minutes.

You won't find golden ambrosia at the supermarket. But you can enjoy it in this Golden Ambrosia Sweet Potato Salad with easily attainable ingredients.

3/4 cup KRAFT Real Mayo Mayonnaise
1/2 cup KRAFT Creamy Poppyseed Dressing
1-1/2 tsp. grated fresh ginger
2 lb. sweet potatoes (about 4), peeled, cubed, cooked and cooled
1 can (15 oz.) pineapple tidbits, drained
1 can (11 oz.) mandarin oranges, drained
1/2 cup dried cranberries
1 cup BAKER'S ANGEL FLAKE Coconut
1/2 cup chopped pecans, toasted

Steps:

  • Mix mayo, dressing and ginger until blended.
  • Combine potatoes, fruit and coconut in large bowl. Add mayo mixture; toss to coat. Refrigerate several hours or until chilled.
  • Sprinkle with nuts before serving.
