Time P1DT1h

Yield about 4 1/2 dozen 1-inch balls

Number Of Ingredients 7

1 cup semisweet chocolate chips
20 chocolate wafer cookies (about half a 9-ounce box)
1/2 cup (about 15) finely chopped pitted dried plums (a.k.a prunes)
1/2 cup confectioners' sugar
1/2 cup bourbon or1/3 to 1/2 cup brandy
1/4 cup sweetened condensed milk
1/4 cup colored decorating sugars or more finely ground wafer cookies, for garnish

Steps:

  • Put the chocolate in a microwave-safe bowl and heat on medium for 1 minute. Stir and repeat until the chocolate melts, about 3 minutes in all, depending on the power of your microwave. Alternatively, put the chocolate in a heatproof bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer; set the bowl on the pan (without touching the water). Stir occasionally until melted and smooth.
  • Process the cookies in a food processor until finely ground. (You should have about 1 1/2 cups ground cookies.) Alternatively, put the cookies inside a heavy resealable plastic bag and crush by moving a rolling pin over the cookies.
  • Stir the cookie crumbs, dried plums, confectioners' sugar, bourbon and condensed milk into the chocolate until evenly combined. Cover and refrigerate the mixture until firm enough to roll into balls, about 45 minutes.
  • Scoop a tablespoon or so of the mixture at a time into a small ball with a cookie or small ice cream scoop and set onto a baking sheet or large plate. Roll each portion by hand into a smooth ball.
  • Store the booze balls in an airtight container at room temperature for a day to allow the flavors to come together. Store the balls in the refrigerator for a week or freeze for up to 1 month. Roll in decorating sugars or wafer crumbs and serve.

AMARETTO BON BON BALLS

Amaretto Bon Bon Balls image

Traditionally, I make a double-batch of bourbon balls every Thanksgiving weekend in preparation for gifting during the holiday season. The candies are great and everyone loves them, but I just can't stand the taste of bourbon, in any shape or form. A couple of years ago I raided the liquor cabinet and developed a sauced-up holiday candy that I can eat too! Now I annually produce double-batches of bourbon balls and amaretto bonbons.

Time P7DT30m

Yield 15 serving(s)

Number Of Ingredients 6

2 cups vanilla wafer crumbs (1 box, crushed, or I have also used 1/2 vanilla wafers and 1/2 chocolate chip cookies)
1 cup almond meal or 1 cup pecan meal (also called "flour", finely ground almonds or pecans)
1 cup confectioners' sugar
3 tablespoons cocoa powder
4 tablespoons light corn syrup
1/2 cup amaretto liqueur (I use the Disaronno brand)

Steps:

  • Blend all the ingredients together and shape into 30 one-inch balls.
  • If the mixture turns out too wet/dry, balance it out by adding more powdered (icing) sugar to dry it out or more liquor to moisten it up.
  • Roll the balls in extra powdered sugar, cocoa powder or chocolate milk powder.
  • Store in an airtight container for at least one week before sampling.
  • I have also successfully stored them in the refrigerator and in the freezer.

  • Classic Amaretto Sour. The amaretto sour is arguably the most popular cocktail that uses amaretto as its base. It’s a simple, 3-ingredient blend that combines amaretto, sweet and sour mix, and lemon-lime soda.
  • Amaretto Sidecar. While I may not be as fond of the sidecar as I was back in my days in university, I will forever treasure the many fun memories I had with this strong, potent drink.
  • Blood Orange Amaretto Cocktails. How I wish it were blood orange season every day. I’m such a sucker for this fruit. First of all, its color is so darn pretty, and you can never tell what it’ll be until you slice it in half.
  • Amaretto Coffee. Coffee and amaretto will go down in history as one of the best flavor pairings ever. Let this amaretto coffee be Exhibit A. In this recipe, you’ll give your everyday coffee an exciting spin with a shot of amaretto.
  • Amaretto Aloha Cocktail. Sail through Hawaii and feel the ocean breeze with the amaretto aloha. One sip of this cocktail will make you go ooh la la! A mix of pineapple juice, cranberry juice, and amaretto, this light and refreshing cocktail will whisk you away to the tropics in an instant.
  • Coconut Amaretto Cocktail. If you like anything that has coconut in it, well, then, this drink will get you hooked. In this cocktail, coconut cream, rum, and water team up with amaretto and tangelo to create an unbelievably refreshing treat.
  • Sweet and Sour Amaretto Orange Cocktail. Sweet and sour flavors combine to produce a taste bud-tingling experience. This recipe is a fun, citrus twist on the classic amaretto sour!
  • Amaretto Julep. This amaretto julep is the love child of a Godfather and mint julep. It’s just as easy to make as both cocktails, but so much more enjoyable, in my opinion.
  • Eggnog Amaretto Cocktail. ‘Tis the season to be jolly, and what better way is there to get in the holiday spirit than with a glass of eggnog? Spike your eggnog with a splash of amaretto to make it even more fun and festive.
  • Strawberry Amaretto Smash. Fresh strawberries and nutty roasted almonds join together to make a refreshing drink. This cocktail is what summer dreams are made of.

BEST AMARETTO COCKTAILS - THE SPRUCE EATS

From thespruceeats.com
  • Bocce Ball. The bocce ball is a throwback drink that will never lose its appeal. As amaretto's answer to the screwdriver, it showcases the wonderful flavor sensation of amaretto and orange juice.
  • Godfather. Scotch whisky and amaretto come together wonderfully in the simple but satisfying godfather. Requiring only those two ingredients, this slow sipping lowball is a fantastic way to dress up scotch.
  • Godmother. For drinkers who prefer vodka, there's the godmother. Without the whiskey background, it's a little softer but just as pleasant. It's an easy pouring and slow sipping drink that's the perfect way to end a night, especially when cooler weather begins.
  • Toasted Almond. As you explore amaretto's mixability, you'll quickly notice that coffee is one of the best pairings for this liqueur. In the toasted almond mixed drink, amaretto and coffee liqueur come together in perfect harmony.
  • French Connection. Another brilliant pairing for amaretto, the French connection mixes the almond liqueur with cognac. Best with top-shelf spirits, it's a great way to sweeten up and soften a good brandy.
  • Amaretto Sour. The amaretto sour is a classic cocktail that came out of American bars during the 1970s. Made with just a few ingredients, it's also easy to mix up, and there are several tasty variations to explore.
  • DIY Amaretto. As great as amaretto is in cocktails, it is very enjoyable on its own, particularly the premium brands or this easy, homemade version. A good amaretto can be enjoyed neat, straight up, or on the rocks, and it makes a quick and soothing after-dinner drink.
  • Triple Espresso Martini. There's no need to brew coffee when you want to enjoy that taste in an amaretto cocktail. Instead, pick up a bottle of espresso vodka and use it in the triple espresso martini.
  • M&M Shooter. What's the secret to the M&M shooter? Nothing more than that perfect combination of amaretto and coffee liqueur. There are alternatives, including recipes that use hazelnut liqueur or chocolate vodka.
  • Spiked Apple Cider. Apple cider becomes a popular cocktail mixer as the cool winds of autumn begin to blow. The spiked apple cider recipe is best with unfiltered apple cider because its bolder apple flavor is a great base for the aged rum and amaretto.
