This is a fantastic tasting stew!! Who would think that a little molasses in a stew would make a difference?? Very good!!

2 lbs boneless beef chuck
2 tablespoons flour
1/2 teaspoon dry mustard
1 1/2 teaspoons salt
2 tablespoons vegetable oil
1 (14 ounce) can tomatoes
1/2 cup sliced onion
1 teaspoon celery salt
1/4 teaspoon pepper
1/3 cup vinegar
1/3 cup molasses
1 1/2 cups water
4 large carrots
1/3 cup raisins
1/2 teaspoon ginger

Steps:

  • Wipe meat with a damp cloth. Cut into 1 1/2 inch cubes. Combine flour, mustard and half-teaspoon salt; dredge meat with flour mixture. Heat oil in Dutch oven; brown meat on all sides. Add tomatoes, onion, celery salt, one teaspoon salt and pepper. Mix vinegar, molasses and water; add to meat. Cover and simmer for two hours. Peel and slice carrots. Add to meat with raisins and ginger. Cook 20-30 minutes longer or until carrots are tender.

1/2 cup wheat flour
4 tablespoons butter
4 cups half-and-half
4 large chicken breasts, cut into 1 inch cubes
1 red onion, slivered
5 garlic cloves, smashed and chopped
3 tablespoons olive oil
1/4 cup fresh papaya, diced
1 sweet potato, diced small
1 red bell pepper, cut into chunks
1/2 scotch bonnet pepper, more for more heat
32 ounces chicken stock
1 tablespoon curry paste
2 teaspoons ginger, grated
1/2 cup zante currants
1 teaspoon marjoram
1 teaspoon kosher salt
1 teaspoon white pepper
1/4 cup dried unsweetened coconut
1/2 cup white wine
1 teaspoon orange zest
1 orange, juice of
2 -3 spaghetti squash
1 cup sour cream
1 cup mango, diced
1 cup papaya, diced
1/4 cup grated coconut

Steps:

  • Cook chicken, onion and garlic in olive oil for 5-7 minutes in a hot skillet.
  • Melt butter in a large stock pot and add the flour, stirring constantly for 2 minutes to make a roux. Add 4 cups of 1/2 and 1/2 and whisk until smooth. Add chicken stock, papaya, sweet potatoes, red pepper, scotch bonnet pepper, curry paste, grated ginger, zante currents, coconut, orange zest, orange juice, marjoram, salt, pepper, and wine and simmer for 1/2 hour.
  • Steam spaghetti squash for 10-15 minutes and scrape out into a bowl.
  • Mound squash into a bowl or deep plate, ladle some chicken stew around it, top with sour cream and sprinkle on grated coconut, mango and papaya.

3 eggplants
4 garlic cloves, crushed
2 tablespoons olive oil
1/4 teaspoon cayenne
1 1/2 teaspoons sweet paprika
2 tablespoons lemon juice
1/4 cup fresh parsley, minced
1/2-1 teaspoon salt

Steps:

  • Using a fork, poke eggplants all over. Roast eggplants at 350*F for about 1 hour or until soft(or grill at 350*F for about an hour or until soft).
  • Remove from oven and let cool until you can handle the eggplants. With a knife, split eggplants open and scoop out all the flesh into a food processor or blender(or into a bowl and use your immersion blender).
  • Add remaining ingredients and puree. Taste and adjust seasonings if necessary. Chill and serve with flatbread or as an accompaniment to main meal.

1 tablespoon oil
1 onion, diced
1 garlic clove, minced
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
350 ml tomato puree (or use same amount of crushed tomatoes)
250 g cannellini beans, canned and drained
salt and pepper

Steps:

  • Heat the oil in a pot. Sautee onion, garlic and bell peppers until tender.
  • Add tomato puree and beans. Season to taste.
  • Bring to a boil and let cook for about 15 minutes. Everything should be cooked through and nicely warmed.
  • Serve with a nice bread on the side.
